Sweet corn Tikki / Vada

Tikki is one the very good tea time snack in India. This time, i made tikki with using Sweet corn along with potato. It came very well and it tastes very nice. While eating this, my brother-in-law asked, is this non-veg. We cannot identify the main ingredient, that is sweet corn is used in this. We can feel the different taste. This is prepared with sweet corn, potato, and some interesting ingredients. It is very good tea time snack. We can also have as a side dish for our lunch. We can make this as vada. I am posting that also in this. Let us see, how to prepare the tasty Sweet corn tikki.
Basic information :
Preparation time : 10 Mins
Cooking time : 5 Mins
Serve for : 3 Persons
Ingredients :
Sweet corn : 1 No
Potato : 2 Nos
onion : 1 No
Grated ginger : 1 Tsp
Curry leaves : Few
Coriander leaves : Few
Turmeric powder : 1/4 Tsp
Garam masala : 1/4 Tsp
Chilly powder : 1/2 Tsp
Salt : To taste
Oil : For fry
Corn flour           :  1 Tsp
Method :
Take out the sweet corn kennels and boil it. After boiling, crush the boiled sweet corn after getting cool.
Boil the potatoes, peel off  smash it and add it into the crushed corn with all other ingredients.
Mix it well with adding salt.
 Heat oil in a pan, make a shape of corn, potato mixer and deep fry as vada. (This is one type.)
The another type is..... Make corn mixer in tikki or cutlet shape and spread it in the maida flour.
Heat little oil in the dosa thava and make shallow fry the tikkies.
After fried both the sides, transfer to the serving plate and serve hot with sauce or we can have as it is...

Egg Parota (Homemade) Muttai parota

Egg Parota is the famous in Madurai. Whenever we are going to Madurai, we will buy egg parota and have. It is very tasty and we all love to eat this. This time, i prepared this item at home. It came very well. First, i made Kerala parota. Then, i prepared egg parota with making pieces of Kerala parota. This is very simple and tasty recipe that everyone can make it. Let us see how to prepare the egg parota.
Basic information :
Preparation time : 10 Mins
Cooking time : 5 Mins
Serve for : 2 Persons
Ingredients :
Parota : 2 Nos
Egg : 2 Nos
Onion : 1 Big No
Tomato : 1 No
Ginger garlic paste : 1 Tsp
Garam masala : 1/2 Tsp
Chilly powder : 1/2 Tsp
Turmeric powder : 1/4 Tsp
Salt : To taste
Oil : 3 Tsp
Fennel seeds : 1/2 Tsp
Coriander leaves : Few
Curry leaves : Few
Method :
Roll the Kerala parota and cut into small pieces.
Heat oil in a pan, add fennel seeds. Add Onion slices, curry leaves and saute well. Add ginger garlic paste. Add chopped tomato and saute till the tomato got smashed.
Add eggs and fry well.
Add parota pieces and mix it well. Add turmeric powder, chilly powder, garam masala powder and salt.
Mix it well and add chopped coriander leaves.
After mixed well. transfer to the serving plate and serve hot....

Paal paniyaram / Milk paddu

Paal paniyaram is the famous traditional sweet dish which is prepared mostly in Chettinad. It is very tasty and delicious sweet dish. This paal paniyaram is made with rice and urad dal batter with coconut milk. I am adding jaggery for sweet. We can add sugar instead of jaggery. If we add jaggery, the taste will be excellent. I am not adding badam or cashews to decorate this dish. If we want, we can add. For making paniyarams, the batter should be thick like idly or methu vada batte consistency. We can make it with our hand. I am using coconut shell to make paniyaram. Because of using coconut shells, the paniyaram will be equal shapes and it will be looking nice...
Basic information :
Preparation time : 20 Mins
Cooking time : 6 Mins
Serve for : 4 Persons
Ingredients :
Raw rice : 1 Cup
Urad dal : 1 Cup
Coconut : 1/2 No
Jaggery : 100 Gm
Cardamom powder : 1/2 Tsp
oil : To fry
Salt : 1 Tsp
Method :
Grate the coconut, grind and take coconut milk. In coconut milk, add cardamom powder and jaggery and mix it well.
Take equal quantity of rice and dal, rinse and soak for minimum 20 minutes.
After 20-30 minutes, grind it with adding less water as idly batter.
Heat oil in pan, make paniyaram, using hand or coconut shell.  Fry the paniyaram in low flame. It comes fluffy and soft balls.
After the paniyarams fried, take out from the oil and add it in the water. We can boil the water.
Take out the fried and soaked paniyaram from water and add it in the sweet coconut milk.
Transfer to the serving dish and serve it, have it and cheer up with the wonderful sweet dish paal paniyaram..

