Dry fruits Laddu / Sugarless laddu / Healthy snacks for kids

Healthy...Healthy...Tasty...Tasty...All the mothers definitely will think about the kid's healthy snacks. Here... the marvelous snack item made with dry fruits. It is so delicious and every kid will definitely like it. Morning, when school going time, most of the kids will never have breakfast. We can give this laddu for them. It is very healthy and the whole day the kids will be active.
My daughter doesn't like dates. I am using dates in this laddu. She is eating without any fuss. I was very happy and excited. I used seedless dates, cashews, almonds, and raisins. We can add pista also. It is very simple and easy preparation. With less and healthy ingredients, making sweet and excellent  laddu recipe without sugar. I am very glad to share this recipe to all. Let us see how to prepare the interesting sweet laddu.

Dry fruits and Nuts are having amazing health benefits. They improves hemoglobin level in our body, hence, It prevents anemia. We are adding less amount of ghee in this laddu. So it is suitable for all age group people. Dry fruits and Nuts are helps to control the cholesterol level and reducing blood pressure. So it prevents heart diseases also.
 Basic information :
Preparation time : 5 Mins
Cooking time : 5 Mins
Store for : 1 Month
Ingredients :
Dates : 250 Grm
Cashew nut : 50 Grm
Almonds : 50 Grm
Raisins : 5 Nos
Cardamon powder : 1/4 Tsp
Ghee : 2 Tsp

Method :
Grind the seedless dates roughly.
Fine chop the cashews, almonds. We can make coarse  powder also.
In a pan, heat 2 teaspoon of ghee, add raisins and fry.
Add chopped or coarse powdered cashews and almonds and stir.
Add ground dates and mix it well. Stir till the dates melts. When dates melts, it will be sticky. Add cardamon powder and mix.
Switch off the flame, make medium size balls in hand holding heat itself. We can make laddu in heat only.
Exellent!...The laddu is ready to eat. We can store in air tight container for 1 month in dry place.

Chilli Paneer cheese grilled sandwich

All mothers definitely confuse for one thing. What can prepare for snacks box for their kids. Hear is the simple and healthy recipe for snacks box.

Today I prepare a delicious sandwich with cheese and chilly Paneer. Normally I prefer wheat bread for making sandwiches. So that it will be very healthy and tasty. Every kid would like cheese. So all the kids will surely love it and all mothers would be very happy. Come let us make a wonderful chilly Paneer cheese sandwich.

Basic information:
Preparation time : 15 Mins
Cooking time : 3 Mins
Serve for : 2 Persons
Ingredients:
For green chutney :
Mint leaves : 1/4 Cup
Coriander leaves : 1/4 Cup
Ginger : 1 Tsp
Garlic : 4 Pcs
Green chilly : 2 Nos
Salt : As needed
For Sandwich :
Bread : 4 Slices
Cheese : 2 Cubes
Paneer : 50 Grm
Turmeric powder : 1 Pinch
Chilly powder : 1 Pinch
Salt : 1 Pinch
Chat masala : 1 Pinch
Capsicum : 2 Round
Onion : 2 Round
Oil or Butter          : For Brushing
Method:
For green chutney grind mint leaves, coriander leaves, garlic, ginger nicely as paste with adding salt.
Cut the Paneer into small cubes and add it in the warm water for 2 minutes for soften. After 2 minutes, drain the water and add turmeric powder, chilly powder and mix it well.
Place 4 bread slices in a plate.
Spread green chutney nicely.
Add greated cheese.
Add chilly mixed Paneer in only two slices. Add round capsicum, onion.
Sprinkle 1 pinch of chat masala powder, close the bread and cut it into triangle shape.
Brush oil or butter on the top and grill. We can also toast the sandwich instead of grill.
Wow! ... yummy... sandwich is ready for box and eat.

Veg lollypop

Lollypop, drumstick these names are normally we are hearing for non-veg only. For a change, I tried in vegetables. This is a healthy vegetarian lollypop. In this wonderful snack, I used all the vegetables like beans, carrots, capsicum, potatos and masala powders. We can use cabbage, green peas also.
It is a very good snack item which can be serve as tea time snacks or side dish for sambar rice, rasam rice. I usually prepare this snack for my daughter after school in evening time. She liked very much and it consists all veggies and it is very healthy and tasty.
Health benefits :
Carrots : Rich in Vitamin A, Good for eye sight.
Beans : Rich in Vitamin A, Good for kidney.
Capsicum : Rich in Carbohydrate. 
Potato : Rich in protein.
Paneer : Rich in Calcium.
Basic information :
Preparation time : 15 mins
cooking time : 15 mins
serve for : 4 persons
Ingredients :
Potato : 3 Nos
Paneer : 50 Grms
Beans : 100 Grms
Carrots : 50 Grms
Capsicum : 1/2 No
Coriander leaves : 2 Tsp
Mint leaves : 1 Tsp
Curry leaves : 10 Nos
Turmeric powder : 1/4 Tsp
Cumin powder : 1/2 Tsp
Fennel powder : 1/2 Tsp
Garam masala  : 1/4 Tsp
Chilly powder : 1/2 Tsp
Salt  : As needed
Corn flour : 1 Tsp
Rice flour : 1/2 Tsp
Oil : For fry
Onion : 1 No
Garlic : 6 Pcs
Ice sticks : 10 Nos
Musturd seeds : 1/2 Tsp
Method :
Boil potatoes, peel off and smash it. Smash Paneer with smashed potato.
Fine chop all the vegetables.
Heat oil in a pan, add mustard seeds. After the seeds pop, add chopped onion, garlic, curry leaves and saute well till onion turns transparent.
Add chopped vegetables and saute till the vegetables become half cooked.
Mix the half cooked vegetables in potato Paneer mix. Add all the masala powders, chopped mint leaves, coriander leaves, salt and mix together nicely.
Add corn flour, rice flour and mix well. Make lemon size balls and stick with ice cream sticks.
Add little water with corn flour and mix. Dip the lollypop in that paste.
Dip in bread crumbs.
Heat oil in a frying pan fry the lollypops  in low flame. Fry till it comes golden brown.
In another pan, heat 2 teaspoon of oil, add chopped garlic. Add tomato sauce, soya sauce little water and allow it to boil for 1 minute. Switch off flame. Dip the fried lollypop in the sauce mixer.
Ya.... it's ready to serve with tomato ketchup or green chutney. Try this delicious snack and please feel free to post your comments.

