Pani puri / Golgappas - Delhi road side snack

Pani puri is one of the favorite chat item mostly for all the kids. instead of buying outside, if we prepare at home, it will be very healthy and tasty. Making pani puri is very simple and easy. Making this chat gives me a good experience. Having pani puri at home, gives my daughter and my all family members a good experience. Let we can see, how to prepare the most popular chat item in India pani puri or Golgappa.
Basic information :
Preparation time : 20 Mins
Serve for : 4 Persons
Ingredients :
For puri :
Rawa : 1 Cup
Maida : 1 Tsp
Baking powder : 1/2 Tsp
Oil : For fry
Salt : To taste
For pani :
Tamarind paste : 1/2 Cup
Mint leaves : Few
Corinader leaves : Few
Ginger : 1/2 Inch
Garlic : 3 Cloves
Green chilly : 2Nos
For masala
Potato : 4 Nos
Onion : 1 No
Turmeric powder : 1/4 Tsp
Chilly powder : 1/2 Tsp
Salt : To taste
Method :
Making Puri :
Mix all the ingredients for puri well and make a smooth dough with adding little oil. Cover the dough with a muslin cloth and keep it for minimum 30 minutes.
After 30 minutes, knead the dough and make balls. Spread the balls with the help of chapathy roller like puri.  With the spread puri, cut the small size balls or you wanted shapes. I made hearten shapes and round shapes.
Heat oil in a pan, deep fry the puries and keep it aside.
Making Pani :
Make tamarind paste. Grind coriander leaves, mint leaves, ginger, garlic, green chilly well with salt and mix with the tamarind paste and water for making pani for pani puri.
Making Masala :
Cook well the potatoes well, peel off and smash it. Heat oil in a pan, add chopped onion, saute well. Add smashed potato, turmeric powder, chilly powder, salt and mix it well. Add chopped coriander leaves.
Make a hole in puri, stuff the potato masala, dip into the pani and have it and enjoy...

Fish masala

Instead of normal fish curry and fish fry, if we make fish masala like this, everybody will like it. This is very simple and very tasty recipe. For this masala, thorn-less fish is preferable. I made this masala with sheer fish. I cut the fish into small cubes and took center bones also. So that, we can have the fish without any disturbances of bones. I made it with little spicy. We can add spicy as we want. If we prepared without spicy, all the kids will like this and they will eat more. Let us see how to prepare the tasty and simple Fish masala with sheer fish.

Cooking time : 5 Mins
Serve for : 3 persons
Ingredients :
Sheer fish : 1/4 Kg
Oil : 3 Tsp
Fennel seeds : 1/2 Tsp
Onion : 1 No
Ginger garlic paste : 1 Tsp
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Salt  : To taste
Curry leaves : Few
Method :
Wash and cut the sheer fish into cubes. Cook the fish pieces with adding turmeric powder and salt.
Heat oil in a pan, add fennel seeds. Add chopped onion, curry leaves and saute well.
Add ginger garlic paste. Add cooked fish, chilly powder, salt and mix it well.
After the raw smell of chilly powder gone, transfer to the serving platter, and serve hot..

Corn with Capsicum Pulao

Sweet corn pulao is a very tasty Indian recipe which is served as a main item for lunch. We can add with other vegetables also. With baby corn, i made veg pulao. Only with  corn and capsicum (bell pepper) i made this wonderful recipe. This is really very tasty and gave different taste experience. I have given this wonderful corn pulao for my daughter's lunch box. She ate fully and she liked very much. Corn is healthy for kids. All kids will like very much. Let's prepare the tasty rice recipe Corn with capsicum pulao.
Basic information :
Preparation time : 10 Mins
Cooking time : 20 Mins
Serve for : 4 Persons
Ingredients :
Oil or Ghee : 4 Tsp
Onion : 1 No
Green chilly : 2 Nos
Ginger garlic paste : 1 Tsp
Curry leaves : Few
Coriander leaves : Few
Cinnamon : 2 Nos
Cloves : 3 Nos
Star anas : 1 No
Cardamon : 1 No
Basmathy rice : 1 Bowl
Corn : 1/4 Bowl
Capsicum : 1/2 No
Lemon juice : 1 Tsp
Salt : As per taste
Method :
Rinse the basmathy rice and soak for 30 minutes. Heat oil or ghee in a heavy bottom pan, add cinnamon, cloves, cardamon, star anas. Add chopped onion, saute well till it turns transparent. Add ginger garlic paste, green chilly.
Add corn and capsicum.
Add soaked rice ans fry a little. Add lemon juice. Add water in 1:1 1/2 consistency. Close the pan and cook for 10 minutes in medium flame and cook another 10 minutes in low flame.
After the rice cooked well, transfer to the serving dish and garnish with coriander leaves and serve hot..

