How to prepare Lady finger fry(Bhindi fry)

Bhindi fry is one of the easy cooking recipe in vegetable. We can be fried bhindi only with salt and make as a snack. But in this recipe, to making more tastier, i am using onion and tomatoes and chilly powder for spicy.
It goes with rice and chapati. Let's make the tasty "Bhindi fry" (Vendaikkai poriyal).
Basic information :
Preparation time : 10 Mins
Cooking time : 10 Mins
Serve : 4 Persons
Ingredients :
Lady finger:1/2 Kg
Onion:1 No
Tomato:1 No
Turmeric powder:1/4 Tsp
Chilly powder:1/2 Tsp
Curry leafs:10 Nos
Oil:3 Tsp
Salt:As per taste
Method :
Wash the lady finger(bhindi) and cut into small pieces. Heat oil in a pan, add  bhindi  and fry well.
When the bhindi fried, take from the flame and keep it aside.
Heat oil in same pan, add mustard. After mustard pops, add onion and fry well.
After onion turned golden brown, and tomatoes and fry well.
Add turmeric powder, chilly powder, salt and sir.
Add fried bhindi and fry.
After 2-3 minutes, transfer to the serving dish and serve hot.

How to prepare Garlic tamarind gravy (Poondu kuzhambu)

Poondu kuzhambu is one of the favorite recipe in most of the South Indian families. It is tangy and spicy and very tasty recipe. It goes with hot rice and we can have for idly or dosa. My mother in law will make this recipe very tasteful  and preparing once in a week. Let's make tasty "Poondu kuzhambu".
Basic information :
Preparation time : 10 Mins
Cooking time : 15 Mins
Serve  : 5 Persons
Ingredients :
Garlic:1 Cup
Sambar onion:1 Cup
Tomato:1 No
Mustard:1/4 Tsp
Dry methi:1/4 Tsp
Cumin seeds:1/4 Tsp
Green chilly:2 Nos
Curry leaves:10 Nos
Turmeric powder:1/4 Tsp
Chilly powder:1 1/2 Tsp
Coriander powder:2 Tsp
Tamarind Juice:1 Cup
Salt:As per taste
Gingaly Oil:3 Tsp
Method :
Heat oil in a kadai, add mustard, dry methi, cumin seeds.
After mustard pops, add onion, garlic, green chilly, curry leaves and fry.
Add tomatoes and fry well.
Add turmeric powder, chilly powder, coriander powder, salt and fry.
Add tamarind juice.
Add some water and close the kadai and keep it low flame.
When the oil comes out, transfer to the serving dish and serve hot with hot rice with papad.

How to prepare tasty Spring chicken

Spring chicken and Ghee rice is one of the tasty and favorite Sunday menu in my family. Whenever  my friends and relatives comes to my home, they will be suggested  me to prepare Spring chicken. When compared to normal chicken fries,it is very different in taste. There are three steps to prepare  spring chicken.
Step 1. Fry and grind masala..
Step 2. Fry the chicken. 
Step 3. Mix together and fry.
Basic information :
Preparation time : 15 Mins
Cooking time : 15 Mins
Serve : 4 Persons
Ingredients : 
Boneless chicken : 1/2 Kg
For marinate
Ginger garlic paste : 2 Tsp
Chilly powder : 2 Tsp
Garam masala powder : 1 Tsp
Pepper powder : 1 Tsp
Rice flour : 2 Tsp
Turmeric powder : 1/4 Tsp
Salt : As per taste
Fry and grind masala
Tomato puree : 1 Cup
Chopped Onion : 1 Cup
Chopped ginger : 1 Tsp
garlic : 7 Nos
Curry leaves : 10 Nos
Chilly powder : 2 Tsp
Coriander powder : 2 Tsp
Oil : 2 Tsp
Salt : As per taste
Final fry
Oil : 3 Tsp
Chopped onion : 1/2 Cup
Coconut pieces : 1/4 Cup



Method :
Heat oil in a pan, add (chopped) onions, ginger, garlic, curry leaves and fry.
Add tomato puree and fry well.
Add chilly powder, coriander powder salt and fry well.
After the raw smell gone switch off the flame and keep for cool.
Grind the cooled masala. Clean the boneless chicken and cut into small pieces. Mix all the marinate masalas and marinate with the chicken.
Soak for 5-10 minutes and shallow fry the chicken.
In same pan, add chopped onion, coconut pieces and curry leaves and fry well.
Add fried chicken and ground masala and fry.
Add some water and keep it in flame.Stir occasionally.
After some time transfer to the serving dish and serve hot with ghee rice or biriyani or rasam rice.

