How to prepare Sweet mini samosa

Everyone will like samosa. I wanted to prepare something different in samosa and i tried sweet mini samosa. When i prepared this for evening snack, all of my family members likes very much and my daughter likes the most. I am using only coconut with sugar stuffing. Instead of this, we can use chana dhal, sweet corn or any stuffing. Let us see how to prepare the tasty and simple sweet mini samosa.
Basic information :
Preparation time : 10 Mins
Cooking time : 5 Mins
Serve for : 3 Persons
Ingredients :

For dough :
Maida flour : 1 Cup
Rava : 1 Tsp
Oil : 1 Tsp
Butter : 1/2 Tsp
For stuffing :
Grated coconut : 1 Cup
Sugar powder : 3 Tsp
Cardamon powder : 1/2 Tsp
Oil : For fry
Method :
Mix maida, rava with oil and butter and Luke warm water to make smooth dough. Knead the dough for 3-4 minutes to make smoother. Keep the dough for minimum 15 minutes.
Mix sugar powder and cardamon powder with grated coconut to make stuffing.
To make samosa, make lemon size balls with using dough. Take the ball and roll it with your palm, then roll it in the rolling wood and make circle.
Cut the pressed flour into two pieces.
Take one piece and make cone shape as shown below.
In that cone shape, fill the stuffing.
And close the samosa by pressing with your fingers. Make all balls same as samosa.
Heat oil in frying pan, fry the stuffed samosa by frying all the sides well.
After fried, transfer to the serving plate and serve hot. As this is sweet samosa, no need any sauce.

How to prepare Chicken kofta balls

 We can make different recipes with chicken. Chicken kofta ball is one of the tasty recipe and simple method of preparation also. It is a very good non-veg snack item and all the children likes very much. My daughter likes very much and she wanted more. While having with tomato sauce or ketch-up, this kofta balls will be very tasty. On one Sunday, i have tried this special snack, all of my family members  liked very much and i got an appreciation from all of them. Let us see how to prepare the tasty chicken kofta balls.
Basic information :
Preparation time : 15 Mins
Cooking time : 5 Mins
Serve for : 3 Persons
Ingredients :

Boneless chicken : 1/4 Kg
Turmeric powder : 1/4 Tsp
Salt : To taste
Oil : 1 Cup
Onion : 1 No
Chopped ginger : 1 Tsp
Chopped garlic : 1 Tsp
Cumin powder : 1/4 Tsp
Pepper powder : 1/2 Tsp
Curry leaves : Few
Chilly powder : 1 Tsp
Coriander leaves : 2 Tsp
Corn flour : 2 Tsp
Rice flour : 1 Tsp
Bread crumbs : 2 Tsp
Garam masala powder:1/2 Tsp
Method : 
Wash the chicken with turmeric powder well and boil the chicken pieces with adding turmeric powder, salt and water.
After the chicken cooked well, drain the water and smash the cooked and drained chicken.
Heat oil in a pan, add  chopped onion, curry leaves and fry. Add chopped ginger, garlic and fry well. Add smashed chicken and fry with adding all the masala powders and salt.  After fried, allow it cool in room temperature. Add 1/2 teaspoon of corn flour, 1/2 teaspoon of rice flour and mix it nicely.
Mix 1 teaspoon of corn flour and 1 teaspoon of rice flour with water as thin paste. Make the mixer in lemon size balls. Dip the balls into the flour paste and then bread crumbs. Make all the balls same as it is.
Heat oil in a frying pan, make deep fry the balls.
 After deep fried all the sides, transfer to the serving plate and garnish with coriander leaves and serve with tomato sauce. Try this chicken snack and please your valuable comments....

How to prepare Stuffed rava idly / Masal idli

Idly is one of the favorite tiffin item in south India and also most common in Tamil Nadu. But rava idly is different from normal idly. It is quick recipe and very tasty also. I thought to preparing rava idly in different way with stuffing. I am using idly rava to make this idly. We can use normal rava also. For preparing this, there are 3 steps. One is making batter, second one is making stuffing and the third one is making stuffed idly. This is very tasty and the idly will be more soft and spanjy. This idly is goes with puthina chutney, coconut chutney or chutney powder also.
Ingredients :
For batter :
Idly rava : 3 Cups
Urad dal : 1 Cup
Dry methy : 1 Tsp
Salt : To taste
For stuffing :
Onion : 1 No
Potato : 4 Nos
Chopped ginger : 1/2 Tsp
Copped garlic : 1/2 Tsp
Curry leaves : Few
Turmeric powder : 1/4 Tsp
Chilly powder : 1/2 Tsp
Method :
Making batter :
Soak urad dal and 1 teaspoon of dry methy (fenugreek) for minimum 30 minutes.
After 30 minutes, wash the dal and grind well. When the dal becomes nice batter, add idly rava and grind for another 3-4 minutes.
After that, transfer to the container and add salt. Keep the batter for 2-3 hours for foaming. Do not refrigerate.  We can add chopped coriander leaves and mint leaves. 
 Making stuffing :
Boil the potato, peel off and smash it partially. Heat oil in a pan, add chopped onion, curry leaves and fry. Add chopped ginger, garlic and fry well. Add partially smashed potato, masala powders and salt and fry.
allow the stuffing cool in room temperature. 
Making idly :
Heat water in idly pot,spread a clean cloth in idly plate.(We can use oil also) Pour some batter in  the idly plate. Put the stuffing over the batter.
Upon the stuffing, pour more batter to cover the stuffing and steem it in the idly pot.
After some time, open the pot lid, check whether the idly cooked with fork spoon. After the idly cooked, transfer to the serving plate garnish with grated carrots and coriander leaves and serve hot.

