Dry fruits Laddu / Sugarless laddu / Healthy snacks for kids

Healthy...Healthy...Tasty...Tasty...All the mothers definitely will think about the kid's healthy snacks. Here... the marvelous snack item made with dry fruits. It is so delicious and every kid will definitely like it. Morning, when school going time, most of the kids will never have breakfast. We can give this laddu for them. It is very healthy and the whole day the kids will be active.
My daughter doesn't like dates. I am using dates in this laddu. She is eating without any fuss. I was very happy and excited. I used seedless dates, cashews, almonds, and raisins. We can add pista also. It is very simple and easy preparation. With less and healthy ingredients, making sweet and excellent  laddu recipe without sugar. I am very glad to share this recipe to all. Dry fruits and Nuts are having amazing health benefits. They improves hemoglobin level in our body, hence, It prevents anemia. We are adding less amount of ghee in this laddu.  Basic information :
Preparation time : 5 Mins
Cooking time : 5 Mins
Store for : 1 Month
Ingredients :
Dates : 250 Grm
Cashew nut : 50 Grm
Almonds : 50 Grm
Raisins : 5 Nos
Cardamon powder : 1/4 Tsp
Ghee : 2 Tsp

Method :
Grind the seedless dates roughly.
Fine chop the cashews, almonds. We can make coarse  powder also.
In a pan, heat 2 teaspoon of ghee, add raisins and fry.
Add chopped or coarse powdered cashews and almonds and stir.
Add ground dates and mix it well. Stir till the dates melts. When dates melts, it will be sticky. Add cardamon powder and mix.
Switch off the flame, make medium size balls in hand holding heat itself. We can make laddu in heat only.
Exellent!...The laddu is ready to eat. We can store in air tight container for 1 month in dry place.

Mushroom Tikka / Mushroom tikka in tawa / Tawa tikka

Mushroom tikka prepared in tawa. Without ovan, i prepared this tikka. It is very tasty and easy to prepare. Normally for chicken tikka, we used to marinate and refrigerate for about 5-6 hours. But for mushroom tikka, I marinate the mushroom and kept only 20 minutes.  After that I fried in tawa. Because mushroom is having a lot of moisture in it. It will capture the masala quickly.  It is a very good starter or appetizer. It was so nice and tasty.
I used button mushrooms, capsicum and onion dices. We can be prepare without onion and capsicum and only with button mushrooms. We can also use colorful capsicums.
Health benefits :
Button mushrooms is very healthy and every one can take because, it is low in calories. I t will help to improve our immune system. One of the important benefits for all the women is, it prevents breast cancer.  Let us see how to prepare the tasty Mushroom tikka in tawa.

Basic information :
Preparation time : 5 Mins
Soak time : 20 Mins
Cooking time : 10 Mins
Ingredients :
Mushroom  : 2 Packs
Thick curd : 1/2 Cup
Turmeric powder : 1/4 Tsp
Cumin powder : 1/2 Tsp
Fennel powder : 1/2 Tsp
Garam masala : 1/2 Tsp
Chilly powder : 1/2 Tsp
Ginger garlic paste : 1 Tsp
Salt : To taste
Oil : 2 Tsp
Skewers : 5 Nos
Method : 
Clean the mushrooms and blanch in hot water.

In a bowl, take thick curd. Add all the masala powders, ginger garlic paste, salt and mix it well.


Mix washed mushrooms, capsicum and onion dices with the curd mix. Refrigerate 20 to 25 minutes.

Take water dipped skewers, arrange marinated capsicum, mushroom, onion alternatively.

Heat oil in a frying pan, fry the arranged mushroom with skewers in low flame.

Turn the skewers side by side. Fry till it done.

Wow!.. The tasty wonderful mushroom tikka is ready to serve with hot.

Garlic Naan / Tawa Naan / Naan recipe

Every time when we go to restaurant, my daughter will ask to buy Naan. So today I tried garlic naan recipe at home. In first time itself it came very well. She had id without any fuss and she appreciated me. That's a big thing for me. I was very happy. I tried this in tawa. I thought the method of preparation is very tough. But it was so easy to prepare and very nice recipe.
For making naan recipe, we need east for forming the dough. The east should be form in warm water. Otherwise we have to check the expiry date of the east. We have to leave the dough for foaming for about 1 hour. It will be very soft and very tasty. It goes with paneer butter masala or shahi paneer as side dish. But today I tried with mushroom pepper masala. It was amazing. let's see the preparation of Garlic naan in tawa.
Basic information :
Preparation time : 10 Mins
Kneading time : 10 Mins
Resting time : 1 Hr
Cooking time : 7 Mins
Ingredients :
Maida : 1 Cup
East : 1 Tsp
Sugar : 1 Tsp
Salt : 1 Tsp
Curd : 2 Tsp
Oil : 1 Tsp
Chopped garlic : 2 Tsp
Coriander leaves : 2 Tsp
Butter : 1 Tsp
Method :
Take a small bowl of warm water, add  1 teaspoon of sugar. When the sugar dissolve, add 1 teaspoon of active dried east and keep it for foaming about 5-10 minutes.

