How to prepare mint leaf (puthina) chutney

Puthina chutney (Mint chutney) is the best combination for idly, dosa and all snacks. It can be serve with hot rice also. If you are not feeling hungry in long time, we can have puthina chutney with rice or idly or dosa. It is a best medicine. Puthina chutney is prepared with tamarind and red chilly. So the taste will be little tangy and spicy. Let's prepare the healthy and tasty Mint chutney.
Basic information :
Time consume : 15 Mins
Serve : 3 Persons
Ingredients :
Mint leaves : 1 Cup
Coriander leaves : 1/2 Cup
Garlic : 4 Nos
Tamarind : Small piece
Red chilly : 4 Nos
Coconut pieces : 1/4 Cup
Curry leaves : 7 Nos
Black gram dal : 2 Tsp
Salt : As per taste
Oil  : 2 Tsp
Method :
Heat oil in a pan, add black gram dal (Urad dal) and fry.Add red chilly, garlic, coconut and fry well.
Add mint leaves, coriander leaves, curry leaves and tamarind and fry little.
After the fried ingredients got cool, grind as chutney and serve.
Here! the tasty Mint chutney is ready with idly.

How to prepare Garlic chutney

Garlic chutney is a spicy and very tasteful recipe for idly, dosa and chapathy. Garlic is help to reduce cholastrol in our body. If u add garlic in daily menu, you will be very healthy. In this chutney, i am frying all ingredients separately for more tasty. Come let's prepare tasty Garlic chutney with less ingredients.
Basic information :
Time consume : 15 Mins
Serve : 3 Persons
Ingredients : 
Garlic:1/2 Cup
Tomato:2 Nos
Red chilly:4 Nos
Curry leaves:7 Nos
Mustard:1/4 Tsp
Salt:As per taste
Oil :4 Tsp
Method :
Heat oil in a pan, add garlic and fry well and keep it aside. We have to fry the garlic till golden brown to avoid the  raw smell of the garlic.
 Add red chilly, fry and keep it aside.
Fry curry leaves and keep it aside.
Cut the tomato into 2 pieces and fry till its skin got shrink.
Allow all the fried ingredients cool. Then grind them.
Heat the fried oil, add mustard. After mustard pops, add curry leaves and ground chutney.
Keep the chutney in low flame for some time and transfer to the serving dish and serve.

How to prepare tasty Mutton biryani

Biryani is one of the mostly liked food for all. In Mughal's period, the travelers start to prepare with rice, meat and spices. After that, it will become a favorite food as biryani. They were prepared with mutton meat. Mostly in all the houses, biryani is placed  in most of the Sunday menus. In all biryanies, mutton biryani is very tasteful and once we tried this, we will not go for chicken or egg biryani.
Basic information :

Cooking Time  : 15 Mins
Serve : 4 Persons
Ingredients :
Jeera rice:1 Cup
Mutton:1/2 Kg
Bey leaves:1 No
Cinnamon:3 Nos
Cardamon:2 Nos
Cloves:4 Nos
Onion:1 No
Ginger paste:1 Tsp
Garlic paste:1 Tsp
Tomato:1 No
Mint leaves:1/4 Cup
Coriander leaves:1/4 Cup
Turmeric powder:1/4 tsp
Chilly powder:1 Tsp
Garam masala powder:2 Tsp
Ghee:2 Tsp
Salt:As per taste
Lemon juice                  :  2 Tsp
Curry leaves                 :  10 Nos             
Fennel seeds                 :   2 Tsp
Method :
Wash the mutton pieces, add turmeric powder, salt and pressure cook for 4-5 whistles.
Heat ghee in a pressure pan, add bay leaves, cinnamon, cardamon, cloves and fennel seeds.Add onion and fry.
 Add ginger garlic paste and fry.
Add tomatoes and fry well. Add cooked mutton and fry well.Add chilly powder, garam masala powder, salt and fry.
Add washed rice and fry.
Add water in 1:2 ratio.
When the rice and water started boiling, add mint  coriander leaves, lemon juice and allow it to boil.
 When the rice became half-cooked, close the pressure pan lid for 10 minutes.
After 10 minutes, wait for another 5 minutes, open the lid and serve hot the tasty biryani with raitha.

