Coconut rice is a South Indian coconut flavored rice. It is prepared with coconut milk in presser cooker. It can be prepared with grated coconuts also. That is simple coconut rice recipe. I am cooking rice with adding coconut milk and it will gives more tasty to the rice. I am using jeera rice (Jeerahasamba) we can use basmathi rice also. Coconut rice can be have with either thick gravy, pickle, puthina chutney or without any side dish. Let's prepare the tasty Coconut rice.

Coconut | : | 1 No |
Bay leaf | : | 1 No |
Cinnamon | : | 2 Nos |
Cardamon | : | 2 Nos |
Cloves | : | 4 Nos |
Onion | : | 1/2 no |
Green chilly | : | 3 Nos |
Chopped ginger | : | 1 Tsp |
Curry leaves | : | Few |
Coriander leaves | : | Few |
Mint leaves | : | 3 Leaves |
Salt | : | As per taste |
Oil or ghee | : | 3 Tsp |
Make the grated coconut and grind with adding warm water and drain, squeeze the milk. Make it for 2-3 times, so that we can get more coconut milk.
Wash the rice and keep it aside. Heat oil in a presser pan, add cinnamon, cardamon, bay leaf, cloves.
After 20 minutes switch off the flame and wait for 5 minutes. After 5 minutes, open the lid, stir and transfer to the serving dish and serve hot.