Shahi tukda / Bread basandhi

I love to prepare sweet dishes as my husband loves a lot. This time, i tried shahi tukda made with fried bread pieces and sweet milk. It is one the traditional dish. Mostly, all of us will add saffron, dry fruits to decorate this dish. But being a traditional  dish, i am not using saffron and dry fruits. I am using only cardamom powder. It is very delicious sweet dish which will be like all the people. The preparation time also very less and very easy to prepare. Try this wonderful and delicious sweet recipe and enjoy your day..
Basic information :
Preparation time : 15 Mins
Serve for : 3 Persons
Ingredients :
Bread : 4 Pieces
Milk : 1/2 Lr
Sugar : 100 Gm
Cardamom : 4 Nos
Oil : For fry
Method :
Cut the edges of the bread slices and cut it in triangle shape. I made small triangles.
Heat oil in a pan, deep fry the bread slices till golden brown comes.
Boil milk in a pan. We need to boil the milk till its thickening. Stir vocationally, because it will burnt. Add 4 teaspoon of sugar and add cardamom powder. It is called rabadi. The rabadi must be thick.
For sugar syrup, heat 1/2 a glass of water and add 2 teaspoon of sugar and boil it till it comes string consistency.
Make arrangement of fried bread slices and add  sugar syrup.
Over the sugar syrup add thick rabadi and serve it.
Delicious shahi tukda sweet is ready to taste.. Wow!... What a taste.....

Kappa curry

Kappa is one of the famous and favorite in Kerala. In Kerala, they used to have this curry as breakfast. This is very healthy and it will be heavy food. we can have this as side dish for chapathy or rice. Very tasty and healthy full meal for growing children as well as old people. We can just bake the Kappa and have with fish curry. But this curry is easy to prepare and all people can have this. If we purchase fresh kappa, need not to cook long time. Within 2 whistles, it will cook. Otherwise, we need to cook by leaving 4-5 whistles. Let us see how to prepare the tasty and healthy Kappa curry.
Basic information :
Preparation time : 5 Mins
Cooking time : 15 Mins
Serve for : 4 Persons
Ingredients :
Kappa : 1/2 Kg
For grind :
Small onion : 1/2 Cup
Red chilly : 4 Nos
For tempering :
Coconut oil : 2 Tsp
Mustard seeds : 1/4 Tsp
Curry leaves : Few
Turmeric powder:  1/4 Tsp
Method :
Peel off the Kappa, rinse well the mud and cut in medium pieces. Pressure cook the kappa pieces with adding salt and little water. 
Crush sambar onion and red chilly.
Heat coconut oil in a pan, add tempering ingredients. Add cooked kappa and mix well. If it need salt, we can add. 
After mixed well, transfer to the serving platter and serve hot... as starter or breakfast..

Curd Pakoda / Dhahi pakoda

Pakoda is the famous tea time snack in both South India as well as North side. Dhahi or curd pakoda is the very famous Panjabi snack. We used to have onion pakoda with tea. Pakoda with curd will be very easy and it gives different taste. When i prepare this, my mother-in-law and my daughter likes very much. It prepared with onion pakoda with curd mixed with some interesting ingredients. Let us see how to prepare the easy and tasty Curd / Dhahi pakoda.
Basic information :
Preparation time : 10 Mins
Cooking time : 10 Mins
Serve for : 3 Persons
Ingredients :
For pakoda :
Onion : 2 Nos
Curry leaves : Few
Basan : 3 Tsp
Rice flour : 1 Tsp
Chilly powder : 1/2 Tsp
Baking soda : 1 Pinch
Salt : To taste
Oil : For fry
For curd :
Curd : 1/2 Cup
Ginger garlic paste : 1/2 Tsp
Cumin powder : 1/4 Tsp
Salt : To taste
For tempering :
Mustard seeds : 1/4 Tsp
Red chilly : 3 Nos
Method :
Cut onion as slices. Mix all the pakoda ingredients well with curry leaves.
Heat oil in a pan, deep fry the marinated onions well.
Mix curd with ginger garlic paste, cumin powder and salt.
Mix the fried onion pakodas in the masala curd.
Heat 1 teaspoon of oil, add mustard seeds. After the seeds pops, add red chilly. Add the tempering in the curd pakoda.

Kerala Chicken Kabab

Chicken kabab is the favorite dish for my daughter. This chicken kabab is little different from normal chicken fry. This is very famous in Kerala. I am using home made masala powder for this kabab fry. It is very tasty and easy to prepare. In one weekend, i prepared this kabab as starter. For other weekend, i prepared as a side dish for rasam rice. It is very tasty for both combinations. We can have as evening snack also.  Let us prepare the tasty Kerala chicken kabab.
Basic information :
Preparation time : 5 Mins
Soaking time : 20 Mins
Cooking time : 5 Mins
Serve for : 3 Persons
Ingredients :
Chicken : 1/2 Kg
Turmeic powder : 1/4 Tsp
Chilly powder : 1/2 Tsp
Garam masala : 1/2 Tsp
Ginger gaslic paste : 1/2 Tsp
Egg : 1 No
Corn flour : 1 Tsp
Rice flour : 1 Tsp
Basan : 1 Tsp
Salt : To taste
Oil : For fry
Onion : To garnish
Method :
Wash the chicken pieces well and marinate with Salt, Turmeric powder, chilly powder, ginger garlic paste, garam masala (roasted fry with cardamom, cloves, cinnamon) , 1 egg and mix well with corn flour, rice flour, basan. Soak the marinated chicken for 20-30 minutes.
Heat oil n a pan, deep fry the marinated chicken well.
After the chicken fried well, transfer to the serving plate and garnish with onion rings..
