Paneer nuggets / Paneer pakoda

Pakoda is the favorite snack in our family and I will prepare in every evenings in rainy season. This time, i tried making pokoda using paneer. It is very nice and tasty. Paneer pokoda is prepared with cubed paneer dipped in basen mixer. It is the best tea time snack. We can feel it's crispy in outer and softness in inner side. It gives different taste and delicious recipe. Paneer is rich in calcium. So this is a healthy calcium rich snack.
Basic information :
Preparation time : 15 Mins
Serve for : 3  persons
Ingredients :
Paneer : 100 Gm
Basen  : 4 Tsp
Rice flour : 1 Tsp
Chilly powder : 1 Tsp
Salt : As per taste
Baking soda : 1 Pinch
Method :
Cut the paneer in cubes.
Mix all the ingredients well with water. The consistency should be thick not be very thin.
Add the cubed paneer in the flour mix.
Heat oil in a frying pan, deep fry the dipped paneer.
After the paneer fried well in all the sides, transfer to the serving plate and garnish with fried curry leaves and onion pakoda and serve with tomato sauce.

How to prepare Basen Dokla

Dokla preparing with basen is one the favorite North Indian snack item. I am preparing in home style. I am making first time and it came very nice and tasty. My husband and my kid like very much and they asked where you have bought this. I am using baking powder to make more fluffy instead of eno fruit salt. It came very much fluffy. I am very glad to share this to all of you. Let us see how we can prepare the tasty Dokla.
Basic information :
Preparation time:15 Mins
Cooking time:25 Mins
Serve for:5-6 Persons
Ingredients :
Basen : 1 Cup
Ginger : Small pc
Green chilly : 5 Pcs
Salt : 1 Tsp
Lemon juice : 1 Tsp
Turmeric powder : 1/4 Tsp
Mustard : 1/4 Tsp
Curry leaves : Few
Baking powder : 1 Tsp
Method :
Grind green chilly and ginger.
In one cup of basen, add ground chilly paste, salt, lemon juice, turmeric powder and mix it well without any lumps.
Keep the mixed flour for 30 minutes for set.
After 30 minutes, add baking powder and mix well. It should be in idly batter consistency.
Take one plate or tiffin box and apply oil. Pour the well mixed flour.
Bake the flour in a idly pot pot or momos baker for atleast 20_25 minutes. After 25 minutes, check whether it is cook or not with the help of fork spoon. Let it cool in room temperature.
After getting cool, transfer to another plate by turning back side. Cut the baked Dokla in to medium pieces.
Heat oil in a frying pan, add mustard. After mustard pops, add curry leaves. Add one cup of water and sugar. Add green chilies.
Add the sugar water in the Dokla pieces to garnish and serve.

How to prepare Gobi chilly dry \ Chilly Cauliflower 65

Wherever we go, We can see Chilly Gobi dry or Gobi Manchurian  in all restaurants. I am preparing this in home made masala. I am not using any chilly chicken powders and also any sauces. It is pure vegetarian and home made recipe. This fry can be have as a snack or side dish for lunch. Or we can have as a starters. It has a delicious taste and i am serving this fry with fried onion. capsicum, and green chilies. My daughter will eat this when i am frying itself. It is a very good snack and please everyone try......
Basic information :
Preparation time : 5 Mins
Soaking time : 30 Mins
Serve for : 4 Persons
Ingredients :
Cauliflower : 1 No
Corn flour : 3 Tsp
Rice flour : 1 Tsp
chilly powder : 1 Tsp
Fennel powder : 1/2 Tsp
Ginger garlic paste : 1 Tsp
Salt : To taste
Oil : To fry
Method :
Cut and wash the cauliflower in hot water with adding turmeric powder and salt.
Take a bowl and mix all the ingredients well without and lumps.
Mix the washed cauliflower into the flour mix and soak for at least 30 minutes. I forgot to take 1 photograph. Heat oil in a frying pan, make shallow fry the well soaked Gobi.
After fried well in all the sides, transfer to the serving plate and serve with fried onion, capsicum and green chilies.