How to prepare Mutton pepper fry (Mutton sukka)

Mutton pepper fry is my husband's favorite dish. The preparation method also very simple. Normally in all no-veg items we will add ginger garlic and spices. In this fry, i am not adding any spices and ginger garlic. Instead, i am adding only pepper powder for spicy. Pepper is one of the most common spice which can be used for all the food items.This fry goes with biriyani, rasam rice and chapathi.
Basic information :
Time consume : 20 Mins
Serve : 4 Persons
Ingredients :
Mutton:1/2 Kg
Sambar onion:1/ 2 Cup
Pepper :1/4 Tsp
Cumin seeds:2 Tsp
Turmeric powder:1/4 Tsp
Pepper powder:3 Tsp
Salt:As per taste
curry leaves:10 Nos
Red chilly:2 Nos
Method :
Wash the mutton pieces.Grind onion, pepper, cumin seeds and turmeric powder as a paste. Sambar onion gives more taste than big onions.
Add the ground paste into the mutton in the pressure cooker.
Add some water and cook the mutton allowing 4-5 whistles in pressure cooker.
After the mutton cooked, we can take the soup. If we took soup, again we have to add ground paste, otherwise the fry will not be much tastier.
Heat oil in a pan, add cumin seeds and fry.Add sliced onion, curry leaves, red chilly and fry well.
Add cooked mutton and pepper powder.
Fry it till the mutton fried well and transfer to the serving dish and serve hot.

How to prepare Mutton soup

Mutton soup is very tasty and nutritious soup which can be given  for children. It is good for health. When i prepared mutton soup, my daughter like very much and i wondering that she wants more. Mutton soup can be prepared with mutton pieces or mutton bones. Mutton chest bone soup is very healthy and it gives more strength for kids.

Sambar onion : 1/ 2 Cup
Pepper  : 1/4 Tsp
Cumin seeds : 2 Tsp
Turmeric powder : 1/4 Tsp

Method :
Wash the mutton pieces or bones.
Grind onion, pepper, cumin seeds and turmeric powder as a paste. Sambar onion gives more taste than big onions.
Add the ground paste into the mutton in the pressure cooker.
Add some water and cook the mutton allowing 4-5 whistles in pressure cooker.
After the mutton cooked, transfer the soup to the serving bowl and add pepper powder and serve hot.

How to prepare tasty Coconut tamarind chutney

Whenever i prepare verity rices i used to prepare coconut tamarind chutney (thuvaiyal). It is best combination with Lemon rice and Tamarind rice. We can have with idli and dosa also. My husband likes this chutney very much. I am frying the coconut and all the ingredients, so that we can keep the chutney  for longer time.
Basic information :
Preparation time  : 6-8 Mins
serve : 4 Persons
Ingredients : 
Coconut:3 Large pcs
Tamarind:Smal pc
Black gram dal:2 Tsp
Mustard:1/4 Tsp
Red chilly:4 Nos
Garlic:3 Nos
Curry leaves:5 Nos
Salt:As per taste
Oil:2 Tsp
Method :
Heat oil in a pan, add black gram dal (urad dal).
Add mustard, after dal turned golden brown.
Add red chilly, garlic, curry leaves and fry.
Add chopped coconut and tamarind and fry well.
After the coconut turned golden brown, take it from the flame and allow it to cool.
After gets cool, add some water and grind as chutney and serve.

How to prepare Sabudana / Javvarisi puttu

Javvarisi is mostly used in payasam (kheer). Javvarisi puttu is my mother's recipe. it is one of the favorite recipes in my family. It can be have as breakfast or evening snack. We can prepare for school going children, after coming from school. Javvarisi is rich in carbohydrate and little vitamins.
Basic information :
Preparation time  : 6-8 Hrs
Cooking tme : 10 Mins
serve : 4 Persons
Ingredients : 
Rice  : 1 Cup
Javvarisi : 400 Gm
Salt : 2 Tsp
Grated coconut : 1 Cup
Sugar : As per taste
Method :
Soak the rice for 30 minutes and grind as idli batter.
Take one clean white cloth and pore the batter.
Add javvarisi into the rice batter and tie the cloth tightly.
 Hang the tied batter, so that it will drain the water.
After 6-8 Hrs, open the cloth and brake the batter using hand and make it as puttu consistency.
Boil it in the idli cooker.After puttu cooked, add grated coconut and sugar and serve hot.
