How to prepare Chicken dhum biriyani

Chicken dham biriyani is prepared with marinated chicken pieces and rice. Most commonly, dham biriyani is prepared with basmathy rice. But i am preparing with jeera rice (jeeraha samba) which is using mostly in south Indian biriyanies. I am preparing this, using pressure cooker in low flame. It is very tasty and the method of preparation also very simple. First we have to marinate the chicken pieces with lime juice and some masala. Chicken dham biriyani is one of the very favorite menu in our house and my husband likes the most. Let's prepare the tasty Chicken dham biriyani.
Basic information :
Preparation time : 15 Mins
Cooking time : 20 Mins
Serve for : 5 Persons
Ingredients :

Jeera rice : 1/2 Kg
Chicken : 1/4 Kg
Onion : 1 No
Curry leaves : Few
Mint leaves : 1/4 Cup
Coriander leaves : 1/4Cup
Curd : 1/2 Cup
Salt : To taste
Ghee : 3 Tsp
Bay leaves : 1 No
Cinnamon : 3 Nos
Cardamon : 2 Nos
Cloves : 4 Nos
For marinate :
Ginger  : Medium pc
Garlic : 5 Nos
Green chilly : 3 Nos
Cumin powder : 1 Tsp
Fennel powder : 1 Tsp
Garam masala powder : 1 Tsp
Turmeric powder : 1/4 Tsp
Chilly powder : 2 Tsp
Lemon juice : 1 Tsp
Method :
Wash the chicken pieces with turmeric powder. Crush ginger, garlic, green chilly. Mix all the marinated ingredients and crushed paste and marinate with washed chicken pieces. soak the marinated chicken pieces
for minimum 15-20 Mins.
Heat ghee in a pressure cooker, add bay leaves, cinnamon, cardamon and cloves.
Add onion slices, curry leaves, green chilly and fry till the onion goes golden brown. Add marinated chicken and fry well.
Add nicely chopped mint leaves and coriander leaves and fry.
Add washed jeera rice and fry a little.
 Add 1/2 a cup of curd and water in 1:2 ratio. Add salt.
Allow it to boil till the rice became half-cooked. After the rice half-cooked, close the pressure cooker lid and wait for 10 minutes. Keep it in low flame.
After 10 minuets, switch off the flame and wait for another 10 minuets to open the lid. After that, open the cooker lid and transfer to the serving dish and serve hot with spicy chicken masala.

How to prepare Seer fish fry

Seer fish is also called Vanjram meen and Nei meen in Tamil and it is a very tasty fish. It is not having thorns except center bone. So we can give it for children. Seer fish is rich in protein which helps to improve immunity power and gives energy to our body. Seer fish is preferable for all of us if you are in diet also, as it is having low sodium and average fat content. It will be more tasty, if we fry with home made masala. I am taking ginger garlic juice with masala powders as my sister-in-law suggested, and this fry was very tasty. Let's prepare the tasty Seer fish fry.
Basic information :
Soaking time : 30 Mins
Cooking time : 5 Mins
Serve for  : 3 Persons
Ingredients :

Seer fish : 1/2 Kg
Ginger : Small Pc
Garlic : 4 Nos
Turmeric powder : 1/4 Tsp
Chilly powder : 2 Tsp
Fennel seed powder : 1 Tsp
Pepper powder : 1/2 Tsp
Salt : As per taste
Oil : For fry
Method :
Wash the seer fish well. Crush ginger, garlic and take juice. Mix all masala powders and salt with ginger garlic juice.
Marinate the fish with the mixed masala. Keep the marinated fish for minimum 30 minutes.
Heat oil in a frying pan and make shallow fry in both the sides.
After the fish fried well in both the sides, transfer to the serving plate and serve hot.

How to prepare Drumstick fry

Mostly we are using drumstick for making sambhar. Drumstick is having a lot of health aspects like Vitamins, minerals, iron and calcium contents. Having this vegetable helps to have strong bones and prevent skin, throat  and chest infections. It is very good for pregnant ladies for avoiding giddiness and vomiting.
   Drumstick fry is one of the very tasty recipe. Drumstick is most commonly using in all the South Indian menus. Instead of using in sambhar in usual way, this fry is very different and quick method of preparation. 
Basic information :
Preparation time  : 5 Mins
Cooking time : 10 Mins
Serve for : 4 Persons
Ingredients :

Drumstick : 3 Nos
Oil : 2 Tsp
Mustard : 1/4 Tsp
Curry leaves : Few
Sambhar onion : 1/2 Cup
Garlic : 2 Nos
Cumin seeds : 1 Tsp
Red chilly : 6 Nos
Turmeric powder : 1/4 Tps
Salt : As per taste
Method :
Wash the drumstick and cut into medium pieces. Crush onion, garlic, red chilly, cumin seeds, turmeric powder.
Heat oil in a pan, add mustard. After the mustard pops, add curry leaves.
Add the crushed paste and fry well.
Add cut drumstick pieces and fry. Add some water and close for some time.
After the drumstick cooked, transfer to the serving plate and serve hot.

How to prepare Prawns masala

Prawn is having a lot of health benefits like it is rich in protein and low in fat. It is also rich in Iron, Zinc and Omega 3 fatty acids which helps to reduce heart diseases and risk of stroke. Also, Prawns is having Vitamin B which helps to increase immunity. This prawns masala is very tasty and good flavored recipe. We have to be careful when we are cooking prawn. If we overcook it, the prawn will become rubber consistency. It is a very simple recipe and quick method of preparation also. This recipe goes with rice, chapathy and other tiffin items. Prawns : 1/2 Kg
Sambhar onion : 1 Cup
Ginger : Small pc
Garlic : 4 Nos
Red chilly : 8 Nos
Pepper : 1 Tsp
Fennel seed : 1 Tsp
Turmeric powder : 1 Tsp
Salt : As per taste
Method :
Clean the prawn well.
Grind all the ingredients nicely as a paste.
Heat oil in a pan, add ground paste and fry.
Add cleaned and washed prawn and fry.
Add little water and close the pan with a lid.