How to prepare Mint Gobi fry \ Cauliflower puthina fry \ Green cauliflower dry fry

Normally we will prepare Gobi chill, Gobi Manchurian or prepare with potato or other vegetables. But Green Gobi fry is a different fry and the mint flavor also very nice. It gives a nice taste for the fry. I tried it for evening tea time and my husband and my daughter liked very much. They said it is very nice in mint flavor and the aroma. When we are using mint, it helps to digest easily. Come let's prepare the the tasty Gobi mint fry or Hara cauliflower fry.
Basic information :
Preparation time : 5 Mins
Soaking time : 30 Mins
Serve for : 2 Persons
Ingredients :
Cauliflower : 1/2 No
Mint leaves : 3 Tsp
Garlic : 4 Pcs
Cumin seeds : 1 Tsp
Green chilly : 3 Nos
Lemon juice : 1 Tsp
Cornflour : 2 Tsp
Salt : As per taste
Oil : To fry
Method :
Cut and wash the Gobi by adding salt and turmeric powder in hot water.
Grind mint leaves (puthina), green chilly, garlic, cumin seeds nicely as a green chutney.

Add cornflour, lime juice and salt in the green chutney.

Add the washed Gobi, mix well and soak for minimum 30 minutes.

Heat oil in frying pan, make shallow fry the soaked Gobi well.

After the Gobi fried well in all the sides, transfer to the serving plate and serve with fried onion, capsicum, curry leaves.

How to prepare Chapathi egg roll for Brunch

Egg roll in normal south Indian bread called chapathi with vegetable stuffing is a very good brunch item for school going children.  My daughter is a big fan of rolls. When i prepared for my daughter, she said, it's yummy, wonderful, delicious... and she hugged and kissed me. I have prepared and packed this in her brunch box. In many schools, egg is not allowed. But we make this roll without egg also, with stuffing. It is very healthy for growing children and they will definitely like this roll. Come let us prepare the healthy and tasty Egg roll with chapathi.   
Basic information :
Preparation time : 10Mins
Cooking time : 5 Mins
Serve for : 1 person
Ingredients :
For dough :
Wheat flour : 1 Cup
Salt : 1/2 Tsp
Oil : 1 Tsp
For stuffing :
Carrot : 1/2 No
Cucumber : 1/4 Pc
Onion : 1/2 No
Salt : 1 Tsp
Egg Beat :
Egg : 1 No
Salt : 1/4 Tps
Pepper powder : 1/4 Tps
Method :
Make soft dough using wheat flour, salt and oil. Keep it aside.
Heat 1/4 teaspoon of oil, add grated carrot, cucumber and chopped onions. saute well till it gets dry and let it cool for some time.
Beat ad egg with adding salt and pepper powder.
Kneed the dough and make a lemon size ball. Spread the ball using chapathi roller as chapathi.
Heat a thava, add little oil, roast the chapathi slightly and keep it aside.
Pour 1/4 teaspoon of oil and add the egg beaten.
Keep the roasted chapathi over the egg and spread the egg.
After the egg cooked transfer to the plate and add the stuffing in it.
Slowly roll the chapathi.
Pack the rolled chapathi by cutting two pieces in your child's snacks box.

How to prepare Mushroom mangolia

Mushroom mangolia is thick gravy with mushrooms and potato. This gravy is prepared with button mushrooms. Button mushrooms are very healthy, because it is having low calories. Adding this mushrooms in our diet, it helps to increase our immunity power and reduce the risk of breast cancer. So i am trying to make different items using button mushroom. This recipe is very tasteful and i thought to give a different name. The result is Mushroom mangolia. I am making this recipe in south Indian style. This gravy goes with chapathy, poori, and also with rice. I am very glade to share this gravy recipe to all of you and let us prepare "Mushroom mangolia".

Ingredients :

For fry and grind
Grated coconut : 1 Cup
Pepper : 1 Tsp
Cumin seeds : 1 Tsp
Fennel seeds : 1 Tsp
Sambar onion : 4 Nos
For gravy
Mushroom : 7 Nos
Potato : 1 No
Onion : 1 No
Tomato puree : in 2 Nos
Grated ginger : 1 Tsp
Chopped garlic : 1 Tsp
Curry leaves : Few
Coriander leaves : Few
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Coriander powder : 1 Tsp
Garam masala : 1/2 Tsp
Cumin powder : 1/4 Tsp
Salt : To taste
Method :
Fry  the grind ingredients and grind nicely as paste after gets cool.
Peel off the raw potato and wash along with mushroom. Cut into medium pieces.
Heat oil in a pan, add sliced onion, curry leaves and saute well till the onion turns brown. Add ginger, garlic and saute well.
Add tomato puree and saute.
Add the ground paste and saute. Add all the masala powders.
Add cubed mushrooms and potatoes.
Add water and cook till the mushroom and potato cooked well by covering the pan with lid.
After mushroom and potato cooked well and raw smell goes, transfer to the serving dish and garnish with coriander leaves.
