Potato recipe - Dum Aloo / Shahi Aloo

We all like potato. We can make many variety of curries and fries using potato. Dum aloo is one of the famous North Indian recipe. When i tried at my home, my family members liked very much. It goes well with chapathy, poori, roti, naan and also with rice. When mixing fresh cream, it gives more tasty to the curry. Instead of fresh cream, we can use thick milk. let we see, how to prepare the tasty potato recipe "Dum aloo".
Basic information :
Preparation time : 5 Mins
Cooking time : 20 Minus
Serve for : 4 Persons
Ingredients :
Potato : 1/4 Kg
Oil : 3 Tsp
Onion : 2 No
Ginger : 1 Inch
Garlic : 4 Cloves
Tomato : 2 Nos
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Coriander powder : 2 Tsp
Garam masala : 1/2 Tsp
Cumin powder : 1/2 Tsp
Fennel seeds : 1 Tsp
Salt : To taste
Kasuri methy : 1 Tsp
Fresh cream : 3 Tsp
Method :
Boil the potato, peel off. Heat oil in a pan, add Onion slices, chopped ginger, garlic, curry leaves and saute well.
Add chopped tomatoes and saute well till the tomatoes smashed.
Switch off the flame, add some cashew-nuts and grind it as fine paste, after getting cool. Heat oil in a pan, add  fennel seeds. Add the ground paste, saute well.
Add all the masala powders, salt and leave to cook till the raw smell goes.
Add cooked potatoes. Add fresh cream and  crushed kasuri methi.
Cook for 5 more minutes and transfer to the serving dish, garnish with chopped coriander leaves and serve hot.

Mushroom recipe - Stuffed Mushroom thava fry

Mushroom is very healthy one. We can make Mushroom pepper fry using this button Mushroom. Also we can make Mushroom gravy. This time i tried a different stuffed thava fry. It is stuffed with dry fruits, paneer, potato and other ingredients which gives more tasty and the best health benefits. I learnt this from my favorite Chef at my favorite Tv show. My daughter liked this very much. While we adding all the dry fruits, we can get a lot of Vitamins, minerals and also great immune power. Dry fruits, paneer, potato with Mushroom... Wow!.. What a full energy we can get when we are eating this. Let us enjoy with complete food.

Serve for : 3 Persons
Ingredients :
Mushroom : 2 Packs
For stuffing :
Chopped cashew : 2 Tsp
Chopped Badam : 2 Tsp
Chopped Pista : 2 Tsp
Grated paneer : 2 Tsp
Potato : 1 No
Turmeric powder : 1/4 Tsp
Chilly powder : 1/2 Tsp
Garam masala : 1/4 Tsp
Green chilly : 1 No
Coriander leaves : Few
Salt : To taste
Oil : For fry
Method :
Cook the potato, peel off and grate it for stuffing. Heat water in a bowl. When the water started boiling, add washed mushrooms. Add salt and cook well.
After the mushrooms cooked, drain the water and wash it in cool water. Take the center stem of the Mushroom and make cups.
Mix all the stuffing ingredients well with the grated potatoes.
Stuff the stuffings in the Mushroom cups.
Heat oil in a flat thava or dosa thava, fry the stuffed mushrooms in low flame.
After 4-5 minutes, turn the other side, and fry well.
After fried well, transfer to the serving plate and garnish with badam and pistha slices.

Chicken Potli / Chicken samosa

Chicken potli is a very tasty portli or samosa with nice chicken fry. When i made this, my family members all are liked very much. I made this with maida dough. We can use potli sheet also. If we use that sheets, it will be much more easier. But, i made maida dough and then made sheet myself. The fry masala also very different method from my normal fries. This is a very good snack item in non-veg. Using the same fry, we can make rolls also. chapathy role with chicken fry will be perfect. Try this yummy chicken snack item, "Chicken Potly".
Basic information :
Preparation time : 15 Mins
Cooking time : 10 Mins
Serve for : 3 Persons
Ingredients :
For marinate :
Chicken : 250 Gm
Mixed herbs : 2 Tsp
Pepper powder : 1 Tsp
Salt : 1 Tsp
Olive oil : 1 Tsp
For dry powder :
Mustard seeds : 2 Tsp
Kalonji seeds : 1 Tsp
Methy seeds : 1/4 Tsp
Fennel seeds : 1 Tsp
Chilly powder : 1 Tsp
For fry :
Onion : 1 No
Turmeric powder : 1/2 Tsp
Mint leaves : Few
For potli :
Maida : 1 Cup
Salt : 1 Tsp
Method :
Cut the boneless chicken in very small pieces. Wash and marinate the chicken with the given ingredients.
Fry the dry powder ingredients exept chilly powder and dry grind it with chilly powder as powder.
Heat oil in a pan, add nicely sliced onion and saute well till the onion gets transparent.
Add marinated chicken and saute. Add little water and cover the pan. Wait for 5 minutes to cook.
After 5 minutes, the chicken cooked well, add the ground dry powder 2 Tsp and chopped mint leaves.
If you want, you can add chilly powder for more spicy. Add salt. Fry well the chicken till it comes dry. Switch off the flame and allow it to cool in room temperature.
Make maida smooth dough and spread like sheets. Add the chicken fry stuffing and make potli or samosa.
Heat oil in a pa frying pan, fry the potlies in all the sides equally.
Transfer to the serving plate and serve with sauce dip.
Making Dip sauce:
 Grind tomato, garlic, mixed herbs well as chutney. Heat oil in a pan, add the ground paste, salt, chilly powder, 1 Tsp of sugar and cook till oil comes out and raw smell goes. Serve with the tasty chicken Potli.