Sheer fish curry (Andhra style) / Andhra chepala pulusu / Vanjram meen kuzhambu

Fish curry in Andhra style will be more spicy and very tasty. I am preparing this Andhra fish curry with Sheer fish. Sheer fish is not having thorn except the center bone. With sheer fish, fish curry will be very tasty and we will eat extra rice with this curry. For this curry, we are going to add extra oil. So the taste will be double. When we saw also, our mouth will be watering.. Wow!... What a spicy curry...... Come let us prepare the tasty Andhra fish curry with Sheer fish.
Basic information :
Preparation time : 5 Mins
Cooking time : 30 Mins
Serve for : 4 Persons
Ingredients :
Sheer fish : 1/2 Kg
Chopped garlic : 1 Tsp
Chopped ginger : 1/2 Tsp
Onion : 1 No
Tomato puree : In 4 Nos
Tamarind paste : 1/4 Cup
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Coriander powder : 2 Tsp
Green chilly : 2 Nos
Salt : To taste
Curry leaves : Few
Oil : 4 Tsp
Methi seeds : 1/4 Tsp
Mustard seeds : 1/2 Tsp
Cumin seeds : 1 Tsp
Method :
Heat a pan and dry fry methi seeds, mustard seeds, cumin seeds one by one. Should not over fry it. Grind them as powder after getting cool in room temperature.
Heat oil in a pan, add chopped garlic, 1/2 teaspoon of chopped ginger and let it fry in golden brown.
Add chopped onion, curry leaves and saute well till it turns transparent.
Add tomato puree and allow it to cook till the raw smell goes.
Add tamarind paste, all the masala powders and add water and salt. Cook till masala smell gone.
Add washed fish slices and cook for 5-10 minutes.
After the fish cooked well, add 1 teaspoon of ground seeds powder.
After 2 minutes of cooking,  transfer to the serving dish, garnish with curry leaves and serve hot..

Lemon Poha / Lemon aval

We can make different dishes using poha or aval. Sweet as well as spicy. In sweets, we can make Aval payasam, Aval laddu. In spicy version, we can make poha upma or lemon poha. It is a very tasty and simple dish which can be have as a breakfast as well as evening tea time snack. This is very simple preparation. This lemon poha is prepared by my husband for his lovable daughter. This is same as upma and we added lemon juice. So it is called lemon poha. Let us see how to prepare the tasty Lemon poha.
Basic information :
preparation time : 10 Mins
Serve for : 3 Persons
Ingredients :
Poha or Aval : 1 Bowl
Oil : 2 Tsp
Mustard seeds : 1 Tsp
peanuts : 1 Tsp
Onion : 1 No
Chopped ginger : 1 Tsp
Curry leaves : Few
Turmeric powder : 1/4 Tsp
Lemon juice : 2 Tsp
Salt : To taste
Red chilly : 2 Nos
Method :
Rinse the aval and soak for 2 minutes. Do not soak over time. Heat oil in a pan, add mustard seeds, peanuts. Add chopped onion, chopped ginger, curry leaves, red chilly and saute well.
Add soaked aval, turmeric powder, salt. Add lemon juice and mix well.
After mixing well, transfer to the serving dish, garnish with chopped coriander leaves and serve hot.

