How to prepare Chapathi egg roll for Brunch

Egg roll in normal south Indian bread called chapathi with vegetable stuffing is a very good brunch item for school going children.  My daughter is a big fan of rolls. When i prepared for my daughter, she said, it's yummy, wonderful, delicious... and she hugged and kissed me. I have prepared and packed this in her brunch box. In many schools, egg is not allowed. But we make this roll without egg also, with stuffing. It is very healthy for growing children and they will definitely like this roll. Come let us prepare the healthy and tasty Egg roll with chapathi.   
Basic information :

Cooking time : 5 Mins
Serve for : 1 person
Ingredients :
For dough :
Wheat flour : 1 Cup
Salt : 1/2 Tsp
Oil : 1 Tsp
For stuffing :
Carrot : 1/2 No
Cucumber : 1/4 Pc
Onion : 1/2 No
Salt : 1 Tsp
Egg Beat :
Egg : 1 No
Salt : 1/4 Tps
Pepper powder : 1/4 Tps
Method :
Make soft dough using wheat flour, salt and oil. Keep it aside.
Heat 1/4 teaspoon of oil, add grated carrot, cucumber and chopped onions. saute well till it gets dry and let it cool for some time.
Beat ad egg with adding salt and pepper powder.
Kneed the dough and make a lemon size ball. Spread the ball using chapathi roller as chapathi.
Heat a thava, add little oil, roast the chapathi slightly and keep it aside.
Pour 1/4 teaspoon of oil and add the egg beaten.
Keep the roasted chapathi over the egg and spread the egg.
After the egg cooked transfer to the plate and add the stuffing in it.
Slowly roll the chapathi.
Pack the rolled chapathi by cutting two pieces in your child's snacks box.

How to prepare Mushroom mangolia

Mushroom mangolia is thick gravy with mushrooms and potato. This gravy is prepared with button mushrooms. Button mushrooms are very healthy, because it is having low calories. Adding this mushrooms in our diet, it helps to increase our immunity power and reduce the risk of breast cancer. So i am trying to make different items using button mushroom. This recipe is very tasteful and i thought to give a different name. The result is Mushroom mangolia. I am making this recipe in south Indian style. This gravy goes with chapathy, poori, and also with rice. I am very glade to share this gravy recipe to all of you and let us prepare "Mushroom mangolia".
Basic information :

Serve for : 4 Persons
Ingredients :

For fry and grind
Grated coconut : 1 Cup
Pepper : 1 Tsp
Cumin seeds : 1 Tsp
Fennel seeds : 1 Tsp
Sambar onion : 4 Nos
For gravy
Mushroom : 7 Nos
Potato : 1 No
Onion : 1 No
Tomato puree : in 2 Nos
Grated ginger : 1 Tsp
Chopped garlic : 1 Tsp
Curry leaves : Few
Coriander leaves : Few
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Coriander powder : 1 Tsp
Garam masala : 1/2 Tsp
Cumin powder : 1/4 Tsp
Salt : To taste
Method :
Fry  the grind ingredients and grind nicely as paste after gets cool.
Peel off the raw potato and wash along with mushroom. Cut into medium pieces.
Heat oil in a pan, add sliced onion, curry leaves and saute well till the onion turns brown. Add ginger, garlic and saute well.
Add tomato puree and saute.
Add the ground paste and saute. Add all the masala powders.
Add cubed mushrooms and potatoes.
Add water and cook till the mushroom and potato cooked well by covering the pan with lid.
After mushroom and potato cooked well and raw smell goes, transfer to the serving dish and garnish with coriander leaves.

How to prepare Chicken curry with coconut milk

Chicken with thick coconut milk gravy is one of the very tasty Kerala based recipe. I learnt this recipe from my sister. She cooked this dish and it was very tasty when we have with chapathy  and my daughter ate extra chapathies. We can have this curry with rice, biriyany, and with chapathy. Instead of adding coconut grinding paste, when we are adding coconut milk, we can get thick gravy to the curry. It gives different taste. I am not adding any spices like cinnamon, cloves and all. I am adding only cumin seeds and chilly, coriander powders. It is different from normal chicken curry. Try this curry and enjoy the good taste.

