Make dry powder after dry fry the given ingredients.
Wash the bitter gourd and slice it nicely. Heat sesame oil in a pan, fry the bitter gourd slices for 3-5 minutes.
Add nicely chopped onions, garlic, curry leaves and saute well. I am taking small onions(Sambhar onion). We can use big onions also.
Grind tomatoes and add the puree with the onion and bitter gourd and keep cook till the raw smell goes.
Add tamarind paste. Add all the masala powders and salt. Allow it to cook till the raw smell goes and oil comes out.
Add the dry powder and keep it for 5 more minutes in medium flame.After cooked well, transfer to the serving dish and serve with rice..
