How to prepare Banana bajji (Pazhampori)

Banana bajji  is making with Kerala banana and it is also called  as Ethakai appam is a very delicious snack. It is very favorite snack in Kerala. This can be get in Kerala hotels.
Basic information :
Preparation time : 5 Mins
Cooking time : 5 Mins
Serve : 4 Persons
Ingredients :
Ethaka:2 Nos
Maida flour:1/2 Cup
Turmeric powder:1/4 Tsp
Soda salt:1 Pinch
Salt:1 Tsp
Oil:For fry
Method :
Mix maida, turmeric powder, soda salt and salt with water well. Slice the Ethaka.
Heat oil in a frying pan, dip the sliced ethaka into the flour mix and make shallow fry.
 After deep fried in two sides, transfer to the serving dish and serve hot with tea.

How to prepare vegetable cutlet (Healthy snack)

Vegetable cutlet is prepared with vegetables and potato smash, so this is very healthy snack. Making more healthy, we can add oats powder for crispness. This cutlet can be have as a snack or side dish for lunch. It is a best healthy snack with evening tea. We can add bread crumbs for get brown color. But adding oats powder is become healthy.

Ingredients :
Potato:1/2 Kg
Carrots:100 Gm
French beans:100 Gm
Green peas:100 Gm
Onion:1 No
Chopped ginger:1 Tsp
Curry leaves:10 Nos
Coriander leaves:1 Tsp
Oil:For fry
Salt :As per taste
Rice flour:1 Tsp
Corn flour:1 Tsp
Maida :1 Tsp
Oats powder:1 Cup
Turmeric powder:1/4 Tsp
Garam masala powder:1/2 Tsp
Chilly powder:1 Tsp
Method :
 Boil the potatoes, peel off and smash it. Heat oil in a pan, add chopped onion, ginger, curry leaves and fry. Add chopped vegetables and fry . Add turmeric powder, garam masala powder, chilly powder, salt and fry well till the vegetables are cooked.
 Add the cooked vegetables into the smashed potatoes, mix well and make shapes as you like.
Mix rice flour, maida, corn flour well in a bowl and make as a dip. grind oats as powder.
Heat oil in a frying pan, take the veg shapes and dip in the flour dip and dip in the oats powder and make shallow fry.
Transfer to the serving dish and serve with tomato sauce.

How to prepare Veg Manchurian

Veg Manchurian is a  special vegetarian dish. It is making with veg fried balls and soya sauce gravy. Normally, it is making with all sauces. Instead of tomato sauce, i am using tomato puree and chilly paste. This Manchurian is very healthy because of adding all vegetables. It is very simple recipe. Come! let's prepare the tasty Veg Manchurian.
Basic information :
Preparation time : 15 Mins
Cooking time : 15 Mins
Serve : 4 Persons
Ingredients :
Potato : 1/2 Kg
Carrots : 100 Gm
French beans : 100 Gm
Green peas : 100 Gm
Onion : 1 No
Chopped Garlic : 2 Tsp
Chopped ginger : 1 Tsp
Capsicum : 1/2 No
Curry leaves : 10 Nos
Spring onion : 2 Tsp
Coriander leaves : 1 Tsp
Soya sauce : 1 Tsp
Tomato puree : 1 Cup
Chilly paste : 2 Tsp
Oil : 4 Tsp
Salt  : As per taste
Rice flour : 1 Tsp
Corn flour : 1 Tsp
Maida  : 1 Tsp
Turmeric powder : 1/4 Tsp
Chilly powder : 1 Tsp
Garam masala powder : 1/2 Tsp
Method :
Cut the vegetables nicely. Heat oil in a pan, add onion, chopped ginger, curry leaves and fry well. Add chopped vegetables. Add turmeric powder, garam masala powder, salt and fry till the vegetables are cooked.
Boil the potato and smash. Add the cooked vegetables into the smashed potato and mix well and make veg balls. Mix rice flour, maida, corn flour with water and make as a dip.
Heat oil in a frying pan, take the veg balls and dip into the flour dip and fry well and keep it aside.
Heat oil in a pan, add chopped onion, garlic, curry leaves, coriander leaves, spring onion, capsicum and fry well.
Add tomato puree, chilly paste, soya sauce and allow it to boil till the raw smell goes.
Add fried veg balls and fry a little.
Transfer to the serving dish and garnish with spring onion.

