Chettinadu Chicken gravy / Chicken masala

We are preparing many dishes using Chicken. This time, i tried a delicious spicy chicken gravy in Chettinadu style. When guests come to my house, I prepare this gravy as side dish for Biriyani and also tiffin items like idly, dosa, chappathy, poori.. Everybody liked this gravy and my husband says to prepare every time. I normally prepare chicken curry with only masala powders. In this style, we have to saute some ingredients to grind and also add masala powders. If we want ore gravy, we can add coconut paste or coconut milk. 
For making this style gravy, i used tempering in final stage. It is very tasty and very simple to prepare. I used sambar onion to ground masala. Sambar onion gives the gravy nice aroma and wonderful taste. Try this simple gravy recipe and get rich taste of Chettinadu chicken.

Serve for : 3 Persons
Ingredients :
For Grind:
Sambar onion:1/4 Kg
Ginger:2 Tsp
Garlic:2 Tsp
Fennel:1 Tsp
Pepper:1 Tsp
Cumin seeds:1 Tsp
Curry leaves:1 Tsp
For gravy:
Chicken:1/2 Kg
Turmeric powder:1/4 Tsp
Chilly powder:1 Tsp
Coriander powder:2 Tsp
Salt:As needed
For tempering :
Oil:2 Tsp
Cinnamon:2 Nos
Cloves:2 Nos
Curry leaves:1 Tsp
Method :
Heat oil in a pan Add cumin seeds, fennel seeds, pepper. After the seeds pop, add chopped sambar onion, curry leaves and saute till onion becomes golden brown,
After that add chopped ginger, garlic and switch off the flame. No need to fry more ginger and garlic. In that heat itself it will fry.
Grind the saute ingredients after getting cool.
Wash the chicken pieces, add ground masala, all the masala powders and salt.
 Add little water and allow it to cook. No need to add more water. 
After the chicken cooked and raw smell goes, we can make tempering. Heat oil in a pan, add cinnamon, cloves, curry leaves and add it to the gravy.
Hmmm,... Delicious Chittinadu style chicken gravy is ready to serve with rich  aroma.

Chicken recipe - Sauce chicken

When i was in Delhi, we went to one restaurant. There, we had fried rice with chicken curry.  That chicken curry was amazing taste. Then, for long time, i thought to prepare that chicken curry. This weekend i tried with chicken biriyani. This curry is made with boiled chicken with sauce gravy. So, i mentioned the name as Sauce chicken. It is very tasty and it goes very well with biriyani, chicken fried rice and also kuska rice. Very simple curry which everyone can make this. Let us see how to prepare the tasty Sauce chicken.
Basic information :
Preparation time : 10 Mins
Cooking time : 20 Mins
Serve for : 4 Persons
Ingredients :
Chicken : 1/2 Kg
Ginger garlic paste : 1 Tsp
Pepper powder : 2 Tsp
Salt : 1 Tsp
Chopped garlic : 2 Tsp
Tomato sauce : 2 Tsp
Soya sauce : 1 Tsp
Corn flour : 1 Tsp
Chilly flacks : 2 Tsp
Corinader leaves : 1 Tsp
Sesame seeds : To garnish
Method :
Wash the bone less chicken and cook with adding ginger garlic paste, pepper powder and salt.
After the chicken cooked well, keep it aside. Heat oil in a pan, add chopped garlic and fry.
Add cooked chicken with the water. Add the sauces and chilly flacks.
Mix 1 teaspoon of corn flour in 1/2 cup of water and mix it with the chicken. Add chopped coriander leaves.
Keep the gravy in medium flame for 3 more minutes and transfer to the serving dish and garnish with the white sesame seeds. serve hot...

Sheer fish curry (Andhra style) / Andhra chepala pulusu / Vanjram meen kuzhambu

Fish curry in Andhra style will be more spicy and very tasty. I am preparing this Andhra fish curry with Sheer fish. Sheer fish is not having thorn except the center bone. With sheer fish, fish curry will be very tasty and we will eat extra rice with this curry. For this curry, we are going to add extra oil. So the taste will be double. When we saw also, our mouth will be watering.. Wow!... What a spicy curry...... Come let us prepare the tasty Andhra fish curry with Sheer fish.
Basic information :
Preparation time : 5 Mins
Cooking time : 30 Mins
Serve for : 4 Persons
Ingredients :
Sheer fish : 1/2 Kg
Chopped garlic : 1 Tsp
Chopped ginger : 1/2 Tsp
Onion : 1 No
Tomato puree : In 4 Nos
Tamarind paste : 1/4 Cup
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Coriander powder : 2 Tsp
Green chilly : 2 Nos
Salt : To taste
Curry leaves : Few
Oil : 4 Tsp
Methi seeds : 1/4 Tsp
Mustard seeds : 1/2 Tsp
Cumin seeds : 1 Tsp
Method :
Heat a pan and dry fry methi seeds, mustard seeds, cumin seeds one by one. Should not over fry it. Grind them as powder after getting cool in room temperature.
Heat oil in a pan, add chopped garlic, 1/2 teaspoon of chopped ginger and let it fry in golden brown.
Add chopped onion, curry leaves and saute well till it turns transparent.
Add tomato puree and allow it to cook till the raw smell goes.
Add tamarind paste, all the masala powders and add water and salt. Cook till masala smell gone.
Add washed fish slices and cook for 5-10 minutes.
After the fish cooked well, add 1 teaspoon of ground seeds powder.
After 2 minutes of cooking,  transfer to the serving dish, garnish with curry leaves and serve hot..