Take 1 cup of maida in large bowl, add salt. Make well in center add thick curd and foamed east mix.
Mix it well using your palm.

Kneed the dough till it comes soft. Add oil the dough and keep it in oil greased bowl.
Close the bowl with muslin cloth about 1 hour.
After 1 hour, the dough turn double in size.
Divide 4 equal parts and again close with the cloth.
Mix finely chopped garlic, finely chopped coriander leaves with oil or butter.
Keep ready with rolling pan, stick, equally parted dough, garlic mix, water and butter.
Dust the rolling pan with maida, roll the dough
Add garlic mix in the top of the rolled dough and press it using your finger.
Turn back the naan and spread water equally. It will help to stick in tawa while turn to cook in direct flame.
Heat the tawa, add the naan in low flame for 5 minutes. It will come bubbles in the naan.
Then turn back the tawa and keep the naan in direct heat. Roast it till it done.
Brush butter on the top in hot naan.

Stuffed Paneer fry / Paneer recipes

In star hotels, they will do many different preparations using different ideas. I got one chance to go one of the star hotel. They prepared one interesting food item using paneer. It was so delicious and looks tempted. I used to prepare Lemon paneer, paneer pakoda and gravy items using paneer.Then I decided to try this wonderful dish at home. Wow! it was awesome. All my family members asked, how you are getting these wonderful ideas?.. They appreciated me and every one liked it. It is very good starter or side dish.

For making the panner more tasty, I stuffed some dry fruits with potato and paneer. Before fry the stuffed paneer, we need to dip in maida paste. So that the stuffing and panner will stick together. I made shallow fry the paneer. We can also do deep fry. In shallow fry, we need to turn all the sides till it comes golden brown. We can also prepare restaurant style dishes. Ingredients :
Paneer : 500 Grms
Potato : 1 No
Cashew nuts : 10 Nos
Almonds : 10 Nos
Raisins : 5 Nos
Pepper powder : 2 Pinches
Coriander leaves : 1/4 Cup
salt : To taste
Maida : 1 Tsp
Oil : For fry
Method :
Slice the paneer in medium squares. Boil water in a bowl, add paneer slices for softening about 3 minutes.
Boil potato, peel off, smash it. Smash extra paneer with potato. Add finely chopped dry fruits, finely chopped coriander leaves and mix it well. Add pepper powder and salt and mix.
Arrange soft paneer slices in a tray or plate. Add stuffing in all the slices. Close the slices.
Take 1 teaspoon of maida and mix with water to make thin paste. The consistency of paste should not more watery or thick. Dip the stuffed paneer in maida dip. Heat oil in frying pan, make shallow fry maida dipped stuffed paneer in low flame. Turn all the sides to cook till it comes golden brown. It takes 1 Minute to fry 1 side.

Chicken Tikka

Chicken tikka is one of the famous Punjabi style starter. Every time we go to Punjabi restaurant, my husband will order Chicken tikka for starter before any order. Then I thought to prepare this yummy tikka recipe at home. It came very well. My husband and my daughter liked very much. My daughter ask me to prepare in every weekend.
For making this wonderful fry, we need to marinate the chicken boneless pieces with some interesting ingredients along with hung curd or thick curd. The chicken pieces have to soak in curd mix about minimum 5 hours. If only chicken will be soft. I usually marinate and keep for in refrigerator over night. Next day I will prepare tikka and it will come very smooth and soft and delicious. Come let us see how to prepare this wonderful simple Chicken tikka recipe.

Ingredients :
Chicken : 1/2 Kg
Thick curd : 1/2 Cup
Turmeric powder : 1/4 Tsp
Ginger paste : 1/4 Tsp
Garlic paste : 1/4 Tsp
Chilly powder : 1/2 Tsp
Cumin powder : 1/2 Tsp
Fennel powder : 1/2 Tsp
Garam masala : 1/2 Tsp
Salt : To taste
Oil : 1 Tsp
Capsicum : 1/2 No
Onion dices : 1/2 Cup
Skewers : As needed
Method :
In a large bowl, take thick curd. Add ginger garlic paste, and all the masala powders with salt.
Mix it well. Wash the bone less chicken pieces and marinate with curd mix. Refrigerate the marinated chicken about minimum 5-6 hrs.
Preheat the oven in 200 degree C. Place the chicken pieces in skewer one by one with capsicum and onion dices. Place them in oil greased tray and keep it in oven.
Grill till the chicken cooked and tender. Sprinkle pinch of chat masala.
