How to prepare Dal vada

Dal vada is also called as masal vada, parupu vada and it is prepared with chana dal. This vada is a South Indian snack and it is best snack with evening tea. In this, i am adding more onions to make more tastier. It can be have with coconut chutney, puthina chutney and tomato sauce. It is one of the favorite snack for all of us. It is very simple, tasty and healthy snack. Let's prepare Dal vada.
Basic information :
Soaking time : 1 Hr
Preparation time : 10 Mins
Cooking time : 5 Mins
Serve for : 5 Persons
Ingredients : 

Chana dal : 1 Cup
Fennel seeds : 2 Tsp
Garlic : 5 Nos
Red chilly : 6 Nos
Chopped onion : 1/2 Cup
Chopped chilly : 2 Tsp
Ginger : Small piece
Curry leaves : Few
Coriander leaves : Few
Salt : As per taste
Oil : For fry
Method :
Soak the chana dal for 1 hour.
Add fennel seeds, red chilly, garlic, ginger, curry leaves, coriander leaves, 1 tsp of chopped onion, salt with the soaked chana dal in a mixer grinder.
Grind all with the smooth paste and add all choped onion, green chilly amd mix well.
Make small balls with the dal mixer.
Press it smoothly and as round shape as vada.
Fry the vada in both the sides till golden brown color comes.
After the vada fully cooked, transfer to the serving dish and serve hot with tea.

How to prepare Chana dal balls gravy (Parupu urundai kuzhambu)

Chana dal balls gravy or parupu urundai kuzhambu is prepared with chana dal mixing with some ingredients to make the balls and adding to the gravy. It is very tasty recipe. Chana dal is one of the healthy dal. It is a spicy gravy and my mother-in-law likes very much. It is goes with rice, chapathi.  Let's see how we can prepare the tasty Chana dal balls gravy.
Basic information :

Preparation time : 15 Mins
Cooking time : 20 Mins
Serve for : 5 Persons
Ingredients :
For balls

Chana dal : 1 Cup
Fennel seeds : 2 Tsp
Garlic : 5 Nos
Red chilly : 6 Nos
Chopped onion : 1/2 Cup
Curry leaves : Few
Coconut pieces : 1/2 Cup
Salt : As per taste
For gravy

Mustard : 1/4 Tsp
Cumin seeds : 1/4 Tsp
Dry methy : 1/4 Tsp
Garlic : 4 Nos
Chopped onion : 1/2 Cup
Green chilly : 1 No
Curry leaves : Few
Tomato : 1 No
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Coriander powder : 2 Tsp
Tamarind juice : 1 Cup
Salt : As per taste
grind for gravy
Coconut pieces : 1/2 Cup
Sambar onion : 3 Nos
Garlic : 3 Nos
Method :
Soak chana dal for 1 hour.
Add fennel seeds, garlic, red chilly, curry leaves, salt with the soaked chana dal and grind as a smooth paste. Add chopped onion, coconut pieces and mix with the chana paste and make balls in lemon size.
Make coconut paste with the grind for gravy ingredients. Heat oil in a kadai, add mustard, dry methi, cumin seeds. Add onion, garlic green chilly, curry leaves and fry. Add tomatoes and fry well.
Add ground paste, tamarind juice, masala powders, salt and mix well. Add water to make the gravy watery.
When the gravy started boiling, add the chana dal balls one by one slowly and close the kadai.
After some time, turn the balls slowly without braking it. By this time, the gravy becomes thick. Keep the gravy in low flame till the oil comes out and transfer to the serving dish and serve hot.

How to prepare Rava paniyaram

Rava paniyaram is a sweet dish prepared with rava (suji), maida and sugar. All 3 ingredients should be taken in same quantity. It is a tasty sweet and we can prepare quickly. If we have the sudden guest, we can make this sweet and definitely they will like very much. It can be make as shallow fried. But it's name is being rava paniyaram, i am making in paniyaram thava.
Basic information :
Preparation time : 3 Mins
Cooking time : 5 Mins
Serve : 4 Persons
Ingredients :

Rava(suji) : 1 Cup
Maida : 1 Cup
Sugar : 1 Cup
Cardamon powder : 1 Tsp
Soda salt : 1 Pinch
Method :
Take Rava, maida and sugar in same quantity, add cardamon powder, soda salt and mix with little water.
Heat paniyaram thava and pore 1/2 Tsp of oil in the thava and pore the batter.
After baking one side, turn the paniyarm.
After baking both the sides, transfer to the serving dish and serve hot with tea.

How to prepare Onion tomato fried chutney

Onion tomato chutney is a simple and usual chutney. I am going to fry all the ingredients before grind the chutney. In this chutney, i am adding small piece of ginger. It is optional one. If you don't like the ginger smell, we need not to add it. But adding ginger, gives more taste to this chutney. It goes with South Indian breakfast like idly, dosa. Let's prepare the tasty onion tomato fried chutney.
Basic information :
preparation time  : 10 Mins
Serve for : 3 Persons
Ingredients :

Oil : 3 Tsp
Urad dal : 1 Tsp
Mustard : 1/4 Tsp
Chopped onion : 1 Cup
Chopped ginger : 1 Tsp
Garlic : 4 Nos
Curry leaves : Few
Coriander leaves : Few
Red chiily : 6 Nos
Chopped tomato : 1 Cup
Salt : As per taste
Method :
Heat oil in a pan, add urad dal. After urad dal became golden brown, add mustard. After the mustard pops, add chopped onion, ginger, garlic, red chilly, curry leaves, coriander leaves and fry well. Add salt for quick fry.
Add chopped tomatoes and fry well and allow it to cool.
After gets cool, grind as chutney. If we want, we can add water. otherwise, we can have as thick chutney.
Transfer to the serving dish and serve with idly or dosa.

