How to prepare simple chicken fry (pallipalayam chicken)

Pallipalayam is one of the South Indian area which is placed near Erode. When we have gone to my uncle's house in Erode, my aunt was prepared this Pallipalayam style chicken fry and we loved it. This is very tasty and without much spicy. For preparing this, we no need any masala, spices and water also. This is very simple recipe and bachelors also can make this fry easily. For this fry, sambar onion and round red chilly is preferable and also boneless chicken and we need same quantity of onion as much as chicken.

Preparation time : 10 Mins
Cooking time : 20 Mins
Serve : 4 Persons
Ingredients :

Boneless chicken : 1/2 Kg
Sambar onion : 1/2 Kg
Red chilly : 15 Nos
Ginger paste : 1/2 Tsp
Garlic paste : 1/2 Tsp
Curry leaves : Few
Oil : 4 Tsp
Turmeric powder  :  1/4 Tsp
Method :
Wash the chicken well with turmeric powder. Heat oil in a pan, add ginger garlic paste and fry.
Add washed chicken, onion, curry leaves, red chilies, turmeric powder, salt.
 Stir and close the pan . We need not to fry the onion. It should be boil with the onion's water and chicken water. So we need not to add water.
Close the pan lid till the chicken is fully cooked and water is gone. (Approximately 15-20 Mins) in low flame. The onions must be smashed. After the chicken cooked and water gone, fry for 3-4 minutes and transfer to the serving dish and serve hot.It can be have without any main dish.

How to prepare Vegetable kurma

Vegetable kurma is prepared with mixed vegetables and coconut gravy. It is the best combination with chapathi, puri, paratha and rice. This is very tasty and healthy recipe which can be prepared by all. Whenever i make chapathy, i will prepare veg kurma as side dish. In this i have added carrots, french beans, and potatoes. We can also add green peas, baby corn, broccoli, cauliflower. Let's make the tasty Veg kurma.
Basic information :
Preparation time : 10 Mins
Cooking time : 20 Mins
serve : 5 Persons
Ingredients : 

For grind
Coconut : 1/2 No
Fennel seeds : 1 Tsp
Garlic : 6 Nos
Green chilly : 8 Nos
For fry
Oil : 3 Tsp
Cinnamon : 3 Nos
Cloves : 4 Nos
Cardamon : 2 Nos
Bay leaf : 1 No
Onion : 1/2 No
Ginger chopped : 1 Tsp
Curry leaves : Few
Coriander leaves : Few
Tomato : 1 No
For curry
Carrot : 1 No
French beans : 3 Nos
Potato : 1 No
Coriander powder : 1 Tsp
Salt : as per taste


Method :
Grind coconut, fennel seeds, garlic, green chilly as paste. We can add green chilly as we want the spiciness.
Heat oil in a pan, add cinnamon, bay leaf, cardamon, cloves and fry. Add chopped onion, ginger, curry leaves, coriander leaves and fry well.
Add chopped tomato and fry well. Add chopped vegetables fry and add coriander powder, salt and little water. Close the pan till the vegetables are cooked.
 After the vegetables are cooked, add ground coconut paste and allow it to boil for 4-5 minutes.
After 5 minutes of boiling, transfer to the serving dish, garnish with coriander leaves and serve hot.

how to prepare Bisi bele bath

Bisi bele bath is Karnataka recipe which is very tasty and healthy. We are using dal, rice, and vegetables in this. In this recipe, i am adding home made powder, so it is fresh and it has natural taste. This bath can have with the pickle or pupped. Some persons will add cinnamon in this. if we like it, we can also add. In some arias in South India, it is called Rice dal bath  (Arisi parupu satham ). It should be overcooked. If we add more ghee, it gives delicious taste. Let we can see how the Bisi bele bath can make.

Preparation time : 10 Mins
Cooking time : 30 Mins
serve : 4 Persons
Ingredients :

Rice : 1 Bowl
Toor dal : 1/4 Bowl
mustard : 1/4 Tsp
Cumin seeds : 1/4 Tsp
Onion : 1/2 Cup
Tomato : 1 No
Green chilly : 1 No
Curry leaves : Few
Coriander leaves : 1 Tsp
Bisi bele bath powder : 2 Tsp
Tamarind juice : 1/2 Cup
Oil : 2 Tsp
Ghee : 4 Tsp
Salt : As per taste
Method :
Heat oil in a pressure cooker, add mustard, cumin seeds. Add onion, green chilly, curry leaves and fry well.
Add chopped tomato and fry well. Add chopped vegetables, salt and bisi bele bath powder   and fry well.
Add washed rice and dal and fry a little.
Add tamarind juice and water in 1:3 ratio, and keep it for 3 whistles in medium flame or keep 15-20 minutes in low flame.
After that, wait for 5 minutes for gas release, add ghee and transfer to the serving dish and serve hot.

How to prepare Sambar / Bisi bele bath powder

Instead of buying the masala powders outside, we can make and store it. It is always very  useful and healthy also. Making sambar masala is very easy and the aroma also very natural. In ancient days, our mother and grand mothers used to prepare curries with grind masala with their own. After that, we used to buy masala.
I was thinking preparing masala is very tough. But when i started to prepare, i don't go for the out side masala. Come let's prepare the homemade sambar masala. we can use for bisibele bath also.
Basic information :
Preparation time : 15 Mins
Preserve : Long time
Ingredients : 

Coriander seeds : 1 Bowl
Red chilly : 15 Nos
Chana dal : 1/4 Bowl
Toor dal : 1/4 Bowl
Cumin seeds : 2 Tsp
Dry methi : 2 Tsp
Pepper : 1/2 Tsp
Turmeric powder : 1/4 Tsp
Asafoetida powder : 1/4 Tsp
Method :
Fry all the ingredients separately except turmeric powder and asafoetida powder. When we are frying red chilly, we can use 1/4 Tsp of oil.
After frying, add turmeric powder, and asafoetida powder, grind them nicely as powder. Transfer to the air tight container and store it.

