How to prepare Rajma masala (Red kidney beans curry)

Rajma or Red kidney beans curry is one of the popular North Indian curry which is very tasteful. Rajma having a lots of health benefits. While we having this beans, we can get more immunity power because it is having disease-fighting antioxidants. More than that, this kidney beans is rich in Potassium, magnesium, iron  protein and also fiber.It prevents bad cholesterol, the risk of diabetics and reduce the risk of heart diseases. It is rich in Vitamin B6 which helps to prevent  memory loss and hair-fall problems. This healthy beans curry can be have with chapathy, nan, and rice. Let's prepare the tasty rajma curry.

Basic information :
Soaking time : 2 Hrs
Preparation time  : 15 Mins
Cooking time : 20 Mins
Serve for : 4 Persons
Ingredients :

Rajma : 1/4 Kg
oil : 3 Tsp
Sambhar onion : 5 Nos
Garlic : 4 Nos
Ginger : Small pc
Cinnamon : 2 Nos
Cloves : 2 Nos
Chopped onion : 1 Cup
Tomato : 1 No
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Coriander powder : 1 1/2 Tsp
Salt : As per taste
Fennel seeds         :   1 Tsp
Method :
Soak the rajma over night or  2 hrs. Pressure cook the soaked rajma with 3-4 whistles.
Heat oil in a pan, add cinnamon, cloves. Add sambhar onion, chopped ginger and garlic, fry well.
After fried ingredients got cooled, grind well as a paste.
Heat oil in another pan, add fennel seeds. Add onion slices and fry. Add chopped tomatoes and fry well.
Add all the masala powders, ground paste and salt and mix. Allow it to boil till the raw smell goes.
Add boiled rajma .
After getting the correct consistency, transfer to the serving dish and serve hot.

How to prepare Stuffed brinjal curry

Stuffed brinjal curry is one of the favorite recipe in my home. I already post my Stuffed brinjal fry which is dry method. In this post, i am going to make stuffed brinjal with thick tamarind gravy. It is very tasty and everyone will like this. For this, we need to prepare onion stuffing which have to stuff in small size brinjals. This recipe is most common in South India, especially in Tamil Nadu. Let's prepare the tasty  "Stuffed brinjal curry".
Basic information :
Preparation time : 10 Mins
Cooking time : 20 Mins
Serve for : 4 Persons
Ingredients :
Gingaly oil : 3 Tsp
Small Brinjal : 1/4 Kg
Sambar onion : 1 Cup
Tomato : 1 No
Curry leaves : few
Mustard : 1 Tsp
Methi : 1 Tsp
Cumin seeds : 1 Tsp
Turmeric powder : 1/4 Tsp
Chilly powder : 11/2 Tsp
Dhaniya powder : 2 Tsp
Tamarind paste : 1 Cup
Salt : As per need
Method :
Chop sambar onion nicely.
Add turmeric powder, salt, chilly powder, dhaniya powder, 1 Tsp of gingaly oil and mix well with chopped onion as stuffing. Crack the small size brinjals and stuff the onion stuffing in the brinjals.
Heat oil in a pan, add cumin seeds, dry methi, mustard.
After mustard pops, add stuffed brinjals and fry well.
Add chopped tomato and balance stuffing,  fry well.
Add tamarind juice and salt, mix well and allow it to boil, till the brinjal cooked.
After the brinjal cooked and gravy became thick, transfer to the serving dish and serve hot with rice.

How to prepare Mango pachadi

Mango pachadi is one of the favorite recipe in South India, specially in Tamil Nadu. It is having all the tastes like, sweet, spicy, salt, sour and it is very tasty. My daughter likes very much and she will eat without any main dish. For preparing this recipe, we need half sour mangoes like parrot nose mango. (kilimooku mangai). For spicy. i am adding chilly powder. We can also use red chilly instead of powder. Let's prepare the tasty Mango pachadi.
Basic information :
Preparation time : 5 Mins
Cooking time : 15 Mins
Serve for : 4 Persons
Ingredients :
Raw mango : 1 No
Oil : 1 Tsp
Mustard : 1/4 Tsp
Curry leaves : Few
Chilly powder : 1 Tsp
Jaggery : 1 Cup
Salt : 1 Tsp
Method :  
Peel off the mango and cut into small pieces.
Heat oil in a pan, add mustard. After the mustard pops, add curry leaves.
Add mango pieces and fry.
Add chilly powder, salt, fry and add little water and allow it to boil.
After the mango pieces boiled well, smash it and add jaggery  and smash.
After the jaggery smashed well, transfer to the serving dish and serve.
