Egg less Chocolate cake \ Vegetarian sponge cake recipe \ White chocolate cake without egg

Today, I tried soft and sponge cake Without egg. It is a pure vegetarian cake recipe. I have tried in maida in first time. Then I tried in wheat flour. The two methods are same, but I changed only the flour. In two methods also the cakes are very soft and delicious. It is very easy to prepare. No need to mix in long time. We have to mix the batter with correct consistency, texture and without any lumps.
 
In this cake I added brown sugar. We can also add normal sugar. I used white chocolate in this recipe. It gives the cake nice taste. We can also use dark chocolate or condensed milk. I am not using any pastries in this cake. This is simple, basic sponge cake that everyone likes it very much. Let us see how to prepare the tasty egg less sponge cake at home.
Basic information :
Preparation time : 10 Mins
Mixing time : 15 Mins
Baking time : 40 Mins
Ingredients :
Wheat flour : 2 Cups
Baking powder : 1 Tsp
Brown sugar : 1/2 Cup
Salt : 1 Pinch
Milk : 1/2 Cup
White chocolate : 100 Grm
Butter : 25 Grm
Vanilla essence : 1 Tsp
Method :
In a bowl boil water. In another bowl, take milk and white chocolate. Keep the milk bowl over the water bowl to double boil it. Keep till the chocolate melts well.
Add butter in chocolate mix. Add vanilla essence and mix it.
In a large mixing bowl, take 2 cups of  maida or whole wheat flour, add baking powder and salt. Add brown sugar in the flour.
Add the wet ingredients in flour mix. Mix it well without any lumps as a thick batter.
Grease butter and dust flour in baking cake bowl or we can take cup cake cups. Pour the cake batter and add choco chips over it. We can add both white and dark choco chips. I'm presenting here both maida batter and whole wheat batter. Do not pour the batter in full bowl. The cake will be fluffy.
Bake it in preheated oven in 200 degree Celsius for about 40 minutes.
After baking, check whether the cake is cooked by inserting tooth pick. It should come clean without sticking. 
Wow!.. Delicious.. The soft sponge chocolate cake is ready to serve.

Bun recipe \ Perfect soft Bun

Bakery style soft fluffy buns tried at home. Unbelievable !... It came very well and we enjoyed with it's softness and taste.
I used dried yeast and eggs for the dough. The yeast should be foamed well. Otherwise, the bun dough will not become double in size. If the yeast is not foamed, we have to check the expiry date of the yeast. I am very glad to share this wonderful bakery style bun recipe to you all. Basic information :
Preparation time : 20 Mins
Baking time : 25 Mins
Pieces : 5-6 Nos
Ingredients :
Maida : 2 Cups
Yeast : 1 Tsp
Sugar : 2 Tsp
Butter : 50 Grm
Egg : 2 No
Salt : 1 Pinch
Sesame seeds : 2 Pinch
Method :
In a small bowl, take 1/4 cup of water, add sugar and active dried yeast. Mix well and keep it aside for foaming for about 5-7 minutes without disturbing.
Melt butter and beat egg in the same bowl.
In a large mixing bowl, take 2 cups of all purpose flour, add 1 teaspoon of sugar and a pinch of salt. Keep ready with the ingredients to mix the soft dough.
Mix all the wet ingredients into dry ingredients. Kneed well with adding oil with your palm for about 4-5 minutes. Close the dough in oil greased bowl. Leave for foaming for 1 hour.
After one hour, the dough will be double in size.
Again kneed the dough and divide equal parts. Roll the dough, keep it in oil greased butter paper in baking tray the slightly flatten  bun dough. keep it for 5 minutes.
Beat the egg, make egg wash in the roll. Sprinkle some sesame seeds.
Bake it in preheated ovan in 200 degree Celsius for 25 minutes.
Ya.. Yummy... So soft.. Tasty fluffy bakery style hot buns are ready to serve with hot coffee or tea.

Tomato pickle / Tomato chutney / Tomato thokku

Tomato pickle, Tomato chutney, Tomato thokku ..It can be any name, But it is yummy recipe prepared with ripe red tomatoes. When the time of getting less rate for tomatoes, we will buy more tomatoes. On that time, we will prepare more dishes using tomato like tomato rice, tomato thokku, tomato biriyani, tomato halwa, tomato chutney,..In this dish line, we can prepare tomato pickle. It is very nice recipe and it can be serve with rice or we can use as chutney for idly, dosa. We can preserve this yummy pickle for 1 month in air tight container.

I used only tomatoes in this pickle. I not adding garlic or onions in this pickle. We can have in pooja time, when we are not having onions and garlic. I used gingaly oil (sesame oil) for this. This oil is good for our health like tomatoes.