After the prawn cooked and raw smell of masala goes fry for 2 minutes and transfer to the serving dish and serve hot.

How to prepare Lemon paneer

Paneer is rich in protein, helps the growth of body, rich in calcium, helps to make our bones stronger and prevent all the joint pains and back pains. This recipe is made paneer with lemon. Lemon paneer is one of the very tasty starter. It is very simple recipe and it is quick method of preparation. In my home,earlier my husband doesn't like paneer, but when i made lemon paneer, he likes very much and he asking me to prepare more often as starter. Let's see how to prepare the tasty and simple Lemon paneer.
Basic information :
Preparation time : 5 Mins
Cooking time : 10 Mins
Serve for : 3 Persons
Ingredients :

Paneer : 100 Grm
Corn flour : 1 Tsp
Rice flour : 1 Tsp
Turmeric powder : 1/4 Tsp
Lemon juice : 2 Tsp
Green chilly : 5 Nos
Ginger : Small Pc
Garlic : 2 Nos
Chopped onion : 1 Cup
Curry leaves : Few
Coriander leaves : For garnish
Salt : As per taste
Method :  
Cut the paneer like rectangle boxes.
Crush green chilly, ginger, garlic as a semi paste.
Mix corn flour, rice flour, turmeric powder, 1 teaspoon of lime juice well.
Dip the paneer boxes in the flour mix and fry. Don't want to fry more, we can fry till the flour cooked and keep it aside.
Heat oil in a pan, add nicely chopped onion, curry leaves and fry. Add crushed paste and fry well.
Add turmeric powder, 1 teaspoon of lemon juice and fried paneer and fry.
Fry for 2 minuets and transfer to the serving plate, garnish with coriander leaves and serve hot.

How to prepare Jackfruit seed curry

Jack-fruit seed is rich in protein. This seed  helps us to solve skin problems like wrinkles and it helps to get glowing complexion because of the fiber content. Jack-fruit seed is having Vitamin A which helps to solve hair problems. It helps to improve the blood circulation and reduce the digestive problems. Mostly jack-fruit seed is used for making sambhar. This recipe is very tasteful and this is taste like non-veg curry. It is very simple curry. Jack-fruit curry is goes with appam, chapathy, roti, and all variety riced like fried rice, kuska, coconut rice etc......

Ingredients :

For grind
Coconut  : 10 Small Pcs
Sambhar onion : 5 Nos
Ginger : Small Pc
Garlic : 2 Nos
For saute
Jack-fruit seeds : 10 Nos
Fennel seeds : 1/2 Tsp
Oil : 2 Tsp
Green chilly : 1 No
Coriander leaves : Few
Onion : 1 No
Curry leaves : Few
Tomato : 1 No
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Coriander powder : 1 Tsp
Salt : As per taste
Method :
Peel off the seeds and cut into 2 Pcs.
Heat oil in a pan, add chopped sambhar onion, coconut pieces, ginger, garlic and fry well. After the fried ingredients got cool, grind them as fine paste.
Heat oil in same pan, add fennel seeds. Add onion slices, green chilly and curry leaves and fry. Add chopped tomato and fry well.
Add jack-fruit seed pieces and fry.
Add all the masala powders and ground paste and add little water with salt and close with lid.
After the seed is fully cooked and got the correct consistency, transfer to the serving dish and serve hot.

How to prepare Rajma masala (Red kidney beans curry)

Rajma or Red kidney beans curry is one of the popular North Indian curry which is very tasteful. Rajma having a lots of health benefits. While we having this beans, we can get more immunity power because it is having disease-fighting antioxidants. More than that, this kidney beans is rich in Potassium, magnesium, iron  protein and also fiber.It prevents bad cholesterol, the risk of diabetics and reduce the risk of heart diseases. It is rich in Vitamin B6 which helps to prevent  memory loss and hair-fall problems. This healthy beans curry can be have with chapathy, nan, and rice. Let's prepare the tasty rajma curry.

Basic information :
Soaking time : 2 Hrs
Preparation time  : 15 Mins
Cooking time : 20 Mins
Serve for : 4 Persons
Ingredients :

Rajma : 1/4 Kg
oil : 3 Tsp
Sambhar onion : 5 Nos
Garlic : 4 Nos
Ginger : Small pc
Cinnamon : 2 Nos
Cloves : 2 Nos
Chopped onion : 1 Cup
Tomato : 1 No
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Coriander powder : 1 1/2 Tsp
Salt : As per taste
Fennel seeds         :   1 Tsp
Method :
Soak the rajma over night or  2 hrs. Pressure cook the soaked rajma with 3-4 whistles.
Heat oil in a pan, add cinnamon, cloves. Add sambhar onion, chopped ginger and garlic, fry well.
After fried ingredients got cooled, grind well as a paste.
Heat oil in another pan, add fennel seeds. Add onion slices and fry. Add chopped tomatoes and fry well.
Add all the masala powders, ground paste and salt and mix. Allow it to boil till the raw smell goes.
Add boiled rajma .
After getting the correct consistency, transfer to the serving dish and serve hot.