How to prepare Lady finger tamarind curry (Vendakai pulikuzhambu)

Lady finger with tamarind curry or vendakai pulikuzhambu is very tasty recipe and it is a best combination with rice. It is a typical South Indian recipe. Some persons will add coconut paste in it. But i am not adding coconut paste and it is spicy and tasty curry. My husband will have as a side dish for idly. Instead of lady finger, we can add brinjal also. Let's we can prepare the tasty vendakai puli.

Ingredients :

Lady finger : 200 Gm
Mustard : 1/4 Tsp
Cumin seeds : 1/4 Tsp
Dry methi : 1/4 Tsp
Sambar onion : 1/2 Cup
Green chilly : 1 No
Curry leaves : Few
Tomato : 1 No
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Coriander powder : 2 Tsp
Tamarind juice : 1 Cup
Gingaly oil : 4 Tsp
Salt : As pre taste
Garlic                     :  6 Pcs
Method :
Wash the lady finger, make it dry and cut into medium pieces. Heat oil in a pan, add lady finger pieces and fry well and keep it aside.
Heat oil in same pan, add mustard, cumin seeds, dry methi. Add chopped onion, garlic, green chilly,curry leaves and fry well. Add tomato and fry well.
Add fried lady finger, turmeric powder, chilly powder, coriander powder, salt, stir and add tamarind juice and water and close the pan. Keep it in low flame.
After the vegetable is fully cooked, keep it in low flame till the oil comes out.
After 5-8 minutes, transfer to the serving dish and serve hot with rice.

How to prepare Elephant foot yam fry.

Elephant is a very healthy vegetable and i have written about it's healthy aspects in earlier post. That was a Kerala style recipe.  In this post, i am going to prepare new and different style recipe with elephant foot. This is very tasty and spicy recipe and it's like non vegetarian taste. If we are not having non veg, we can prepare this fry in non veg style and taste. Let's prepare the tasty Elephant foot yam fry.
Basic information :
preparation time  : 10 Mins
Cooking time : 20 Mins
Serve for : 3 Persons
Ingredients :

For boil
Elephant yam : 200 Gm
Onion paste : 1/2 Cup
Chopped ginger : 1 Tsp
Chopped garlic : 1 Tsp
Green chilly : 1 No
Curry leaves : Few
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Coriander powder : 1/2 Tsp
Pepper powder : 1/2 Tsp
Salt : As per taste
For fry :
Oil : 4 Tsp
Mustard : 1/2 Tsp
Curry leaves : Few
Method :
Peel off the yam and cut into medium pieces. take a kadai, add yam pieces, and all the boil ingredients and allow to boil till its cooked. (If the yam is reddish in color when we are cutting, it will be cooked quickly. Otherwise we have to presser cook it).
Heat oil in a frying pan, add mustard. I am adding coconut oil, you can add any oil for fry.
After mustard pops, add curry leaves and add it to the cooked elephant foot yam.
Fry the yam till it becomes fried deeply and transfer to the serving dish and serve hot.

How to prepare Bottle gourd moong dal curry (Sorakai pasiparupu kootu)

Bottle gourd is one of the healthy vegetable and it is having more water content. I already posted the spicy bottle gourd masala.  In this post, i am going to prepare bottle gourd with moong dal and it is without spicy. Bottle gourd is a healthy vegetable and when we are adding moong dal it becomes more healthy. It can be served with chapathy, puri, and also rice. It is very simple recipe.

Serve : 3 Persons
Ingredients :

Bottle gourd : 200 Gm
Moong dal : 1/2 Cup
Onion : 1/2 Cup
Green chilly : 4 Nos
Curry leaves : Few
Turmeric powder : 1/4 Tsp
Salt : As per taste
Method :
Peel off the bottle gourd wash and cut as small pieces. Cook the bottle gourd with moong dal, turmeric powder and salt in a pressure cooker and leave for 3 whistles.
Heat oil in a pan, add mustard. After the mustard pops, add onion, green chilly, curry leaves and fry well.
Add the fried onion into the cooked bottle gourd and transfer to the serving dish and serve hot.

How to prepare Potato masala for puri (Puri masal)

Potato is the favorite vegetable for all. Puri masal prepared with aloo or potato is a common recipe mostly in South Indian hotels. I made something different in it. I am adding tomato and ginger in it. It gives more tasty to the masal. For thickness, some persons will be adding basan mixer. In this recipe i am not adding basan. I am adding potatoes for the real taste. Come let's prepare the tasty puri masal.
Basic information :

Cooking time : 10 Mins
Serve : 4 Persons
Ingredients :

Potato : 4 Nos
Chana dal : 1 Tsp
Mustard : 1/4 Tsp
Green chilly : 5 Nos
Onion : 1 No
Chopped ginger : 1 Tsp
Curry leaves : Few
Coriander leaves : Few
Tomato : 1 No
Turmeric powder : 1/4 Tsp
Salt : As per taste
Method :
Boil the potatoes, peel off and smash it.
Heat oil in a pan, add chana dal, mustard. After mustard pops, add sliced onion, curry leaves, ginger, green chilly, coriander leaves and fry. For spiciness we are adding green chilly only. We can add the chilies as we want the spiciness. 
Add smashed potato, turmeric powder and salt. Add little water and close the pan for 5 minutes.
After 5 minutes of boiling, transfer to the serving dish and serve hot with puri and chapathi.
