How to prepare Kuska rice (Biriyani rice or Plain biriyani)

Kuska rice is biriyani flavored rice without any vegetables. When i went for my aunt house, she prepared this rice with non-veg curry. It was very tasty and easy recipe. It is prepared in pressure cooker with ginger garlic paste and coconut milk and i am not adding any masala powders. For spicy, i am adding green chilly as paste with coriander leaves and puthina. It can be served with any veg curries or non-veg curries. I am using jeera rice (Jeeraga samba). We also can use basmathi rice instead. I am serving  this rice with Egg masala. Let's prepare the tasty and easy Kuska rice.
Basic Information :
Preparation time : 15 Mins
Cooking time : 15 Mins
Serve for : 4 Persons
Ingredients :
Jeera rice : 1 Cup
Oil : 2 Tsp
Cinnamon : 3 Pcs
Cardamon : 2 Nos
Bay leaves : 1 No
Cloves : 5 Nos
Onion : 1 No
Tomato : 1 No
Curry leaves : Few
Ginger : Small piece
Garlic : 4 Nos
Sambar onion : 5 Nos
Green chilly : 5 Nos
Coriander leaves : Few
Mint leaves : Few
Coconut : 1/2 No
Salt : As per need
Method :
Make 1 big cups of coconut milk in 1/2 coconut by taking 1st and 2nd time.
Grind green chilly, mint leaves (puthina), coriander leaves as a paste.
Grind ginger, garlic, sambar onion as a paste.
Heat oil in a pressure pan, add cinnamon, bay leaf, cloves and cardamon. Add sliced onion, curry leaves and fry.
Add ginger garlic paste and fry. Add chilly paste and fry well.
Add chopped tomato and fry well.
Add cleaned rice and fry a little. Add coconut milk and water in 1:2 ratio.
Close the pressure pan for 15-20 minutes. After 20 minutes, wait for 5 minutes, stir slightly and serve hot.

How to prepare Gulab jamun

Any festival at your home?, Try to make gulab jamun. It is a very tasty and making also very simple. When i prepared first time, it was cracked and it gone very smooth. After that, my sister-in-law teach me how to prepare gulab jamun without cracking and correct smoothness. I am preparing this with instant gulab jamun mix. Come let's prepare the tasty Gulab jamun.
Basic information :
Preparation time : 15 Mins
Serve for : 6 Persons
Ingredients :
jamun mix : 200 Gm
Sugar : 100 Gm
Ghee or oil : For fry
Cardamon powder : 1 Tsp
Method :
Take 1 bowl, mix the jamun instant mix with water. Add little water, slowly  because, the mix need little water. Make the mix in smooth dough pressing smoothly without any crack and keep it for 10 minutes.
After 10 minutes, make the dough in small balls, without and crack and pressing little tightly with your palm.
Mix sugar in water and boil it till it comes sticky consistency as jeera. Add cardamon powder.
Heat ghee or oil in a kadai, fry the jamun balls till golden brown color comes in low flame.
Add the fried jamun balls in heat jeera till the jamun soak well.
Transfer to the serving dish with or without jeera and serve hot or cool.

How to prepare Soya chunks balls

Soya chunks is also called as soya nuggets is high protein pure vegetarian bean. This can be have all kind of people like young, old as well as  soya chunks is non-problematic for diabetics and heart patients.  This is good for growing children in providing good amount of vitamins, minerals, fiber and protein. Being high fiber helps to weight loss also. Soya chunks is using in vegetarian biriyanies, instead of non-veg. It can be prepared like non-veg style. Basic information :
Preparation time : 20 Mins
Cooking time : 5 Mins
Serve : 4 Persons
Ingredients :

Soya chunks : 200 Gm
Onion : 1 No
Turmeric powder : 1/4 Tsp
Garam masal powder : 1 Tsp
Chilly powder : 1 Tsp
Fried gram dal : 2 Tsp
Rice flour : 2 Tsp
Salt  : As per taste
Oil : For fry
Method :
Soak soya chunks for 30 minutes. Grind the soaked soya.
Grind fried gram dal (pottukadalai) as a powder.
Add chopped onion, and all the ingredients with the ground soya.
Mix well and make lemon sized balls.
Heat oil in a frying pan and shallow fry the balls. After the balls fried deeply, transfer to the serving dish and serve hot with evening tea or side dish.

