Stuffed Paneer pizza

Pizza is one the favorite food for all, especially for kids. Today I tried Pizza with some interesting stuffing. This pizza is my daughter's the most favorite recipe. For making this, the dough should rest for minimum 1 hour. I Kneed the dough night itself. Morning i prepare the stuffing and bake the pizza and pack for my daughter's lunch box. She will complete the lunch and I will be very happy.
This is purely vegetarian recipe and homemade. For brushing in top of the pizza, usually we will use egg. Being vegetarian recipe,I have used butter for brushing. If we are using egg wash, the top will be brownish. Because of using butter wash the top will not be that much brownish. This is very nice and interesting recipe. Come let us prepare the tasty wonderful stuffed pizza. 
Basic information :
Preparation time : 15 Mins
Resting time : 1 Hr
Cooking time : 25 Mins
Ingredients :
Maida : 1 Cup
Dry East : 2 Tsp
Water : 1/2 Cup
Sugar : 1 Tsp
Salt : 1 Tsp
Oil : 2 Tsp
Butter : Brushing
For Stuffing :
Oil : 1 Tsp
Cumin seeds : 1 Tsp
Chopped onion : 1/2 Cup
Paneer Cubes : 1 Cup
Pepper powder : 1/2 Tsp
Salt : As needed
Coriander leaves : 1/4 Cup
Method :
Take 1 small bowl of warm water, add 2 table spoon of dried east, 1 teaspoon of sugar. mix it well and leave for 5 minutes for activate east. In a large bowl, take 1 cup of maida or all purpose flour, 1 teaspoon of salt.
Mix the east mix with the flour and make soft dough. Kneed the dough about 5 to 10 minutes to make more soft. add 2 teaspoon of oil and kneed.
Put the dough with oil coating and cover the bowl with muslin cloth. leave the dough for 1 hour for raising double in size.
Cut the paneer into small cubes and add it to the warm water for softening. Heat oil in a pan, add cumin seeds. After the seeds broken, add chopped onion, saute till turn transparent. Add Paneer cubes and saute with adding salt and pepper powder for 2 minutes and switch off the flame. Add chopped coriander leaves. The stuffing is ready.
After 1 hour, take the dough and divide 6 equal parts. cover the divided dough with cloth.
Take one dough ball  and press it as roti spreading in oval shape.
Spread mayonnaise in the center.
Add stuffing.
Grate cheese in the top.
Cut side as stripes.
Make maida paste using 1 teaspoon of maida and little water. Brush the maida paste in all the sides. Close the stuffing with the stripes one by one alternatively.
Grease oil in butter paper and put it in baking tray. Place the stuffed pizzas in the tray and brush butter. Sprinkle some sesame seeds.
Make all the divided parts same as this.
Bake it in preheated oven in 180 degree celsius for 20 to 25minutes.

Elephant Yam & Raw banana puttu \ Yam & Raw Banana Bhurji

Usually we prepare puttu in Raw banana. This time, I combined raw banana and elephant yam and made puttu as known as bhurji or Shredded raw banana and yam. With raw banana, i will prepare raw banana fry and koftha balls. Using elephant yam, i tried fried yam and i prepared in Kerala style fry called Elissery . This dish is liked very much by all of my family members.
For making this puttu, we need to boil yam and raw banana. As raw banana will cook quickly, 2-3 minutes of boiling is enough. But some of the yam would take more time to cook. If we take fresh yam, it will cook within 5 minutes. It is easy to prepare. We can make with one vegetable itself without combining.  Let us see how to prepare this interesting dish.

Ingredients :
Raw banana : 1 No
Yam : 1/4 Kg
Turmeric powder : 1/4 Tsp
Oil : 2 Tsp
Mustard seeds : 1 Tsp
Sambar onion : 1 Cup
Curry leaves : 5 Nos
Grated coconut : 1/2 Cup
Salt : As Needed
For grind :
Garlic : 6 Pcs
Red chilly : 7 Nos
Fennel seeds : 1 Tsp
Method :
Grind garlic, red chilly, fennel seeds as course powder type without adding water.
Peel off the yam, cut into medium pieces, Put it in water adding with turmeric powder and pinch of salt and boil. Cut 3 pieces in raw banana and add it into the yam boiling. After 2-3 minutes of boiling, take out the raw banana. After 5-6 minutes take out the yam from the boiling water.
Peel off the raw banana and grate. Grate yam also.
Add the ground masala.
Mix it with grated vegetables softly without pressing it.
Heat 2 teaspoon of oil, add mustard seeds. After the seeds pop, add chopped onion, curry leaves and saute till onion turn transparent.
Add grated yam and banana and stir softly. Add salt to taste.
Add grated coconut and mix it with the puttu.

Chilli Paneer cheese grilled sandwich

All mothers definitely confuse for one thing. What can prepare for snacks box for their kids. Hear is the simple and healthy recipe for snacks box.

Today I prepare a delicious sandwich with cheese and chilly Paneer. Normally I prefer wheat bread for making sandwiches. So that it will be very healthy and tasty. Every kid would like cheese. So all the kids will surely love it and all mothers would be very happy. Come let us make a wonderful chilly Paneer cheese sandwich.

