Hyderabady Mutton dhum biriyani

I normally make biriyani in Biriyani rice or Jeera rice (jeerahasamba) only. My daughter always be saying to prepare in Basmathi rice. Then, i saw one TV show, One chef is preparing Mutton biriyani with using Basmathi rice. The next day , i tried and it came very well. The method of preparation also very different from my normal Mutton biriyani. My husband and my daughter liked very much. They said, hereafter i should prepare like this only in Basmathi rice. let us see how to prepare the tasty "Hyderabady Mutton Dhum Biriyani".
Basic information :
Preparation time : 15 Mins
Cooking time : 45 Mins
Serve for : 2 Persons
Ingredients :
For marinate :
Mutton : 1/2 Kg
Onion : 1 Big No
Ginger garlic paste : 2 Tsp
Raw papaya paste : 1 Tsp
Shah jeera : 1 Tsp
Mint leaves : Few
Coriander leaves : Few
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Thick Curd : 1 Cup
Salt : 2 Tsp
For rice :
Basmathi rice : 1/4 Kg
Cinnamon : 2 Pcs
Cardamon : 1 No
Bay leaf : 1 No
Cloves : 3 Nos
Ghee : 4 Tsp
Salt : 1 Tsp
Method :
Cut the onion nice slices. Deep fry, till its caramelized. Wash the mutton pieces well.
Marinate with all the ingredients given under for marinate heading along with caramelized onion and soak for 30 minutes.
Rinse the Basmathi rice and soak for 30 minutes. After 30 minutes, in Basmathi rice, add the other ingredients along with chopped coriander leaves, mint leaves and shah jeera and half cook the rice.
After the rice is half-cooked, drain the water.
Take one heavy bottom pan or a pressure cooker, add the well soaked mutton.
Over the soaked mutton, add the half-cooked rice. Add caramelized onion, chopped coriander, mint leaves, 2 Tsp of ghee. If we want, we can add some saffron. 
Close the pan or cooker. Preheat one plain dosa thava and place the mutton, rice filled pan or cooker over the dosa thava. If you use pan, keep it for 30 minutes in medium flame and 15 minutes in low flame. If you are using pressure cooker, keep it for 30 minutes in medium flame and switch off the flame and wait for 15 minutes to release the pressure.
 After 45 minutes, open the lid and transfer to the serving plate and serve hot with cucumber, carrot raitha.

Tomato Halwa

Halwa is one of the favorite sweet in my family. My husband likes Beetroot halwa the most. This weekend, i tried Tomato halwa which is learnt from my friend, Mrs. Sahana Raffic. It came very well and my husband and my daughter liked very much. Tomato's little tangy with sugar and ghee mixed gives a different experience for us.
Health benefits of Tomato :
The health benefits of tomato are, it helps to improve our vision because of Vitamin A in this. Tomato helps to fight especially lungs and stomach cancer. Vitamin K in Tomato helps to get a good blood circulation in our body. it is good for digestion. Tomato helps to decrease the risk of heart disease.

Cooking time : 30 Mins
Serve for : 3 Persons
Ingredients :
Tomato : 1/2 Kg
sugar : 400 Gm
Ghee : 4 Tsp
Cashew nut : Few
Method :
Boil the tomatoes in water till the skin shrink.
After boiled well, remove the skin and smash the tomatoes with hand or grind. Heat a pan, add the smashed tomato and cook well till all the water content evaporates. It will take approximately  15 minutes.
Add sugar and mix it well till it comes in halwa consistency.
heat ghee in a pan, add cashews, fry. Add the fried cashews in the halwa with the ghee. If we want, we can add cardamon powder also. Transfer to the serving bowl, serve hot.

Green chicken / Hara chicken masala

Green chicken is completely different from normal chicken curries. I thought to prepare something interesting with chicken. Then i tried green chicken which is very tasty and flavorful green chutney. I am not using any masala powders in this curry, except cumin seeds powder. I am preparing green chutney and made this curry. I am not using yogurt or curd. If we want more gravy, we can add thick curd in this curry. This is very tasty and must try this. Let us see how to prepare the tasty and flavorful Green or Hara chicken masala.

Serve for : 3 Persons
Ingredients :

For green chutney :
Mint leaves : Few
Coriander leaves : Few
Green chilly : 4 Nos
Ginger : 1 Inch
Garlic : 4 Nos
For marinate :
Chicken : 1/2 Kg
Pepper powder : 1/2 Tsp
Turmeric powder : 1/4 Tsp
Lemon juice : 1 Tsp
Salt : 1 Tsp
For curry :
Onion : 2 Nos
Curry leaves : Few
Cumin seed powder : 1/2 Tsp
Fennel seeds : 1/2 Tsp
Salt : To taste
Method :
Wash the chicken with turmeric powder and marinate with the marinated ingredients.
Grind the green chutney. Grind the onions as paste. Heat oil in a pan, add fennel seeds. After fennel seeds pops, add  curry leaves and ground onion paste ans saute well.
Add green chutney, cumin powder, salt and saute well.
Add the marinated chicken. Add some water and close the pan with lid till the chicken fully cooked.
After the cooked well, transfer to the serving dish and serve hot with rice or biriyani, chapathy, naan.

Chicken Manchurian

Manchurian is one of my favorite dish. Whenever i am going to any restaurant, i will order only variety of Manchurian. Chicken Manchurian is the tasty dish which i like the most. i have tried in vegetables Veg-Manchurian. No, i tried with chicken. Yummy, it is very tasty and colorful. i am happy to share this recipe to you all. Hope you all like it and you will try. Let us see how to prepare the tasty "Chicken Manchurian ".