Green chicken / Hara chicken masala

Green chicken is completely different from normal chicken curries. I thought to prepare something interesting with chicken. Then i tried green chicken which is very tasty and flavorful green chutney. I am not using any masala powders in this curry, except cumin seeds powder. I am preparing green chutney and made this curry. I am not using yogurt or curd. If we want more gravy, we can add thick curd in this curry. This is very tasty and must try this. Let us see how to prepare the tasty and flavorful Green or Hara chicken masala.
Basic information :

Serve for : 3 Persons
Ingredients :

For green chutney :
Mint leaves : Few
Coriander leaves : Few
Green chilly : 4 Nos
Ginger : 1 Inch
Garlic : 4 Nos
For marinate :
Chicken : 1/2 Kg
Pepper powder : 1/2 Tsp
Turmeric powder : 1/4 Tsp
Lemon juice : 1 Tsp
Salt : 1 Tsp
For curry :
Onion : 2 Nos
Curry leaves : Few
Cumin seed powder : 1/2 Tsp
Fennel seeds : 1/2 Tsp
Salt : To taste
Method :
Wash the chicken with turmeric powder and marinate with the marinated ingredients.
Grind the green chutney. Grind the onions as paste. Heat oil in a pan, add fennel seeds. After fennel seeds pops, add  curry leaves and ground onion paste ans saute well.
Add green chutney, cumin powder, salt and saute well.
Add the marinated chicken. Add some water and close the pan with lid till the chicken fully cooked.
After the cooked well, transfer to the serving dish and serve hot with rice or biriyani, chapathy, naan.

Egg curry

Egg curry is one of the favorite recipe and it goes with chapathy, poori, rice. Adding egg in everyday meal is healthy menu for all especially for kids. We can make different items with using egg like, egg kurma, egg masala etc. It is a thick gravy with boiled eggs. I added coconut paste to thickening the gravy. It is very very tasty and i learned this from my mother.

Egg is having a lot of health benefits. It is rich in protein and essential amino acids. Having egg helps to prevent heart attacks, strokes and prevent blood clot. Egg regulates our body's nervous system. The most important benefit for women is, it helps to prevent Brest cancer. The Vitamins and minerals in the egg are helps to have healthy hair growing.

ingredients :

Egg : 3 No
Potato : 1 No
Oil : 3 Tsp
Cinnamon : 2 Nos
Cloves : 2 Nos
Onion : 1 No
Grated ginger : 1 Tsp
Tomato : 1 No
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Coriander powder : 2 Tsp
Salt : To taste
For grind :
Coconut : 3 Pcs
Fennel seeds : 1 Tsp
Garlic : 4-5 Cloves
Method :
Boil the eggs and potato. Peel off the potato and cube it.
Grind the ingredients which is under for grind heading.
Heat oil in a pan, add cinnamon, cloves. Add onion slices, curry leaves and saute well. Add chopped tomato and saute well till the tomato smashed.
Add ground coconut masala, all masala powders and add water. Add salt and close the pan with the lid.
After 5-8 minutes of cooking, the raw smell of the masala gone, add potato cubes and cracked eggs.
After adding eggs, keep the gravy in medium flame for 5-6 minutes. Then transfer to the serving dish and serve hot.

Butter chicken masala

Chicken masala for chapathy, parota, naan is a favorite side dish for most of us. This time, i tried to make butter chicken masala. It came very well and my husband liked very much. The gravy made with fried onion, tomato, ginger, garlic paste, saute with butter is giving nice aroma and good taste. It goes also good with rice also. When we fry the chicken in butter, it gives more tasty and aroma. let us see how to prepare the tasty "Butter chicken masala".
Basic information :

Ingredients :

For fry and grind :
Onion : 2 Nos
Tomato : 2 Nos
Ginger : small log
Garlic : 3 Nos
Curry leaves : Few
Cinnamon : 3 Pcs
Cardamon : 2 Nos
Cloves : 2 Nos
For saute :
Butter : 3 Tsp
Onion : 1 No
Grated ginger : 1 Tsp
Curry leaves : Few
Green chilly : 1 No
Turmeric powder : 1/4 Tsp
Chilly powder : 2 Tsp
Coriander powder : 2 Tsp
Garam masala : 1 Tsp
Salt : To Taste
Chicken : 1/4 Kg
Method :
Fry well the ingredients given under for fry and grind heading and keep it for cool in room temperature.
After gets cool, grind it as a paste.
Heat butter in a pan, add Onion slices, grated ginger, curry leaves and saute well. Add washed chicken pieces and saute.
Add ground paste and all the masala powders and saute. Add salt.
Add water, close the pan with the lid and cook till the chicken cooked well.
Cook till, raw smell goes, the gravy came thick. After that, transfer to the serving dish and serve hot.....