How to prepare Spicy chicken pepper masala

Chicken dish is a favorite and most common for all the non-vegetarians. Spicy chicken curry is made with less chilly powder and more pepper powder. So it will be very tasty and easy to digest also. This recipe is one of the favorite recipe in our home and my mother-in-low will prepare this curry very tastier. This curry is goes with chapathy, nan, and other tiffin items and also with chicken biriyani, it will be very tasty. I am preparing this without garam masala like cinnamon etc. Using garam masala, i was posted, Tasty chicken masala. Let's prepare the tasty and spicy chicken pepper masala.
Basic information :
Preparation time  : 10 Mins
Cooking time  : 20 Mins
Serve for  ; 4 Persons
Ingredients :
For marinate :
Chicken : 1/2 Kg
Lime juice : 1 Tsp
Cumin powder : 1/2 Tsp
Pepper powder : 1 Tsp
Salt : To taste
For saute  :
Cumin seeds : 1 Tsp
Sambhar onion : 400 Gm
Curry leaves : Few
Crushed ginger : 1 Tsp
Chopped garlic : 1 Tsp
Tomato : 1 No
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Coriander powder : 2 Tsp
Pepper powder : 2 Tsp
Salt : To taste
Method :
Wash the chicken pieces with turmeric powder and marinate with all the marinated ingredients. Keep it for minimum 15-20 minutes.
Heat oil in a pan, add cumin seeds. Add chopped sambhar onion, curry leaves and fry till the onion goes golden brown. Add 1/2 teaspoon of salt to quick fry.
Add ginger, garlic and fry. Add chopped tomato and fry well.
Add marinated chicken pieces and fry well. Add all the masala powders, salt  except pepper powder and fry.
When the chicken half-cooked, add pepper powder. Add water and close the pan with lid till the chicken cooked well.
After the chicken cooked well, transfer to the serving dish and marinate with coriander leaves.

How to prepare Chicken dhum biriyani

Chicken dham biriyani is prepared with marinated chicken pieces and rice. Most commonly, dham biriyani is prepared with basmathy rice. But i am preparing with jeera rice (jeeraha samba) which is using mostly in south Indian biriyanies. I am preparing this, using pressure cooker in low flame. It is very tasty and the method of preparation also very simple. First we have to marinate the chicken pieces with lime juice and some masala. Chicken dham biriyani is one of the very favorite menu in our house and my husband likes the most. Let's prepare the tasty Chicken dham biriyani.
Basic information :
Preparation time : 15 Mins
Cooking time : 20 Mins
Serve for : 5 Persons
Ingredients :

Jeera rice : 1/2 Kg
Chicken : 1/4 Kg
Onion : 1 No
Curry leaves : Few
Mint leaves : 1/4 Cup
Coriander leaves : 1/4Cup
Curd : 1/2 Cup
Salt : To taste
Ghee : 3 Tsp
Bay leaves : 1 No
Cinnamon : 3 Nos
Cardamon : 2 Nos
Cloves : 4 Nos
For marinate :
Ginger  : Medium pc
Garlic : 5 Nos
Green chilly : 3 Nos
Cumin powder : 1 Tsp
Fennel powder : 1 Tsp
Garam masala powder : 1 Tsp
Turmeric powder : 1/4 Tsp
Chilly powder : 2 Tsp
Lemon juice : 1 Tsp
Method :
Wash the chicken pieces with turmeric powder. Crush ginger, garlic, green chilly. Mix all the marinated ingredients and crushed paste and marinate with washed chicken pieces. soak the marinated chicken pieces
for minimum 15-20 Mins.
Heat ghee in a pressure cooker, add bay leaves, cinnamon, cardamon and cloves.
Add onion slices, curry leaves, green chilly and fry till the onion goes golden brown. Add marinated chicken and fry well.
Add nicely chopped mint leaves and coriander leaves and fry.
Add washed jeera rice and fry a little.
 Add 1/2 a cup of curd and water in 1:2 ratio. Add salt.
Allow it to boil till the rice became half-cooked. After the rice half-cooked, close the pressure cooker lid and wait for 10 minutes. Keep it in low flame.
After 10 minuets, switch off the flame and wait for another 10 minuets to open the lid. After that, open the cooker lid and transfer to the serving dish and serve hot with spicy chicken masala.

How to prepare Seer fish fry

Seer fish is also called Vanjram meen and Nei meen in Tamil and it is a very tasty fish. It is not having thorns except center bone. So we can give it for children. Seer fish is rich in protein which helps to improve immunity power and gives energy to our body. Seer fish is preferable for all of us if you are in diet also, as it is having low sodium and average fat content. It will be more tasty, if we fry with home made masala. I am taking ginger garlic juice with masala powders as my sister-in-law suggested, and this fry was very tasty. Let's prepare the tasty Seer fish fry.
Basic information :
Soaking time : 30 Mins
Cooking time : 5 Mins
Serve for  : 3 Persons
Ingredients :

Seer fish : 1/2 Kg
Ginger : Small Pc
Garlic : 4 Nos
Turmeric powder : 1/4 Tsp
Chilly powder : 2 Tsp
Fennel seed powder : 1 Tsp
Pepper powder : 1/2 Tsp
Salt : As per taste
Oil : For fry
Method :
Wash the seer fish well. Crush ginger, garlic and take juice. Mix all masala powders and salt with ginger garlic juice.
Marinate the fish with the mixed masala. Keep the marinated fish for minimum 30 minutes.
Heat oil in a frying pan and make shallow fry in both the sides.
After the fish fried well in both the sides, transfer to the serving plate and serve hot.
