How to prepare Aviyal

Aviyal is the typical Kerala dish. It is placed a important role in Onam Sadya. Aviyal is prepared with all the vegetables, coconut and curd. In this recipe, we need not to fry anything. Just boiling, mixing and adding coconut oil and curd. That's all. This is one of the favorite recipes in my family. My mother-in-law will make this aviyal very well and my my father-in-law and my husband likes very much. We used to prepare this once in a month. It's goes with sambar rice or venpongal. Let's prepare the tasty Aviyal.

Cooking time : 15 Mins
Serve : 4-5 Persons
Ingredients :
Raw banana:1/2 No
Drumstick:1 No
Ash gourd:100 Gm
French beans:50 Gm
Carrots:50 Gm
Potato:100 Gm
Elephant yam:100 Gm
Coconut:1 Cup
Cumin seeds:1 Tsp
Green chilly:5 Nos
Turmeric powder:1/4 Tsp
Sour curd:1/2 Cup
Coconut oil:3 Tsp
Curry leaves:15 Nos
Salt:As per taste
Method :
Cut all the vegetables nicely  mostly in same shapes. Grind coconut, cumin seeds, green chilly, turmeric powder well as paste.
Cook the vegetables adding turmeric powder, salt and water. (add little amount of water).
After all the vegetables are cooked, add the ground paste and stir and allow it to boil for 3 minutes.
While boiling, add curry leaves and coconut oil and stir.
After 2 minutes, switch off the flame and add sour curd. (If the curd is not much sour, we can add raw mango with the vegetables).
 Add Curry leaves and transfer to the serving dish and serve with sambar rice.
