Elephant is a very healthy vegetable and i have written about it's healthy aspects in earlier post. That was a Kerala style recipe. In this post, i am going to prepare new and different style recipe with elephant foot. This is very tasty and spicy recipe and it's like non vegetarian taste. If we are not having non veg, we can prepare this fry in non veg style and taste. Let's prepare the tasty Elephant foot yam fry.

Elephant yam | : | 200 Gm |
Onion paste | : | 1/2 Cup |
Chopped ginger | : | 1 Tsp |
Chopped garlic | : | 1 Tsp |
Green chilly | : | 1 No |

Turmeric powder | : | 1/4 Tsp |
Chilly powder | : | 1 Tsp |
Coriander powder | : | 1/2 Tsp |
Pepper powder | : | 1/2 Tsp |

Oil | : | 4 Tsp |
Mustard | : | 1/2 Tsp |
Curry leaves | : | Few |
Peel off the yam and cut into medium pieces. take a kadai, add yam pieces, and all the boil ingredients and allow to boil till its cooked. (If the yam is reddish in color when we are cutting, it will be cooked quickly. Otherwise we have to presser cook it).
Heat oil in a frying pan, add mustard. I am adding coconut oil, you can add any oil for fry.
After mustard pops, add curry leaves and add it to the cooked elephant foot yam.
Fry the yam till it becomes fried deeply and transfer to the serving dish and serve hot.