How to prepare Lemon rice

Lemon rice is South Indian special recipe. This is very easy preparation and usually be prepared in a hurry situation. In my home, Lemon rice is placing in every Monday menu. It is the best lunch box recipe. For this, we can use pickle as a side dish. Its very tasty and simple recipe.
Basic information :
Cooking : 10 Mins
Preparation : 5 Mins
Serve : 4 Persons
Ingredients :
Rice(cooked):1 Cup
Lemon:1 No
Peanuts:2 Tsp
Channa dal:2 Tsp
Green chilly:3 Nos
Curry leafs:8 Nos
Mustard:1/2 Tsp
Turmeric powder:1/4 Tsp
Salt:As per taste
Oil:4 Tsp
Method :
Mix turmeric powder and salt in lemon juice.
Heat oil in a pan, add mustard, peanut and chana dal and fry. Add curry leafs, green chilly.
Add the fried mixer into the lemon juice mixer.
Add all the mixer in the boiled and cooled rice and mix well and serve.

How to prepare Broad beans (Avaraikkai) fry

Broad beans (Avaraikkai) is good for Kidney. If you have a kidney problem, you can add broad beans once in a week. This fry is a very tasty and little spicy recipe. I am adding tomato and grated coconut for more tastier. This fry is a best combination with rice and chapathi. In Tamil, its called as "Avarakkai poriyal".

Basic information :
Preparation time : 5 Mins
Cooking time : 10 Mins
Serve : 4 Persons
Ingredients :

Broad beans:1/4 Kg
Onion:1 No
Tomato:1 No
Turmeric powder:1/4 Tsp
Chilly powder:1/2 Tsp
Grated coconut:1/4 Cup
Mustard:1/4 Tsp
Oil:2 Tsp
Salt:As per taste
Method :
String the broad beans, wash well and cut into small pieces. Heat oil in a kadai, add mustard. After mustard pops, add chopped onion.
Add chopped tomato when the onion turned golden brown.
Add chopped broad beans and fry well.
Add turmeric powder, chilly powder, salt and fry.
Add some water and close the kadai for 4-5 minutes.
After the broad beans cooked, add grated coconut and stir well.
Transfer to the serving dish and serve with rice or chapatti.

Method :
Heat oil in a kadai, add mustard. After mustard pops, add chopped onion,chopped garlic, curry leafs and fry.
After onion turned golden brown add chopped tomatoes and fry well.
Add peas and fry. Add turmeric powder, chilly powder, coriander powder, garam masala powder, salt and fry for 2 minutes.
Add some water and close the kadai.
After 5 minutes of cooking stir slightly and transfer to the serving dish and serve hot!..

How to prepare Tomato chutney

When i am preparing idli or dosa, all my friends ask me to prepare "Red color chutney". Red chutney is nothing but Tomato chutney.  when preparing with tomatoes and red chilly, it gives rich red color. Prepare for idli or dosa, coconut chutney and tomato chutney is going to be a colorful and healthy breakfast. Come lets prepare Tasty red chutney.
Basic information :
Time consume : 10 Mins
Serve : 5 Persons
Ingredients :
Tomato:1/2 Kg
Garlic:5 Pcs
Red chilly:7 Nos
Coriander leaf:1/4 Cup
Curry leaf:5 Nos
Salt:As you need
Oil:3 Tsp
Mustard:1/4 Tsp
Method :
Take a mixer jar, add tomato, garlic, red chilly, coriander leafs, salt and grind well as chutney.
Heat oil in kadai, add mustard. After mustard pops, add curry leafs and grinned chutney and allow to boil.
Keep the chutney in low flame. When the oil comes out, take from the flame and transfer to the serving dish and serve. Here, the tasty tomato chutney is served with dosa.