Serve for : 4 Persons
Ingredients :
For marinate :
Boneless Chicken : 1/2 Kg
Ginger paste : 1/2 Tsp
Garlic paste : 1/2 Tsp
Chilly powder : 1 Tsp
Turmeric powder : 1/4 Tsp
Corn flour : 1 Tsp
Rice flour : 1/2 Tsp
Salt : 1 Tsp
For saute :
Chopped onion : 1 Cup
Curry leaves : Few
Tomato sauce : 2 Tsp
Soya sauce : 1 Tsp
Capsicum : 1/2 No
Cornflour paste : 1/4 Cup
Method :
 Wash the chicken pieces with turmeric powder and marinate with the marinate ingredients and soak for at-least 30 minutes.
After soaked well, deep fry the chicken pieces.
Heat oil in a pan, add cumin seeds, chopped onions and saute well.
Add tomato sauce, soya sauce and chopped capsicum.
Add cornflour paste (mix with water) and add some water and keep it medium flame till it thickens.
After getting good consistency, transfer to the serving plate, garnish with spring onions and 1 pinch of white sesame seeds. Ya.. It is ready to serve now.

Potato recipe - Potato lahori / Aloo Lahori

Preparing aloo in different style is every body's favorite. I already made potato stir fry, potato finger chips, potato simple fry, potato masala. Now, i tried a new version with aloo ,called Aloo lahori. It is something different from the original version. I made this potato fry with curd gravy. I am not adding white cream or kasuri methi and saffron. If we want, we can add all these. It is very tasty. When i prepared first time, i made with more spicy. So second time, i adjust the spiciness. let us see how to prepare the tasty Aloo lahori.
Basic information :
Preparation time  : 15 Mins
Cooking time : 15 Mins
Serve for : 3 Persons
Ingredients :
For grind :
Onion : 1 Big no
Green chilly : 4 Nos
Ginger : 1 Inch
Garlic : 5 Cloves
For curry :
Potato : 4 Nos
Cumin powder : 1/2 Tsp
Garam masala : 1/2 Tsp
Pepper powder : 1/2 Tsp
Salt : To taste
Spring onions : Few
Curd : 1 Cup
Milk : 1/2 Glass
Method :
Boil the potato, peel off and cube it.
Heat oil in a pan, make stir fry little the cubed potatoes.
Grind the ingredients that is under for grind heading.
Heat oil in a pan, add ground paste and saute well. Add cumin powder, pepper powder, garam masala powder and salt.
Add fried potatoes. After mixed well, add 1 cup of thick or hung curd or yogurt and mix it well.
Finally, add 1/2 a glass of thick milk and transfer to the serving dish. Garnish with chopped spring onions.

peanut chutney

When we are making south Indian breakfasts, our only confusion is, what chutney will prepare. Today, i prepared peanut chutney for dosa. This chutney goes with Lemon rice or  Tamarind rice (Puliogare). This gives different taste from normal chutneys. Quick method of preparation also. Simple chutney that everyone likes. Let us see how to prepare the tasty "Peanut chutney".
Basic information :
Preparation time : 10 Mins
Serve for : 4 Persons
Ingredients :

Peanut : 1/2 Bowl
Grated coconut : 1 Cup
Red chilly : 5 Nos
Tamarind : Small ball
Garlic : 4 Cloves
Curry leaves : Few
Salt : To taste
Method :
Dry fry the peanut and keep it aside. If you are using fried peanut , don't want to fry.
Heat oil in pan, add grated coconut, red chilly, curry leave, garlic and fry.
After fried well, allow it to cool. Then add tamarind, salt, fried peanut and grind with little water as chutney.
That's it!.. the chutney is ready to serve.
Try this tasty chutney and enjoy the difference.

Sambhar with Spring onions / Spring onion sambhar

Sambhar is the famous South Indian recipe. I already posted Drumstick,Brinjal sambhar. Today, i tried sambhar with using spring onions. It came very well and it taste is very good. Also using spring onion is helpful to getting more health benefits.
Health benefits :
Spring onions are rich in Vitamins, Proteins. The vitamin C and K in this onion, helps to get a strong bones. We can refer this green onion for the persons who are suffering from bone fractures. Vitamin A and C are having a lot of anti-oxidant properties. It helps to decrease the risk of heart deceases and it prevent high blood pressure. The proteins in this onion helps to have good eye sight. Also it helps to increase the immune power of our body. Spring onion is gluten free vegetable.

Preparation time : 10 Mins
Cooking time : 15 Mins
Serve for : 4 Persons
Ingredients :
Toor dal : 100 Gm
Asafoetida : small pc
Turmeric powder : 1/2 Tsp
Oil : 3 Tsp
Mustard seeds : 1/2 Tsp
Cumin seeds : 1/2 Tsp
Methy seeds : 1/4 Tsp
Spring onion : Few
Sambhar onion : 6 Nos
Curry leaves : Few
Tomato : 1 No
Tamarind paste : 1/2 Cup
Sambar powder : 1 1/2 Tsp
Salt : To taste
Method :
Rinse the toor dal well and pressure coo it with adding small piece of asafoetida, turmeric powder and 1/4 teaspoon of oil by leaving 3 whistles then transfer to the pot. 
Cut the spring onion in medium sizes. Slice it's root onion. Heat oil in a pan, add mustard seeds, cumin seeds, methy seeds. After the seeds spluttered, add  sliced onion, curry leaves and saute well.
Add chopped tomato and saute.
Add chopped spring onions.
After saute well, add it in to the  cooked dal. Add sambhar powder, tamarind paste, salt and allow it to boil till the raw smell goes.
After the raw smell gone, transfer to the serving dish and serve hot with hot rice or with any south Indian tiffins.