Chicken pepper fry

Chicken fry with full of pepper flavor... Wow! Great taste and good for health also. Chicken pepper fry is a very tasty recipe. In this fry, i am not adding any other masala. Only pepper powder gives a good taste to the chicken. Pepper is good for our health. When we are adding pepper in the chicken fry, it gives more tasty and helps for digestion. This wonderful recipe goes well with chapathy, poori, and rasam rice. let us see, how to prepare the tasty yummy "Pepper chicken fry".

Cooking time : 20 Mins
Serve for : 3 Persons
Ingredients :
For marination :
Chicken : 1/2 Kg
Lemon juice : 1 Tsp
Salt : 1 Tsp
For grind :
Small onion : 1/2 Cup
Black pepper : 1 Tsp
Ginger : 2 Tsp
Garlic : 5 Cloves
For fry :
Oil : 2 Tsp
Curry leaves : Few
pepper powder : 3 Tsp
Salt : To taste
Cumin seeds        :  1 Tsp
Method :
Wash the chicken well and marinate with lime juice and salt.
Grind the ingredients.
Heat oil in a pan, add cumin seeds. Add curry leaves and washed chicken, saute well.
Add ground masala. Add little water and close the pan with lid and allow it to cook well.
When the chicken is almost done cooking, add pepper powder according to your spicy.
Cook the chicken well till the oil comes out and transfer to the serving dish and serve hot..

Chilly Idly

Normal Idly with chutney or sambhar... Some times we feel boring right!.. Today i tried chilly idly using idly. It is very good evening snack with tea. We don't want any side dish for this. All the kids also like very much and they will eat more. This is tasty, crispy recipe and easy to prepare. I am preparing this fry with home made masala powder. Without any color, preservatives, it will be healthy also. Instead of buying something outside for kids, we can make different  snack item using idly like this. Kids also will like very much. We can make Idly Manchurian also.
Basic information :
Preparation time : 10 Mins
Serve for : 3 Persons
Ingredients :
Idly batter : 1 Bowl
Corn flour : 4 Tsp
Rice flour : 1 Tsp
Chilly powder : 1 Tsp
Cumin powder : 1/4 Tsp
Garam masala : 1/4 Tsp
Ginger garlic paste : 1/4 Tsp
Salt : To taste
Oil : For fry
Method :
Make idly with idly batter. Cut the idlies in small pieces.
Mix all the ingredients well and dip the idly pieces. No need to soak.
Heat oil in a frying pan, fry the masala dipped idlies well.
After fried well, transfer to the serving platter and serve hot..

Chana dal curry for chapathy / poori

Chana dal curry is a very simple and tasty curry which goes well with chapathy and poori. Being lot of carbohydrate in chana dal, i am adding ginger, garlic for digestion. Most of the restaurants, this curry will be available in the name of Dal fry. It is very famous north Indian recipe. 
Health benefits :
Chana dal or Bengal gram dal is very useful to diet for weight loss. It is having Vitamins, minerals like, copper, magnesium etc. We can strongly  recommend for diabetic patents. Chana dal is helps to reduce the cholesterol. It is low in fat and rich in fiber, calcium and protein.
Basic information :
Preparation time : 5 Mins
Cooking time : 20 Mins
Serve for : 4 Persons
Ingredients :
Chana dal : 100 Gm
Oil : 2 Tsp
Fennel seeds : 1 Tsp
Onion : 1 No
Ginger chopped : 1 Tsp
Garlic chopped : 2 Tsp
Tomato : 1 No
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Coriander powder : 1 Tsp
Curry leaves : Few
Coriander leaves : To garnish
Salt : To taste
Method :
Rinse the chana dal and pressure cook by leaving 3-4 whistles with adding salt. Heat oil in a pan, add fennel seeds. Add nicely chopped onion and saute well. Add chopped ginger, garlic, curry leaves.
Add chopped tomatoes and saute well. Add cooked chana dal. We can smash the dal brfore adding.
Add masala powders , little water and cook till the raw smell goes.
After the curry became thick, transfer to the serving dish and garnish with coriander leaves and serve hot with chapathy and poori.
