How to prepare Ash gourd raita (Poosani pachadi)

We will make raita with many vegetables. But making with ash gourd (White pumpkin) is very tasty and healthy recipe. Ash gourd is very healthy vegetable. It has vitamins, minerals and it's good for maintaining Blood pressure. We can add ash gourd in morkuzhambu, sambar ect... But if u try  raita with ash gourd gives different experience. Let's see how we can prepare the Ash gourd raita.
 Basic information :
Preparation time : 10 Mins
Cooking time : 10 Mins
Serve : 3 Persons
Ingredients :


Ash gourd : 1/4 Kg
Curd : 1 Cup
Mustard : 1 Tsp
Onion : 1/2 Cup
Red chilly : 3 Nos
Curry leaves : 5 Nos
Oil : 2 Tsp
Salt : As per taste
Method :
Peel off the ash gourd, wash and cut into small pieces. Add salt, little water and keep it in low flame.
After the ash gourd is fully cooked, transfer to the serving dish and add thick curd.
Heat oil in a pan, add mustard. After the mustard pops, add chopped onion, red chilly, curry leaves and fry well. Add little salt for quick fry. (Onion is optional one).
Add the fried onion into the ash gourd.
Mix well and serve with chapathi, paratha or any variety rices.

How to prepare Garam masala powder at home

Preparing home made powders is very easy and helps to reduce our expenditure. Garam masala powder is made with all spices and i am adding kalpassi in this. It will give more aroma for this masala powder. If we add 1 or 1/2 Tsp of this powder, we can get rich aroma and good experience in taste.
First we can know about Kalpasi. It is a Tamil word. In Hindi it is called as 'Dagar da phool' / Patthar ke phool. In Telugu it is called as 'Kallupachi'. In Kannada it is called as 'Kallu hoovu. it gives rich aroma and taste for the masala. All the other spices are commonly we are using spices.

Ingredients :

Kalpasi:100 Gm
Cinnamon:100 Gm
Cloves:100 Gm
Cardamon:50 Gm
Fennel seeds:100 Gm
Annasi:20 Nos
Bay leaves:2 Nos
Pepper:50 Gm
Method :
Keep all the spices in direct sunlight for 5 minuets. We should not keep it for long time. After getting full dry, grind the spices well as powder. Keep the powder out for 5 minutes and store it in air tight container.
Everyone try this simple masala powder and you will not buy garam masala in outside.

How to prepare Jeera chicken fry

We can make chicken fry in many methods. But fry with cumin seeds is very simple and tasty recipe. This is my mother-in-law's recipe. It is the best combination with rasam rice. We need not to add onion, tomatoes and any spices except cumin seeds. We need very less time to prepare this fry. Let's see how we can prepare the tasty quick method of Jeera chicken fry.
Basic information :
Preparation time : 10 Mins
Cooking time : 15 Mins
Serve : 3 Persons
Ingredients :

Chicken : 1/2 Kg
Cumin seeds : 1 Tsp
Ginger paste : 1 Tsp
Garlic paste : 1 Tsp
Red chilly powder : 2 Tsp
Turmeric powder : 1/4 Tsp
Cumin seed powder : 2 Tsp
Salt : As per taste
Method :
Wash the chicken well with turmeric powder. Heat oil in a pan, add cumin seeds. Add ginger garlic paste.
Add washed chicken and fry.
Add chilly powder, turmeric powder, salt and fry well. No need to add water. Keep in low flame and close the pan. After 5 minutes of cooking, if the chicken is not cooked, then we can add little water.
After the chicken is half-cooked, add cumin seed powder and keep the chicken in low flame till the water goes and fry well for 5 minutes, stir occasionally.
After the chicken fried, transfer to the serving dish and serve hot.

How to prepare Vegetable soup

The best choice off healthy soups is Vegetable soup only. In this soup, i am adding baby corn and other vegetables. We can also add broccoli, mushroom and other vegetables. i am adding Corn flour to make the soup thicker. It is the optional one. I am adding egg white in this soup. if you are a pure vegetarian, need not to add egg white. This is very healthy and tasty soup. We can give this soup for kids.

Preparation time : 10 Mins
Cooking time : 15 Mins
Serve : 3 Persons
Ingredients :
French beans:50 Gm
Carrots:50 Gm
Baby corn:3 Nos
Green peas:50 Gm
Capsicum:Small piece
Corn flour:2 Tsp
Salt:As per taste
Pepper powder:As per taste
Method :
Cut all the vegetables, add 4 glasses of water and keep it in low flame.
Mix the corn flour in 1/4 cup of water. After all the vegetables are cooked, add the mixed corn flour water.
Allow it to boil for 2 minutes.
Before taken from flame, add egg white. (It is optional).
Wait for 2 minutes, transfer to the serving dish and serve hot with pepper powder.

How to prepare Veg-Pulao

Vegetable pulao is prepared with all the vegetables and spices. It is very tasty and the method of preparation also very easy. This is special rice recipe and cooked in pressure cooker. If i am getting very less time to prepare a special item, i will be preferred veg-pulao only. I am adding 2 Tsp of lemon juice. While adding lemon juice, we can get little tangy and it will become very tasty. In this, i am adding only green color capsicum. We can add tricolor capsicums, so that, we can get more colorful. We can also add broccoli.