Basic information:
Preparation time : 15 Mins
Cooking time : 3 Mins
Serve for : 2 Persons
Ingredients:
For green chutney :
Mint leaves : 1/4 Cup
Coriander leaves : 1/4 Cup
Ginger : 1 Tsp
Garlic : 4 Pcs
Green chilly : 2 Nos
Salt : As needed
For Sandwich :
Bread : 4 Slices
Cheese : 2 Cubes
Paneer : 50 Grm
Turmeric powder : 1 Pinch
Chilly powder : 1 Pinch
Salt : 1 Pinch
Chat masala : 1 Pinch
Capsicum : 2 Round
Onion : 2 Round
Oil or Butter          : For Brushing
Method:
For green chutney grind mint leaves, coriander leaves, garlic, ginger nicely as paste with adding salt.
Cut the Paneer into small cubes and add it in the warm water for 2 minutes for soften. After 2 minutes, drain the water and add turmeric powder, chilly powder and mix it well.
Place 4 bread slices in a plate.
Spread green chutney nicely.
Add greated cheese.
Add chilly mixed Paneer in only two slices. Add round capsicum, onion.
Sprinkle 1 pinch of chat masala powder, close the bread and cut it into triangle shape.
Brush oil or butter on the top and grill. We can also toast the sandwich instead of grill.
Wow! ... yummy... sandwich is ready for box and eat.

Veg lollypop

Lollypop, drumstick these names are normally we are hearing for non-veg only. For a change, I tried in vegetables. This is a healthy vegetarian lollypop. In this wonderful snack, I used all the vegetables like beans, carrots, capsicum, potatos and masala powders. We can use cabbage, green peas also.
It is a very good snack item which can be serve as tea time snacks or side dish for sambar rice, rasam rice. I usually prepare this snack for my daughter after school in evening time. She liked very much and it consists all veggies and it is very healthy and tasty.

Carrots : Rich in Vitamin A, Good for eye sight.
Beans : Rich in Vitamin A, Good for kidney.
Capsicum : Rich in Carbohydrate. 
Potato : Rich in protein.
Paneer : Rich in Calcium.
Basic information :

Ingredients :
Potato : 3 Nos
Paneer : 50 Grms
Beans : 100 Grms
Carrots : 50 Grms
Capsicum : 1/2 No
Coriander leaves : 2 Tsp
Mint leaves : 1 Tsp
Curry leaves : 10 Nos
Turmeric powder : 1/4 Tsp
Cumin powder : 1/2 Tsp
Fennel powder : 1/2 Tsp
Garam masala  : 1/4 Tsp
Chilly powder : 1/2 Tsp
Salt  : As needed
Corn flour : 1 Tsp
Rice flour : 1/2 Tsp
Oil : For fry
Onion : 1 No
Garlic : 6 Pcs
Ice sticks : 10 Nos
Musturd seeds : 1/2 Tsp
Method :
Boil potatoes, peel off and smash it. Smash Paneer with smashed potato.
Fine chop all the vegetables.
Heat oil in a pan, add mustard seeds. After the seeds pop, add chopped onion, garlic, curry leaves and saute well till onion turns transparent.
Add chopped vegetables and saute till the vegetables become half cooked.
Mix the half cooked vegetables in potato Paneer mix. Add all the masala powders, chopped mint leaves, coriander leaves, salt and mix together nicely.
Add corn flour, rice flour and mix well. Make lemon size balls and stick with ice cream sticks.
Add little water with corn flour and mix. Dip the lollypop in that paste.
Dip in bread crumbs.
Heat oil in a frying pan fry the lollypops  in low flame. Fry till it comes golden brown.
In another pan, heat 2 teaspoon of oil, add chopped garlic. Add tomato sauce, soya sauce little water and allow it to boil for 1 minute. Switch off flame. Dip the fried lollypop in the sauce mixer.
Ya.... it's ready to serve with tomato ketchup or green chutney. Try this delicious snack and please feel free to post your comments.

Tomato thokku

When I'm thinking, what side dish can accompany with all tiffin items like idly, does, chappathy, poori and also rice. Today I made tomato thokku. It is very simple and amazing, it goes with all the tiffin items. It is very easy to prepare and nice recipe.
For making this dish, I used fried gram dhal for grinding with coconut. It gives thickness to the gravy and we can get more gravy. If guests come to my house, I usually I will prepare this tomato thokku as gravy for vegetarians and chettinadu chicken curry for non-veg.

Basic information :

Cooking time : 15 Mins
Serve for : 4 Persons
Ingredients:
For grind:
Coconut pieces:1/2 Cup
Fried gram dhal:2 Tsp
Cinnamon:2 Nos
Cloves:3 Nos
Garlic:6 Pcs
For curry:
Oil:2 Tsp
Fennel seeds:2 Tsp
Onion:1 No
Tomato:1/2 Kg
Curry leaves:10 Nos
Coriander leaves:2 Tsp
Turmeric powder:1/4 Tsp
Chilly powder:1 Tsp
Coriander powder:2 Tsp
Salt:As needed
Method:
Grind coconut, fried gram dhal, cloves, cinnamon as fine paste.
Grind washed tomatoes as puree.
Heat Oil in a pan add fennel seeds. After the seeds pop, add chopped onion, curry leaves and saute till onion becomes transparent.
Add tomato puree and well cook it.
After the tomato puree cooked well, add masala powders, salt and ground coconut paste.
Add needed water and allow it to boil for 5-10 minutes.
After the raw smell goes, switch off the flame and garnish with coriander leaves.