Raw Banana Koftha Balls

Raw banana is very healthy  vegetable and it has many health benefits. It is rich in Vitamins, minerals and it is rich in potassium. We can make some interesting recipes with using raw banana.
 I was thinking, how we can make interesting recipe using this healthy vegetable. This time, I made fried koftha balls using raw banana. I was thinking to make koftha balls curry. It can be have as side dish for chapatti, dosa... After making balls, while I preparing curry, the balls are vanished. All my family members said, it is very tasty without gravy itself. It is a very good starter or we can have as a tea time snack. When i prepare this snack at home, my daughter asked what main ingredient used in this?  She appreciated me and that is very big compliment for me. Please try this recipe in your home and get compliment from all family members.
Basic information :
Preparation time : 15 Mins
Cooking time : 5 Mins
Serve for : 4 Persons
Ingredients  :
Raw Banana : 2 Nos
Potato : 1 No
Onion : 1 No
Ginger garlic paste : 1/2 Tsp
Coriander leaves : 1 Tsp
Fennel powder : 1/2 Tsp
Cumin powder : 1/2 Tsp
Turmeric powder : 1/4 Tsp
Chilly powder : 1/2 Tsp
Salt : As Need
Oil : For fry
Method:
Cut the raw banana and boil it in water with adding turmeric powder and salt. After boiling, peel off the skin and great it.
Boil potato, peel off and great. Mix grated banana, potato, chopped onions, cumin powder, fennel powder, coriander leaves, Ginger garlic paste, turmeric powder, chilly powder and salt. Mix all these ingredients well with using finger. Add corn flour if you need.
Make lemon size balls.
Heat oil and fry the balls in low flame.
Turn occasionally. Put the balls in oil in correct heat, so that it will cook evenly.
Fry till golden brown colour comes.
Takeout from the oil and serve with green chutney or tomato sauce.

Badhusha Yummy Desert

Badhusha is a yummy sweet which most of us liked very much. The word  Badhusha is derived from the word Balushahi. Badhusha is famous traditional  Indian, Nepali and Pakistani sweet. In India, it is very famous desert in South Bihar.
   This yummy desert is made by Maida or All purpose flour. After a long time, I have tried this recipe and it came very well. My husband and my daughter liked it very much and they  said it is so delicious and so yummy. I used butter to make dough. Some people will use Dalda or ghee. I normally will not prescribe to use Dalda, Instead of that we can use butter, it will be more tasty and healthy also.

Basic Information :
Preparation time  : 20 Minutes
Serve as               : Cool
Cooking time       : 5 Minutes


Ingredients  :
Maida or All purpose flour  :  1 Cup
Butter and Oil                      :  1/4 Cup
Sugar                                    :  2 Teaspoons
Curd                                     :  1 Teaspoon
Baking soda                         :  1 Teaspoon
Oil or ghee                           :   For fry
For Sugar syrup :
Sugar                  :  1 Cup
Water                  :  1/2 Cup
Cardamon           :  (Optional)1 or 2
For decorate        :  Almonds
Method :
Melt the butter. Add oil, sugar, baking soda and curd till the sugar dissolve nicely.
 Add maida slowly to the butter mixer. Use your fingers to mix. Add little water to make soft dough.
Do not need to kneed tightly. the dough should be soft. Keep the soft dough in 15 minutes for rest.
In mean time, We can make sugar syrup. For making syrup, boil the water and add sugar. Allow it to boil till the syrup turns one string consistency.
After 15 minutes of resting, make lemon sized balls in the dough.

In the ball, using your thumb finger slightly press in the middle, so that we can make the badhusha shape. Make all the dough in same. You can make design as per your innovative thinking..
Check the heat of the oil or ghee. Fry the badhusha balls in low flame. Fry till it's coming golden brown.
Dip the  hot badhusha in the sugar syrup.

 Take out from the syrup and decorate with almond pieces.

Note :

  • Do not Kneed the dough hard. If the dough is soft, then only we can get soft badhsha.
  • I am using salted butter for the dough. If we are using  unsalted, add a pinch of salt.
  • For all the sweets, if we add a pinch of salt, makes good taste and we can feel the  rich sweetness.
  • For fry the badhusha, we must put it in oil in correct heat. If we add in overheat the balls will burn.
  • Fry the balls in low flame. If we fry in high flame, it will not cook inside.