Cooking time : 15 Mins
Serve : 5 Persons
Ingredients :
Basmathi rice : 1 Cup
Cinnamon : 2 Nos
Bay leaves : 1 No
Cardamon : 2 Nos
Cloves : 4 Nos
Onion : 1 No
Curry leaves : 10 Nos
Coriander leaves : 2 Tsp
French beans : 50 Gm
Carrots : 50 Gm
Baby corn : 3 Nos
Green peas : 50 Gm
Potato : 50 Gm
Chopped ginger : 1 Tsp
Chopped garlic : 1 Tsp
Capsicum : 1/2 No
Lemon juice : 2 Tsp
Oil or Ghee : 3 Tsp
Salt : As per taste
Method :
Chop the vegetables nicely and wash the rice. Heat oil or ghee in a pressure cooker, add bay leaves, cinnamon, cloves, cardamon and fry.Add chopped onion, ginger, garlic, curry leaves, coriander leaves and fry well.
Add all the chopped vegetables and fry well.
 Add washed rice and fry a little. (if we fry the rice a little, we can get the pulao in good consistency).
Add water in 1:2 ratio. Add lemon juice and salt and close the cooker lid, keep it in low flame and wait for 15 minutes or allow 2 whistles in medium flame.
After that, switch off the flame, wait for 5 minutes and transfer to the serving dish, garnish with spring onions, serve hot with thick gravies or raitha or puthina chutney.

How to prepare Ridge gourd fry (Peerkankai poriyal)

Ridge gourd was a unusual vegetable in my home. But when i am trying spicy ridge gourd fry, it is became one of the favorite recipes in my home. My mother-in-low likes very much this fry. I am adding sambar powder for spicy. We can add red chilly powder instead. This fry is very simple and tasty fry.
Basic information :
Preparation time : 5 Mins
Cooking time : 10 Mins
Serve : 3 Persons
Ingredients :
Ridge gourd:1/4 Kg
Mustard:1/4 Tsp
Sambar onion:1/2 Cup
Curry leaves:10 Nos
Sambar powder:1 Tsp
Salt:As per taste
Gingaly oil:2 Tsp
Turmeric powder:1/4 Tsp
Method :
Peel off the ridge gourd, wash and cut into small pieces. Heat oil in a kadai, add Mustard. After mustard pops, add chopped onion, curry leaves and fry well.
Add chopped ridge gourd and fry. Add sambar powder, turmeric powder, salt and fry.
No need to add water because, water will come vegetable itself. Close the kadai for 4-5 minutes.
After 5 minutes, open the kadai, stir and transfer to the serving dish and serve hot with rice or chapathi.

How to prepare Aviyal

Aviyal is the typical Kerala dish. It is placed a important role in Onam Sadya. Aviyal is prepared with all the vegetables, coconut and curd. In this recipe, we need not to fry anything. Just boiling, mixing and adding coconut oil and curd. That's all. This is one of the favorite recipes in my family. My mother-in-law will make this aviyal very well and my my father-in-law and my husband likes very much. We used to prepare this once in a month. It's goes with sambar rice or venpongal. Let's prepare the tasty Aviyal.
Basic information :
Preparation time  : 10 Mins
Cooking time : 15 Mins
Serve : 4-5 Persons
Ingredients :
Raw banana:1/2 No
Drumstick:1 No
Ash gourd:100 Gm
French beans:50 Gm
Carrots:50 Gm
Potato:100 Gm
Elephant yam:100 Gm
Coconut:1 Cup
Cumin seeds:1 Tsp
Green chilly:5 Nos
Turmeric powder:1/4 Tsp
Sour curd:1/2 Cup
Coconut oil:3 Tsp
Curry leaves:15 Nos
Salt:As per taste
Method :
Cut all the vegetables nicely  mostly in same shapes. Grind coconut, cumin seeds, green chilly, turmeric powder well as paste.
Cook the vegetables adding turmeric powder, salt and water. (add little amount of water).
After all the vegetables are cooked, add the ground paste and stir and allow it to boil for 3 minutes.
While boiling, add curry leaves and coconut oil and stir.
After 2 minutes, switch off the flame and add sour curd. (If the curd is not much sour, we can add raw mango with the vegetables).
 Add Curry leaves and transfer to the serving dish and serve with sambar rice.

How to prepare Beetroot halwa

When i am preparing beetroot fry at my home, everyone will be saying, "today is holiday for lunch". Having beetroot is very healthy for us, so i was thinking, how can i make the beetroot in interesting way. After that, i tried beetroot  halwa. Everyone in my family liked very much and they appreciated me. It is a very tasty sweet and very easy to prepare. Come! let's prepare the delicious Beetroot halwa.

Beetroot:1/2 Kg
milk:1/2 Cup
Sugar:150 Gm
Ghee:4 Tsp
Cashew nut:10 Nos
Almonds:5 Nos
Method :
Peel off the beetroot, wash and make as grated beetroot.Boil the beetroot with milk.
 After the beetroot cooked, smash it.Add sugar and stir well till the water evaporates as halwa.
Heat ghee in a pan, add cashews, almonds and fry.
Add the fried nuts into the halwa and transfer to the serving dish.

How to prepare easy potato fry

Potato fry is one of the favorite recipe for all. My husband is always asking me to prepare this fry. This is very tasty and the method of preparation also very simple. In this fry, i am not adding water to cook. It will be cook with only oil. This fry can be make everybody and i am cutting the potatoes very small pieces. Let's prepare the simple and tasty potato fry.

Potato : 1/4 Kg
Garlic : 4 Nos
Turmeric powder : 1/4 Tsp

Chop the potatoes and garlic nicely. Heat oil in a pan, add garlic and fry. Add chopped potatoes and fry.
Add turmeric powder, salt and fry well.
 After the potato became cooked, add chilly powder and fry well. (If we add the chilly powder in early, the powder will be burnt).
 After 4 minutes of fry, transfer to the serving dish and serve hot with sambar rice or rasam rice.