Serve for : 4 Persons
Ingredients :

Chicken : 200 Gm
Thick coconut milk : 1 Cup
Cumin seeds : 1 Tsp
Onion : 1 No
Green chilly : 1 No
Grated ginger : 1 Tsp
Chopped garlic : 1 Tsp
Tomato : 1 No
Curry leaves : Few
Coriander leaves : Few
Turmeric powder : 1/4 Tsp
Chilly powder : 2 Tsp
Coriander powder : 2 Tsp
Pepper powder : 1 Tsp
Salt : To taste
Method :
Wash the chicken with turmeric powder. Heat oil in a pan, add cumin seeds. Add onion slices, curry leaves and saute well till the onion turned transparent. Add ginger, garlic, green chilly and saute well.
Add chopped tomato and saute well.
Add washed chicken, saute for 3-4 minutes. Add all the masala powders and saute.
Add salt and little water and close the pan with a lid till the chicken cooked well.
After the chicken cooked well and the raw smell goes, add coconut milk and keep it in low flame for 5 minutes, add coriander leaves.
 After that transfer to the serving dish and serve hot..

How to prepare Stuffed sweet poori

Every body will like poori. I have tried sweet stuffing called puranam stuffing inside the poori and fry. This is a very good snack and everyone will like it very much. In stuffing, i am adding chana dal and cardamon with other ingredients. It gives more tasty to the puri. All children will like this snack. My daughter liked very much. We can give as a evening snack. It can be have as a healthy breakfast also. I am very glad to share this with you all. Let us see how to prepare the tasty Stuffed sweet poori.
Basic information :
Preparation time  : 15 Mins
Cooking time : 3-4 Mins
Serve for : 4 Persons
Ingredients :

Maida flour : 1 Cup
Grated jaggary : 1 Cup
Chana dal : 100 Gm
Grated coconut : 1 Cup
Cardamon powder : 1 Tsp
Salt : 1 Pinch
Oil : To fry
Ghee : 2 Tsp


Method :
Take a cup of maida flour in a bowl, add 1 pinch of salt, oil and make a soft dough and keep it aside.
Heat ghee in a pan, add grated coconut fry well. Add cardamon powder, grated jaggery and fry it. Add cooked and smashed chana dal and mix it nicely.
After mixed well, switch off the flame and make lemon size balls in warm heat itself. It is a purnam.
Make small balls in flour dough. Make two circles by spreading the flour with using chapathy roller.
Keep 1 purnam ball over one circle.
Cover the purnam with other flour circle.
Cover the edges by pressing by hand. For the design, using tooth pick, make stripes on the edges.
Make other purnam as your wished shapes and models like money bag or round. Heat oil in a frying pan, deep fry the poories in all the sides.
We can keep fry till the outer flour fries. After fried well, transfer to the serving plate and serve hot.

How to prepare vegetable curry with coconut milk

This vegetable curry is prepared with  mixed vegetables with thick coconut milk gravy. This is very tasty and healthy recipe. I am using drumstick and carrots only. But we can add all the other vegetable also. I am adding smashed moong dal and potatoes for thickening the gravy. Moong dal is optional.  It goes with chapathy and poori. Come let us prepare the tasty and healthy Vegetable curry with coconut milk.
Basic information :
Preparation time  : 15 Mins
Cooking time : 15 Mins
Serve for : 4 Persons
Ingredients :
Coconut milk : 2 Cups
Drumstick ; 1/2 No
Carrots : 1 No
Potato : 2 Nos
Moong dal : 1/2 Cup
Oil : 3 Tsp
Onion : 1 No
Green chilly : 5 Nos
Grated ginger : 1 Tps
Garlic : 4 Pcs
Cumin powder : 1/2 Tsp
Salt : To taste
Method :
Take coconut milk as first and second milk. Boil the potatoes and moong dal separately and smash them. Chop the onion and green chilies, garlic nicely. Grate the ginger. Cut the vegetables.
Heat oil in a pan, add chopped onion, green chilly, garlic and grated ginger and saute well. Add cut vegetables and saute it.
Add first milk of the coconut and add cumin powder, salt and close the pan to cook the vegetables.
After the vegetables are cooked well, add smashed potato and moong dal  and mix well.
Add second coconut milk and keep it for 5 minutes.
Heat coconut oil in a frying pan, add mustard. After mustard pops, add curry leaves and 1 green chilly and add it into the gravy.
After that,  transfer to the serving dish and serve hot. Try this tasty and yummy recipe and please share your valuable comments....