How to prepare Oats dosa (Healthy breakfast)

Breakfast must be healthy for all of us. Oats is a very healthy and my mother-in-law doesn't like it. I was thinking, how can i give without knowing as oats. Then i decided to prepare dosa with using oats and rava.  My mother-in-law ate and she was saying that, "Tasty rava dosa ". After that i said this is oats dosa, she was surprised. This is very healthy recipe and we can add vegetables also in it. Everyone can easily prepare this dosa. Bachelors can easily prepare this dosa. It is goes with coconut chutney, Puthina chutney.

Cooking time : 5 Mins
Serve : 3 Persons
Ingredients :

Oats : 1 Bowl
Idly rava : 1 Bowl
Curd : 1 Bowl
Mustard : 1/4 Tsp
Onion : 1/2 No
Green chilly : 1 No
Curry leaves : Few
Oil : little
Salt : As per taste
Grated carrots : 1/2 Cup
Method :
Grind the oats as powder.
Heat oil in a pan, add mustard. After mustard pops, add chopped onion, green chilly, curry leaves and fry well.
 Add idly rava and fry well.
Add the fried rava into the oats powder, add curd.
Add little water and as a dosa batter.
Heat the dosa thava and make as dosa. After the 2 sides are cooked, transfer to the serving plate, garnish with grated carrots and serve hot with any chutney.

How to prepare Chutney powder (Idly milagai podi)

If we prepare chutney powder and preserve is very useful for us. If we have no time to prepare any chutney, we can use chutney powder with gingaly oil. We can add the red chilies, how much we want the spicy.We are preserving all the time at my home. It is the best combination with all South Indian breakfast like Idli, Dosa. We can make chutney also using this powder. Adding coconut, tamarind with this powder and grind with some water will be the very tasty chutney.

Ingredients :

Black gram dal : 1 Bowl
Rice : 1/4 Bowl
Red chilly : 15 Nos
Curry leaves : Few
Asafoetida powder : 1/2 Tsp
Salt : As per taste
Method :
Heat a pan, fry Black gram dal (Urad dal ), rice, red chilly separately.
While frying red chilly, you can add 1/4 Tsp of oil, so we cannot get cough while frying.
Add asafoetida powder, dry curry leaves, salt and grind as nice powder.Transfer the powder in air tight container.While serving with idli, dosa, we can add the powder with gingaly oil.

How to prepare Raw banana fry

We can make raw banana in different methods. This is a spicy fry which is very tasty and it goes with sambar rice and rasam rice. If you think, raw banana is a gastric vegetable, i am having one idea to make it healthy. If we boil with turmeric powder for 3 minutes and drain the water, before fry, then we will not get any gastric problem. It is simple and tasty flavored fry. Come let's prepare the spicy Raw banana fry.

Ingredients :

Raw banana : 2 Nos
Turmeric powder : 1/4 Tsp
Salt  : As per taste
Oil : For fry
For grind
Garlic : 5 Nos
Red chilly : 7 Nos
Fennel powder : 1 Tsp
Method :
Peel off the raw banana, wash it and cut as round pieces. Add turmeric powder, little salt, water in the raw banana rounds and allow it to boil for 3 minutes.
 In 3 minutes, the banana will be cooked.After that, drain the water.
Grind garlic, red chilly, fennel powder as a paste with salt. (We can use red chilly powder also).
Heat oil in a pan, add cooked raw banana and fry little.
Add ground paste and mix with the banana and fry well.
Already banana is being cooked, we can keep till the masala fried.Transfer to the serving dish and serve hot. We can eat as a snack also.

How to prepare Snake gourd with chana dal fry

Snake gourd is very healthy and nutritious vegetable. If we prepared with chana dal makes it more healthy. It is a South Indian recipe and it is very tasty. My mother used to prepare this adding coconut, fennel, garlic paste. But this is simple and i am not adding any paste or masala. This snake gourd with chana dal fry is one of the favorite recipes in my family. It is goes with rise or chapathi.
Basic information :
Preparation time : 10 Mins
Cooking time : 15 Mins
Serve : 4 Persons
Ingredients :
For boil
Snake gourd : 1/4 Kg
Chana dal : 1/2 Cup
Turmeric powder : 1/4 Tsp
Salt : As per taste
For fry :
Mustard : 1/4 Tsp
Onion : 1 No
Green chilly : 3 Nos
Curry leaves : 10 Nos
Grated coconut : 1/2 Cup
Method :
Peel off the snake gourd, clean the inside seeds, wash and cut into small pieces. Add chana dal, turmeric powder, salt with snake gourd in a pressure cooker and cook in leaving 2 whistles.
Heat oil in a pan, add mustard. After the mustard pops, add onion, green chilly, curry leaves and fry well.
Add the cooked snake gourd and chana dal and fry till the water gets dry.
Add grated coconut, stir and transfer to the serving dish and serve hot .
