Methu Vada / Curd Vada / Dhahi vada

Methu vada or Ulunthu vada is one of the famous snack or breakfast item in South India. In Tamil Nadu, Idly, Vada, Pongal is a very common breakfast item. Methu vada is prepared with urad dal batter. It is given as prasadam in one of the Navrathri festival days. If we are not preparing in Navrathri time, we can use onion also. It is very tasty and simple recipe. In methu vada, i am making curd vada. This can get from most of the restaurants in South and North India. We can add spicy boondhi also. Let us see how to prepare the tasty and simple Methu vada and Curd vada. 
Basic information :
Preparation time : 15 Mins
Cooking time : 10 Mins
Serve for : 4 Persons
Ingredients :
Urad dal : 100 Gm
Grated ginger : 2 Tsp
Black pepper : 2 Tsp
Salt : 1 Tsp
Curry leaves : Few
Oil : For fry
For curd vada :
Curd : 1/2 Lr
Salt : 1/2 Tsp
Chilly powder : 2 Pinch
Chat masala : 2 Pinch
Coriander leaves : Few
Method :
Rinse the urad dal and soak for minimum 30 minutes.
Grind the soaked urad dal nicely in grinder. (We can add ginger while grinding time itself). Add grated ginger, black pepper, chopped curry leaves and salt.
Mix well and take a small size ball and put it in oil greased paper and make hole in center. We can made it with using our hands also.
Heat oil in a pan, fry the vada in well heated oil in both sides.
After fried well, transfer to the serving plate and serve hot..
Making curd vada :
Take a bowl of water and add the fried vada and soak for 1 minute.
Mix curd well, add salt and soaked vada.
When we serving, in a bowl, take 2or3 pieces of curd vada with curd, add chopped coriander leaves, pinch of chilly powder, chat masala powder and serve..

Brinjal fry / Egg plant fry

Brinjal or egg plant is a unusual vegetable in my home. Then one day I tried brinjal fry. I am preparing this tasty brinjal fry with big brinjal or egg plant. We can use small one also. I already made with small brinjal fry and i used for brinjal raitha. It was very tasty. This brinjal fry is very tasty and healthy. Brinjal is having a lot of good health benefits. It is having Vitamins, minerals, calcium and potassium. We can have this yummy fry recipe with all types of rice items. let we see, how to prepare the tasty Brinjal fry.
Basic information :
Preparation time : 5 Mins
Cooking time : 5 Mins
Serve for : 3 Persons
Ingredients :
Brinjal : 1/2 Kg
Chilly powder : 2 Tsp
Cumin powder : 1 Tsp
Fennel powder : 1 Tsp
Turmeric powder : 1/4 Tsp
Corn flour : 1 Tsp
Salt : 1 Tsp
Oil : For fry
Method :
Mix all the powder ingredients well.
Wash the brinjal and cut it like round slices. Marinate the brinjal slices with mixed masala powders.
Heat oil for fry, fry the marinated brinjal in low flame. Make it fry in both the sides.
After the brinjal fried well, transfer to the serving plate and serve hot.

Sabudana and vermicelli kheer - Festive sweet recipe

In this festive season, sabudana is placing the most important role. Today, I am going to prepare a sweet dish using sabudana. I am using sabudana with vermicelli and i make kheer. It is a very tasty recipe. We can make sabudana puttu using sabudana. This is also a sweet recipe. This is mostly preparing in almost all the festivals. My husband's favorite sweet recipe. I used to prepare for his birthday, every year.
Basic information :
Preparation time : 20 Mins
Serve for : 5 Persons
Ingredients :
Sabudana : 50 Gm
Vermicelli : 50 Gm
Milk : 1/2 Lr
Cashews : 50 Gm
Ghee : 3 Tsp
Sugar : To Taste
Method :
Soak the sabudana for minimum 10_15 minutes.
Heat ghee in a pan, add cashews and fry. Keep it aside.
In same ghee, add vermicelli and fry till it turns golden brown.
Heat water in a pot add fried vermicelli and soaked sabudana.
After the vermicelli and sabudana cooked well, add thick milk sugar, cardamom powder and mix it well.
After mixed well, add fried cashew nuts and transfer to serving bowl and serve hot..

Sweet boli / Parupu boli

Boli is one of the traditional dish in India. Mostly we will prepare as prasadham for pooja in festival times. In Navrathri festival, this recipe is served as prasadham. Boli is prepared with maida in chana dal stuffing. It is very tasty and good for health also. We can make with coconut also for sweet boli. We can prepare spicy boli also. That we can see in later posting. Now we can see, how to prepare the tasty Sweet parupu boli.
Basic information :
Preparation time : 15 Mins
Cooking time : 5 Mns
Serve for : 4 Persons
Ingredients :
For batter :
Maida flour : 1 Bowl
Turmeric powder : 1/4 Tsp
Salt : 1 Tsp
Oil : 3 Tsp
For filling :
Chana dal : 100 Gm
Sugar : 5 Tsp
Cardamon powder : 1/4 Tsp
Ghee : For cook
Method :
Making dough :
Mix maida or all purpose flour, turmeric powder (we can use yellow food color also), salt and oil. Knead all these and make as smooth dough. Add some more oil over the dough.
Making filling :
Rinse the channa dal well and cook well. After cooked well, smash the dal.
Heat 1/2 teaspoon of ghee add cooked and smashed dal and mix sugar. Mix it well till it thickens. Add cardamon powder and mix it well. Make lemon sized balls in the dal mix after getting cool.
Making boil :
Knead the dough well and medium size balls. spread the balls in a oil greesed polythene paper by pressing by hand or roller.
Fill the dal filling. Cover the filling by the dough and press it again and make boli.
Heat a dosa thava, cook the pressed boli and round some ghee over the boli.
Cook in two sides well. After the boli cooked well, transfer to the serving plate and serve hot.