Health benefits :
Tomatoes are having a lot of Vitamins and Minerals in it. It reduce the risk of heart deceases. It regulates digestive system and get relief from constipation. Also tomatoes helps in skin care, hair care and it strengthen our bones.

Cooking time  : 20 Mins
Preserve for : 1 Month
Ingredients :
Tomato : 1 Kg
Tamarind : small ball
Gingali oil : 4 Tsp
Mustard seeds : 1/2 Tsp
Curry leaves : 10 Nos
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Methy powder : 1/2 Tsp
Asafoetida : 3/4 Tsp
Salt : To taste
Method :
Wash tomatoes and grind with tamarind to make puree. Heat oil in a pan, add mustard seeds.

After the seed pops, add curry leaves.

Add ground tomato puree and mix well.

Add turmeric powder, chilly powder, salt and mix it well. Close the pan with a lid.

When oil comes out and raw smell goes, add dry methy powder.

Add asafoetida (Hing) powder. Allow it cook for 5 minutes and switch off the flame.

Yummy pickle is ready to serve. We can preserve in air tight container.

Raw banana finger fry \ Raw banana fries

Raw banana is one of my favorite vegetable. I tried different dishes using raw banana. Raw banana koftha balls, raw banana fry, raw banana puttu.. Adding to these dishes, today I tried finger fries using raw banana. It was so amazing and my hubby said, instead of making fish fry, we can make this raw banana fries. It is so nice.
I made this fry after blanch the raw banana pieces with turmeric powder and salt mixed hot water. So that we will not get gastric problem. I cut this vegetable in finger shape. Marinate with some interesting ingredients, soak for 20 -25 minutes and then we have to deep fry it. It is so simple and easy preparation that everyone likes it. Serve for : 4 Persons
Ingredients :
Raw banana  : 2 Nos
Corn flour : 2 Tsp
Rice flour : 1 Tsp
Besan : 1 Tsp
Turmeric powder : 1/4 Tsp
Cumin powder : 1/2 Tsp
Fennel powder : 1/2 Tsp
Garam masala : 1/2 Tsp
Chilly powder : 1/2 Tsp
Pepper powder : 1/4 Tsp
Ginger garlic paste : 1/2 Tsp
Salt : As needed
Method :
Peel off the raw banana, cut into finger size pieces. Take one bowl of water, boil it, put the cut banana pieces in boiling water adding turmeric powder and salt for 3 minutes. After 3 minutes, drain the hot water.
In a bowl, take corn flour, rice flour, besan (gram flour or chickpea flour ), cumin powder, fennel powder, garam masala powder, chilly powder, pepper powder, ginger garlic paste, salt.
Mix all the ingredients and marinate with drained banana. Soak for 20-25 minutes.
Heat oil in a frying pan, deep fry the marinated banana fingers in medium flame.
Hmmm.. It is ready to serve hot.. We can have as snacks or side dish for sambar rice.

Mushroom pepper masala / Mushroom gravy

Mushroom is one of my favorite food item. I prepare many dishes using mushroom. It can be prepared as dry and gravy type. Today i tried mushroom with pepper masala. I already done mushroom pepper dry fry. But when we prepare as gravy type, we can have as side dish for North Indian tiffins like chappathy, roti, naan, and South Indian tiffin items like idly, dosa.It is very tasty and very easy to prepare. For preparing this gravy, we need to saute some ingredients to grind. We have to add pepper in the final stage only. Because, overcook the pepper cause bitterness to the gravy. I made this gravy with button mushrooms. It has a lot of health benefits.

Button mushrooms is very healthy and every one can take because, it is low in calories. I t will help to improve our immune system. Ingredients :
Mushroom : 1 Pack
Turmeric powder : 1/4 Tsp
Salt : To taste
Oil : 2 Tsp
Pepper powder : 2 Tsp
Curry leaves : 10 Nos
For grind :
Sambar onion : 100 Grm
Red chilly : 1 No
Chopped ginger : 1 Tsp
Garlic : 5 Pcs
Cumin seeds : 1 Tsp
Fennel seeds : 1 Tsp
Method :
Clean mushroom add in the hot water for blanch.

After 3 minutes, drain the hot water and bring it in cold running water for cool down. This will make mushroom more softer and it will cook very fast.
Heat oil in a pan, add cumin seeds, fennel seeds. After seeds pop, add chopped sambar onion, 1 red chilly, chopped ginger, garlic and saute till onion turn golden brown.
After getting cool, grind the onion mix nicely.
Heat oil in another pan, add curry leaves, washed mushroom and stir.

Add ground onion paste, turmeric powder, salt and little water. No need to add more water, as mushroom has a lot of water content itself. Close the pan with a lid and wait for mushroom cooked.
After mushroom cooked and raw smell goes, add pepper powder and stir.
Mushroom pepper masala is ready to serve hot with your favorite tiffin items.