How to prepare Veg Fried rice

Whenever i am going to hotels with my family, my husband and myself used to order Fried rice only. My hubby will be saying, we can't get this taste, if we made at home. But one day i made Veg fried rice at home, we was asking, in which hotel you bought this fried rice. He liked very much. I am not using any masalas in this fried rice. It is very tasty and we are using more vegetables, so this is very healthy home made fried rice.
 Basic information :
Preparation time : 15 Mins
Cooking time : 10 Mins
Serve : 4 Persons
Ingredients :
Basmathi rice:1 Cup
Carrots:100 Gm
French beans:100 Gm
Green peas:100 Gm
Onion:1 No
Chopped ginger:1 Tsp
Capsicum:1/2 No
Curry leaves:10 Nos
Spring onion:2 Tsp
Coriander leaves:1 Tsp
Cinnamon:3 Nos
Cloves:3 Nos
Oil:4 Tsp
Salt :As per taste
Method :
Boil the basmathi rice and allow it to cool. Cut the vegetables nicely.
Heat oil in kadai, add cinnamon, cloves. Add onion and ginger and fry well.
Add Chopped vegetables and fry well. We can fry it till the vegetables become half-cooked.
Add capsicum, spring onion and fry. Add cooked rice and fry well.

How to prepare spicy pongal (Venpongal)

We can make pongal in 2 types. Sweet pongal and spicy pongal. Sweet pongal will be making in Tamil festival "Pongal". This spicy pongal is called Venpongal in Tamil Nadu. It is very tasty and made with raw rice and moong dal. For more tasty, we are adding ghee and cashews. This pongal is may get in some of the temples as prasadam. Venpongal is goes with coconut chutney and sambar. Otherwise we can have with Kerala dish Aviyal.  Let's prepare the tasty Venpongal.

Time consume : 20 Mins
Serve : 4 Persons
Ingredients :
Raw rice:1 Cup
Moong dal:1/4 Cup
Pepper:2 Tsp
Cumin seeds:2 Tsp
Chopped Ginger:1 Tsp
Curry leaves:10 Nos
Oil:2 Tsp
Ghee:3 Tsp
Cashewnut:2 Tsp
Salt:As per taste
Method :
Wash the rice and moong dal well. Heat oil in pressure cooker, add pepper and cumin seeds.Add chopped ginger, curry leaves and fry.
Add washed rice and moong dal and fry a little. Add salt.
Add water in 1:2 ratio, close the cooker lid and allow it for 2 whistles.
after 2 whistles, wait for 5 minutes. Heat ghee in a pan, add cashews and fry.
Add the fried cashews into the cooked pongal and transfer to the serving dish and serve hot with coconut chutney and sambar.

How to prepare Mangoginger (Ma inji) pickle

Mango ginger (Ma inji) is also called as Curcuma amada pickle is very easy and quick method of preparation. We are adding lemon juice for its tanginess. For every pickle, we need more oil but, in this pickle we are adding very less oil and it is good for our health. Cooking time also very less. Let's prepare the spicy Ma inji pickle.
Basic information :
Preparation time   : 15 Mins
Cooking time        :   5 Mins
Preserve                : Long time
Ingredients :
 Mango ginger   : 1/2 Kg
Lemon              : 10 Nos
Dry methi         : 1 Tsp
Asafetida          : Small piece
Red chilly         : 15 Nos
Salt                   : As per taste
Oil                    : 3 Tsp
Method :
Peel off the ma ginger wash and make it dry.Cut the ma ginger as round pieces.
Heat a kadai, fry dry methi.
Heat 1/2 tsp oil, add asafetida and fry. Add red chilly and fry a little.
 Grind the fried ingredients as powder after it gets cool.
Heat oil in a kadai, add chopped ma ginger and fry a little.
Add ground powder and fry. Add salt.
2 Seconds of fry is enough. After removing from flame, add lemon juice and stir.
 After gets cool, transfer to the air tight bottle or jar.

How to prepare Stuffed brinjal fry

Stuffed brinjal fry is mostly be served in parties, especially in Andhra style parties. When i was having this dish, i was thinking that, why cant we prepare this fry. Then i tried at home, it came very well. After that, Stuffed brinjal fry is placed a role in all my special vegetarian menu. We have to deep fry the brinjal, but not burnt. Let's prepare the tasty Stuffed brinjal fry.
Basic information :
Time consume  : 30 Mins
Serve : 3 Persons
Ingredients :
Brinjal : 1/4 Kg
Sambar onion : 1/2 Cup
Coconut pieces : 1/2 Cup
Red chilly : 5 Nos
Garlic : 3 Nos
Cumin seeds : 1 Tsp
Curry leaves : 8 Nos
Oil : 4 Tsp
Salt : As per taste
Method :
Wash the brinjals and split into 4.
Heat oil in a pan, add cumin seeds. Add Sliced onion, red chilly, garlic, curry leaves and fry. Add coconut pieces and fry well and allow them to cool.
Grind all the fried ingredients as paste and stuff the ground paste into the brinjal.
Heat oil in a frying pan and fry the brinjal.
Fry well the brinjal and we must be careful it should not burnt.
After fry transfer to the serving dish and add the exes ground masala and serve with rice or chapathi.