Radish chutney

Radish is one of the unusual vegetable in everyone's house. Most of the people doesn't like radish. For those people, We can make radish chutney. In this chutney, radish is a secret ingredient. They doesn't know, this chutney is made with radish. Radish is one of the very healthy vegetable. I already made radish as secret ingredient radish porata. I also post radish fry. We can have this chutney for south Indian breakfast like, Idly, dosa. Very healthy and tasty chutney recipe that everyone should try. Let us see, how to prepare the tasty Radish chutney.
Basic information :
Preparation time : 10 Mins
Serve for : 4 Persons
Ingredients :
Radish : 2 No
Oil : 2 Tsp
Urad dal : 2 Tsp
Onion : 1 No
Garlic : 3 Nos
Curry leaves : Few
Coriander leaves : Few
Tomato : 3 Nos
salt : To taste
Method :
Peel off the radish and grate it. Heat 1/4 Tsp of oil in a pan, add grated radish and saute well. We have to saute well the radish till the raw smell goes. 
Heat 2 teaspoon of oil and add urad dal and make it fry.
After the dal getting golden brown, add onion slices, garlic, curry leaves, coriander leaves and saute well.
Add chopped tomato and saute well. After tomatoes smashed, add fried radish and mix it for 2-3 minutes. Make it cool in room temperature.
After the fried ingredients got cool, grind it with salt and little water as chutney. Serve this yummy chutney with dosa.

Chicken momos with momos chutney

Chicken momos is a very famous chines road side food. When we were in Delhi, my daughter sometimes had chicken momos for her dinner also. She likes that much. Chicken momos is made with spice less chicken filling with flour dough. I am adding pepper powder and some dry herbal or Oregano powder to make the chicken filling. Oregano powder is optional one. If we add, we can get nice aroma and flavor. For making the filling, we have to cut the chicken in very small pieces as much as possible. We can grind the chicken and then can saute. This is very simple and easy recipe which can be prepare everyone. Let us see, how to prepare the tasty, Chicken momos.
Basic information :

Ingredients :
For dough :
Maida flour : 1 Bowl
Salt : To taste
Oil : 1/2 Tsp
For filling :
Chicken  : 1/4 Kg
Oil : 2 Tsp
Salt : 1 Tsp
Pepper powder : 1 Tsp
oregano powder : 1/2 Tsp
Onion : 1 No
For chutney :
Tomato : 3 Nos
Garlic : 4 Cloves
Red chilly : 5 Nos
Oil : 2 Tsp
Salt : To taste
Method :
Making dough :
Mix maida or all purpose flour with salt, 1/2 tsp of oil and make smooth dough. 
Making filling :
Heat oil in a pan, add nicely chopped onion and saute well. Add chopped chicken. Add salt, pepper powder and oregano powder. Mix well till the chicken cooked well. Because the chicken cut in very small pieces, it will cook very quickly. 
Making Momos :
Kneed the dough and make small sized balls. Spread the balls as poori, fill the chicken filling in center.
Make flits in the dough to cover the filling.
Make all the balls like momos.
Steam the momos well. After the momos cooked well, transfer to the serving plate amd serve with the red chutney.
Making chutney :
Grind tomatoes, garlic, red chilly with adding salt well as chutney. Heat oil in a pan, add ground chutney. Cook well till the oil comes out. After cooked well, transfer to the bowl and serve with the hot momos.

Potato / Aloo tikki stuffed with dry fruits

Potato is one the favorite food item for mostly all of us. Using potato or aloo, we can make many verity of dishes. This time, i made a yummy snack item called Aloo tikki. It is very famous in North India, especially in Delhi. It is prepared with boiled, smashed potato crispy fry. I thought to prepare this snack with something interesting.. So i have added some stuffing in this. In that stuffing, i am adding dry fruits. Stuffing with dry fruits, aloo tikki will be very tasty. Bite the allo tikki, crunchy dry fruits... Wow!... What a wonderful taste. must try..
Basic information :
Preparation time : 10 Mins
Cooking time : 15 Mins
Serve for : 4 Persons
Ingredients :
Potato : 1/2 Kg
Salt : 1 Tsp
Turmeric powder : 1/4 Tsp
Green chilly : 1 No
Cumin powder : 1/2 Tsp
Garam masala : 1/4 Tsp
Grated ginger : 1 Tsp
Coriander leaves : Few
Oil : To fry
Filling :
Badam : Few
Pista : Few
Cashew nut : Few
Method :
Boil the potato well, drain well. Peel off the boiled potatoes and mix the given ingredients.
Mix all the ingredients along with the potato well without water. The mixing should not be watery.
Cut all the filling ingredients in small pieces.
Make ball in the potato mixing and make dig in the center.
Fill the chopped filling in the dig.
Cover the filling and make it in tikki shape. Make like same in all the balls.
Heat oil in a grilling pan or a normal pan for shallow fry. Roll the tikkies in maida flour and make shallow fry.
After fried in both the sides, transfer to the serving platter and serve with the tomato sauce.