How to prepare Radish fry

Radish is mostly having water content. Radish is very healthy vegetable. It is rich in Vitamin C which helps to reduce the risk of Cancer and keeps our body cells healthy. Radish is helps to control the blood pressure and it is good for diabetics. Having radish helps to maintain our body's sugar level. If we add radish in our diet, we can beat cold and cough also. Mostly we don't like this vegetable. But preparing like this will be very healthy and tasty. Let's prepare Radish fry.
Basic information :
Preparation time : 5 Mins
Cooking time : 15 Mins
Serve for : 5 Persons
Ingredients :

Radish : 1/2 kg
Sambar onion : 1 Cup
Red chilly : 6 Nos
Tamarind : small round
Mustard : 1 Tsp
Oil : 3 Tsp
Salt : As per taste
Turmeric powder  :  1/4 Tsp
Method :
Peal off the radish and cut into medium pieces.
Grind sambar onion, red chilly, tamarind as a semi paste.
Heat oil in a pan, add mustard. After mustard pops, add chopped radish and fry well with adding turmeric powder and salt, till the raw smell goes.
Add ground paste and little water and allow it to boil.
After boil and fried transfer to the serving dish and serve hot.

How to prepare Tomato curry

Tomato curry is a easy prepare curry and it is very tasty. This curry is combination with Idly, dosa, chapathy and rice. We can make this curry in less time. Ingredients :

Oil:2 Tsp
Cinnamon:3 Nos
Cloves:4 Nos
Cardamon:1 No
Onion:1 No
Tomato:1/2 Kg
Green chilly: 1 No
Ginger Grated:1 Tsp
Coriander leaves:Few
Curry leaves:Few
Salt :As per taste
Turmeric powder:1/4 Tsp
Chilly powder:2 Tsp
Coriander powder:2 Tsp
For grind :
Coconut pieces : 1/2 Cup
Fennal seeds : 1 Tsp
Garlic : 3 Nos
Method :
Grind the grind ingredients as a paste.
Heat oil in a pan, add cinnamon, cloves, cardamon. Add sliced onion, green chilly, ginger, curry leaves and fry well.
Add chopped tomatoes and fry well till the tomato got smashed. Add salt to quick fry.
Add  the masala powders, salt and fry.
Add ground paste and water and stir. Allow it to boil till the raw smell goes.
After the raw smell gone, transfer to the serving dish and serve hot.

How to prepare Soya chunks curry

Soya chunks is a high protein and rich in fiber. We can use soya chunks instead of non vegetarian. This curry is a tasty and the taste will be like non-veg curries. When we are not able to have non-veg, we can prepare soya chunks curry in non vegetarian style and taste. let's prepare the tasty Soya chunks curry. I am taking small size soya.
Basic information :
Preparation time : 10 Mins
Cooking time : 15 Mins
Serve for : 4 Persons
Ingredients :

Soya chunks : 200 Gm
Turmeric powder : 1/4 Tsp
Onion : 1/2 Cup
Chopped ginger : 2 Tsp
Garlic : 5 Nos
Tomato : 1 Nos
Chilly powder : 11/2 Tsp
Coriander powder : 2 Tsp
Garam masala powder : 1/2 Tsp
Curry leaves : Few
Salt : As per taste
Fennel seeds                 :  1 Tsp
Cumin seeds                 :  1 Tsp
Method :
Soak the soya chunks for 30 minutes, and presser cook with adding turmeric powder and salt in 1 whistle.
Heat oil in a pan, add fennel seeds, cumin seeds, chopped onion, ginger, garlic, curry leaves and fry well.
Add chopped tomato and fry well.
Add cooked soya, all the masala powders, salt and fry.
Fry till the raw smell goes and water gets dry.
After well fried, transfer to the serving dish and serve hot.

How to prepare Pearl millet or Bajra porridge (Kambu koozh)

Pearl millet is known as Kambu in Tamil, Gantilu in Telugu, Bajra in Hindi, Sajje in Kannada. It is one of the very healthy millet. It contains full of Vitamins, Minerals and amino acids. Kambu helps to reduce weight loss and it works well in diabetics. Among all millet, Pearl millet (Kambu) contains maximum amount of Iron contents. Using this millet, preparing porridge(kambu koozh) is very healthy and it is cool our body. It is the best in Summer. It goes with vatral, vadaham, pickle. Ingredients :

Kambu : 200 Gm
Butter milk : 1 Cup
Chopped onion : 1 Cup
Salt : As per taste
Method :
Clean the kambu, take out stones and grind as powder.
Add water,and cook the kambu powder well and keep for 4-5 hours or boil in overnight.
Next morning, mix butter milk and salt in porridge.
Add chopped onion and mix well and transfer to the serving dish and serve with pupped or pickle.