Potato chilly / Chilly aloo / Potato 65

We will make different dishes using potato. Today i tried Potato chilly with potato. I am using small size potatoes and cut into two pieces. We can use baby potatoes also. I am using home made mix for fry the chilly potato. It is very tasty and everyone please try this wonderful recipe. 
Basic information :
Preparation time : 10 Mins
Cooking time : 10 Mins
Serve for : 3 Persons
Ingredients :
For marinate :
Potato : 400 Gm
Corn flour : 3 Tsp
Rice flour : 1 Tsp
Chilly powder : 2 Tsp
Cumin powder : 1 Tsp
Garam masala : 1 Tsp
Soya sauce : 1 Tsp
Ginger garlic paste : 1 Tsp
Salt : To taste
Oil : For fry
For saute :
Onion : 1 No
Green chilly : 2 Nos
Capsicum : 1/4 No
Spring onion : 1 Tsp
Method :
Boil the potatoes, peel off and marinate with all the ingredients. Keep it for minimum 15-30 minutes.
Heat oil in a frying pan, make shallow fry the marinated potatoes.
Heat oil in a pan, add nicely sliced onion and saute well. Add chopped bell peppers or capsicum, fried potatoes with 1/2 teaspoon of salt.
Transfer to the serving plate, garnish with chopped spring onion and serve hot.

Tea time Snack - Cheese Bonda

Cheese bonda.... Hot bonda.. That too in rainy evening.. What a great combination.... Cheese Bonda is prepared with maida, with cheese and butter. It is a different and very perfect tasty tea time snack. Bite with tomato sauce and 1 sip of tea.... Wow... very nice ... Please try this wonderful snack and enjoy the rainy, cool evening......cooool...
Basic information :
Preparation time : 10 Mins
Cooking time : 10 Mins
Serve for : 4 Persons
Ingredients :
Maida : 2 Bowls
Butter : 2 Tsp
Water : 2 Bowls
Rice flour : 2 Tsp
Onion : 2 Nos
Green chilly : 2 Nos
Coriander leaves : 2 Tsp
pepper powder : 1 Tsp
Salt : To taste
Grated cheese : 4 Tsp
Method :
Heat 2 bowls of water and add butter, salt.
Add the butter water in maida flour and mix well. Keep the batter for 5 minutes to cool.
Add nicely chopped onions, green chilly, coriander leaves, pepper powder and grated cheese.
Mix well the batter.
Heat oil in a frying pan, take small size balls in hand and put it in the well-heated oil.
Fry the cheese balls well and transfer to the serving plate and serve with tomato sauce and hot tea.

Onam special - Rice payasam / Ari prathaman

Onam, very famous festival in the state of Kerala. It filled with flowers and sweets and a lot of food item called "Onam sadhya". Prathaman is placed a important role in this festival. Ada prathaman. I am making here " Rice prathaman". This sweet is prepared with rice and coconut milk with jaggery's sweetness. This is very tasty sweet and also my favorite dish. i am using light color jaggery. That's what the color of this sweet is became light color. Otherwise, the color will be dark color. Somebody will use black jaggery also. Let us see, how to prepare the tasty sweet recipe "Rice Payasam". Enjoy the festival with the wonderful sweet and colorful flowers...
Basic information :

Serve for : 10 Bowls
Ingredients :
Raw rice : 1/2 Bowl
Coconut  : 1 Big No
Cardamon : 2 Nos
Jaggery : 1/4 Kg
Ghee : 4 Tsp
Coconut pieces : 3 Tsp
Cashew nuts : 2 Tsp
Method :
Take first and second coconut milk. The first coconut milk should be thick.
Mix the jaggery in 1/2 glass of water and keep boiling with adding cardamon. After the jaggery is fully dissolved in water, drain the water and keep it aside.
Gring the rice partially.
Add the partially ground rice in the second coconut milk and bring it to boil.
After the rice is cooked 3/4th, Add the jaggery water and bring it to boil for 3-5 minutes.
Add first coconut milk and keep it in the flame for another 5 minutes. Heat ghee in a pan, add chopped coconut pieces, cashew nut and mix it in the payasam.
 
Switch off the flame, transfer to the serving bowls and serve hot...
